SAVORY PAN-SEARED TUNA STEAKS
These marinated tuna steaks, served rare, taste 'fancy' but are very easy to cook. Even my husband, who doesn't like most cooked fish, enjoys these steaks. A sprinkling of cracked black pepper is a good finisher for this dish.

Steps:
- Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
- Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.
- Heat a non-stick pan over medium heat. Remove steaks from marinade and arrange in the hot pan; gently shake pan to avoid sticking. Cook approximately 1 1/2 minutes and flip. Cook other side until tuna is desired doneness, 1 to 2 more minutes. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

- In a large resealable plastic bag, combine the lemon juice, oil, garlic and thyme. Add the tuna; seal bag and turn to coat. Refrigerate for up to 30 minutes, turning occasionally., Remove tuna from bag; sprinkle with salt and pepper. Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. , Grill tuna, covered, over medium-hot heat or broil 4 in. from the heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center.

FRESH TUNA STEAKS WITH LEMON

Steps:
- Wash parsley and pat dry with paper towels.
- Mince parsley with peeled garlic.
- Wash and dry whole lemon, grate half the zest.
- Peel rest of rind and discard it.
- Slice lemon thinly.
- Squeeze lemon half; add juice, a pinch of salt and pepper, to a bowl; stir until seasonings have dissolved.
- Add wine, oil, parsley and garlic mixture, and grated lemon peel.
- Beat with fork until well blended.
- Wash and dry tuna.
- Arrange in saute or large omelet pan.
- Pour sauce over tuna and cover with lemon slices.
- Cook fish over high heat for 7-8 minutes,
- Remove lemon slices and turn fish over.
- Cook for another 2 minutes.
- Slice remaing lemon.
- Arrange tuna on serving plate.
- Drizzle with cooking juices.
- Decorate with uncooked lemon slices and sprigs of parsley.
- Serve hot or at room temperature.
TUNA STEAKS WITH LEMONY TOMATOES AND ONION

- In a large skillet, heat 1 tablespoon oil over medium-high. Season tuna with salt and pepper. Cook, without turning, until golden brown on one side, 3 to 5 minutes. Turn over, and continue to cook until medium-rare, 1 to 2 minutes more. Transfer tuna to a plate, and set aside.
- In a medium bowl, toss together tomatoes, onion, lemon juice, and remaining tablespoon oil; season salad with salt and pepper.
- Serve tuna on top of tomato-onion salad, with lemon wedges alongside, if desired.

TUNA STEAK WITH DALMATIAN LEMON-GARLIC SAUCE
For this meal you can use any kind of tuna, Blue Merlin, or "palamida" fish (something like white tuna, I do not know the English name) which you can find in Adriatic Sea. Lemon-garlic sauce is also sauce you can use for any kind of grilled fish, although you must be careful if you use white meat fish with delicate flavor - garlic can overcome so you will not taste the fish at all. In the photo I have submitted there is this "palamida" fish.

Steps:
- Season steaks with salt and soak them in olive oil 30 minutes before putting on grill (or grill pan). Grill steaks until done.
- Before prepare lemon juice, finely minced garlic, finely minced parsley leaves, pepper, olive oil and oregano, stir all ingredients well and leave 30 minutes until all flavors combine and get used to each other.
- Pour juice over fish before serving. That is it! (leftovers of lemon-garlic sauce can be preserved hermetically covered in refrigerator for 5 days).

- In a small bowl, mash together the butter, lemon zest, lemon juice, the 1/4 teaspoon pepper, and the garlic powder. Set aside (or chill if not using immediately).
- Prepare the grill for medium-high direct heat and lightly oil the grate (or preheat a broiler). Brush oil on both sides of tuna steaks. Season the tuno on both sides with salt and additional pepper. Grill or broil for 3 to 4 minutes per side for medium rare, turning once.
- Transfer tuna steaks to a serving platter; top with the butter mixture.
TUNA STEAKS WITH GARLIC-HERB CREAM SAUCE

- Heat a nonstick skillet over medium heat. Melt butter in the hot skillet. Season tuna steaks with salt and pepper and place in the skillet. Cook for 3 to 4 minutes per side. Remove to a serving plate and keep warm.
- Add half-and-half and spreadable cheese to the same skillet and stir until incorporated. Add lemon juice. Set 2 tablespoons of the sauce aside. Add spinach to the remaining sauce in the skillet and cook until wilted, 1 to 2 minutes.
- Divide spinach between 2 plates and place tuna steaks on top. Serve reserved sauce over the steaks.

Summer on a plate - simple, fresh and absolutely delicious! I love uncooked tomato sauces in the summer, when the garden has an abundance of juicy, vine-ripened tomatoes. This one is for the garlic and lemon lovers, and it's terrific served cold the next day! (Prep time includes letting tomato sauce sit and blend flavors; cook time is approximate only for tuna steaks.)

- Season with salt and let flavors blend for two hours.
- Just before grilling or pan-searing the tuna steaks, add the herbs to the tomato mixture.

- This is scrumptious served cold the next day!

- Light the grill or heat the broiler. In a small glass or stainless-steel bowl, mash the capers with a fork. Stir in the lemon juice, parsley, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper and then 6 tablespoons of the oil.
