GRILLED TUNA WITH GINGER-SESAME SAUCE

Steps:
- Make the sauce. Stir-fry the scallions, ginger and garlic in the sesame oil for one to two minutes. Add the remaining ingredients and pour the sauce into a small bowl. Set aside.
- Meanwhile, preheat the grill. Sprinkle the tuna fish with olive oil on both sides and season with salt and liberal grindings of pepper. Grill the fish for two to three minutes on each side for rare, longer if you wish it more well-done. Serve with the sauce on the side.

YELLOWFIN TUNA, SEARED RARE WITH SESAME, AND A KEY LIME GINGER BROTH

Steps:
- For the spice mixture: Combine all ingredients in a bowl and set aside.
- For the juice mixture: Blend all ingredients except butter and oil until smooth. Add oil and butter to finish. Add warm chicken stock and season to taste.
- For the romaine: Over high heat saute romaine ribs in olive oil until tender. Add anchovies and coriander. Finish by tossing with basil and season with lemon juice, salt and pepper.
- For the tuna: Season tuna pieces with oil and salt and pepper evenly. Place seasoned tuna in spice mixture and coat evenly. Next, heat oil in a cast iron skillet until very hot. Add tuna and cook to desired doneness and set aside to rest for a couple of minutes. Slice each piece after resting.
- Plating: Place braised romaine in center of plate. Next arrange warm tuna slices on top of romaine. Finish plate by drizzling warm juice around the plate. Serve.
PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME
Steps:
- In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
- Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.
SEARED TUNA WITH GINGER NOODLES
Japanese food is one of my favourite cuisines and this recipe shows why. It's simple, quick, healthy and yet the taste really packs a punch!

- Boil a large pot of water, throw in the noodles and cook for two minutes or until soft.
- Drain, rinse and cool.
- Mix the sesame oil, lime juice and wasabi paste together.
- Pour this over the noodles and mix in the pickled ginger and garlic chives.
- Press the tuna into the sesame seeds until the fish is coated on all sides.
- Heat a non-stick frying pan and cook the tuna for one minute on all sides or until just seared.
- Transfer to a chopping board, let the tuna rest for a moment and then cut it into thick slices.
- Serve with soy sauce and wasabi in dipping bowls.
TUNA FISH STEAKS WITH SESAME CORIANDER SAUCE

- Wipe the steaks dry with paper towels. Combine the remaining ingredients except the coriander and mix well.

- Preheat oven to 200°F Sprinkle 1 side of tuna steaks with pepper. Heat 2 tablespoons oil in heavy large skillet over high heat. Place tuna steaks, pepper side down, in hot oil and sear 2 minutes. Turn tuna over and continue cooking to desired doneness, about 2 minutes for rare. Transfer tuna to rimmed baking sheet; keep warm in oven.
- Add butter, sliced green onions, cilantro, ginger and chopped garlic to same skillet and sauté until fragrant, about 30 seconds. Mix in mushrooms and soy sauce and simmer 30 seconds. Add whipping cream and simmer until sauce lightly coats back of spoon, about 3 minutes. Stir in lime juice. Spoon sauce onto plates; arrange tuna atop sauce. Garnish with lime wedges and cilantro sprigs, if desired.

- Heat the vegetable oil in a frying pan over a medium heat, then gently fry the chilli, garlic cloves and fresh ginger, peeled and sliced into matchsticks, until crisp. Remove and set aside. Fry the spring onions in the same pan until golden, then remove and set aside.
- Bring a pan of water to the boil and cook the green beans for 2 minutes, then add the noodle nests and cook for a further 1-2 minutes until al dente. Drain both and refresh in cold water.
- Mix the toasted sesame oil, soy sauce and lime juice in a large bowl. Toss through the noodles and green beans with the cherry tomatoes and the spring onions.
- Put the sesame seeds on a plate and press the tuna steaks (or see tip) on top to coat all over. Heat a glug of olive oil in a frying pan over a high heat and cook the steaks for 1 minute on each side. Slice and serve with the noodle salad and crispy aromatics.
