2 teaspoons olive or vegetable oil
2 garlic cloves, finely chopped
1 pound roma (plum) tomato, coarsely chopped (6 medium)
1 tablespoon chopped fresh basil leaves
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper

Steps:

  • Cook and drain pasta as directed on package.
  • While pasta is cooking, heat oil in 10-inch skillet over medium-high heat. Cook garlic in oil 30 seconds, stirring frequently. Stir in tomatoes. Cook 5 to 8 minutes, stirring frequently, until tomatoes are soft and sauce is slightly thickened. Stir in basil, salt and pepper. Cook 1 minute. Serve sauce over pasta.

Steps:

  • Heat large nonstick skillet over medium heat until hot. Add Ground Beef and garlic; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Pour off drippings.
  • Stir in tomatoes, salt and pepper; cook over medium heat 5 minutes, stirring occasionally. Add pasta and basil; toss. Sprinkle with cheese.

2 tablespoons canola oil
1/4 large Spanish onion, finely diced
4 cloves garlic, crushed with a sprinkle of kosher salt and finely chopped to a paste
One 28-ounce can plum tomatoes
8 ounces penne pasta
Kosher salt and freshly ground black pepper
3/4 cup grated Parmigiano-Reggiano, plus 3/4 cup, for garnish
1/4 cup fresh flat-leaf parsley, finely chopped
12 fresh basil leaves, torn
1/4 to 1/2 teaspoon Calabrian red chile flakes
Extra-virgin olive oil, for drizzling
1/2 cup fresh ricotta, for garnish

Steps:

  • Heat the canola oil in a large high-sided saute pan or saucepan over high heat until it begins to shimmer. Add the onions, garlic and tomatoes with the juice. Mash the tomatoes with a potato masher in the pan and bring to a boil. Reduce the heat to a simmer and cook until the tomatoes begin to soften, about 20 minutes.
  • Meanwhile, bring a large pot of water to a boil, add the penne and 2 tablespoons salt and cook until al dente, 8 to 10 minutes. Reserve 1 cup of the pasta water. Drain the pasta.
  • Mash the tomatoes again until coarsely chopped. Add 1/4 to 1/2 cup of pasta water to thin out the sauce and continue to cook, stirring occasionally, until thickened, about 20 minutes; season with salt and pepper. Thin with additional pasta water if necessary.
  • Transfer the pasta to the sauce; season with salt and pepper. Add some of the Parmigiano-Reggiano to the pan and combine. Cook the pasta in the sauce for 1 to 2 minutes, adding more grated cheese as the pasta cooks. Add some of the basil and parsley and the chile flakes and then drizzle with olive oil. Season with salt and pepper.
  • Transfer the pasta to a large shallow serving dish and top with freshly grated cheese. Top with the ricotta and drizzle with 2 tablespoons olive oil. Garnish with the remaining basil and parsley; serve immediately.

1/4 cup extra-virgin olive oil plus 2 tablespoons, divided
1 1/2 tablespoons chopped garlic
5 cups chopped fresh tomatoes
1 pound penne pasta
1/2 cup shredded basil
Freshly ground black pepper
3/4 pound fresh salted mozzarella, sliced or cubed
1/2 cup grated Parmigiano-Reggiano

Steps:

  • Put a large pot of salted water on for the pasta. Meanwhile, prepare your sauce. In a large skillet, heat 1/4 cup of the olive oil. Add the garlic and cook until just fragrant, about 1 minute or less. Add the tomatoes and cook them for 3 to 5 minutes, just until they begin to release some of their juice.
  • Cook the pasta in the pot of salted boiling water for 12 to 13 minutes until al dente. Drain the pasta. Add the pasta and basil to the pan with the tomatoes and toss. Season, to taste, with salt and freshly ground black pepper.
  • Serve the pasta in bowls, equally distribute the fresh mozzarella and grated Parmesan between the bowls. Drizzle the remaining olive oil over the bowls of pasta and serve immediately.

14 oz crushed tomato, 1 can

Steps:

  • Heat a large sauté pan over medium heat. Add the olive oil and onion, and cook until the onion is translucent, 8-10 minutes.
  • Add the chile flakes and garlic, and cook for another 2 minutes, until fragrant. Stir in tomatoes and simmer uncovered for 20 minutes.
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ½ cup (120 ml) of pasta water, then drain.
  • Add the drained pasta to the sauce. Stir well, adding a little pasta water if needed to loosen the sauce. Season with salt to taste.

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

I found the basis for this recipe in a magazine somewhere. This is not a saucy dish, but it's healthy and yummy. Though the recipe calls for just a few basic ingredients, I've added veggies (mushrooms, broccoli) and chicken (Schwan's pre-cooked fajita chicken is really good in this--just thaw it out and throw it in!) to make it a full meal. It's easiest to cut everything up while the pasta water heats.

1 lb penne
2 -3 pints cherry tomatoes or 2 -3 pints grape tomatoes, quartered
1/2 cup fresh basil, sliced
1/4-1/2 cup parmesan cheese
2 tablespoons olive oil
2 -4 garlic cloves, minced or pressed
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces mushrooms, sliced
8 ounces broccoli florets
8 ounces chicken, cooked and sliced

Steps:

  • Heat water for pasta.
  • Heat olive oil in large skillet and saute garlic for a minute or so.
  • Add tomatoes, salt & pepper.
  • Start cooking the pasta now.
  • Cook tomatoes over medium heat for ~7 minutes.
  • Add basil. (If you're adding additional ingredients, do so here.) Simmer 3-5 minutes (or until your veggies are as tender as you want them).
  • **I've found that adding a little bit of pasta water to tomato mixture before you drain the penne really evens out the dish.
  • Toss tomato mixture and parmesan with pasta. Serve with fresh Italian or French bread.

ROASTED GARLIC AND TOMATO PENNE

Al dente pasta in a simple yet flavorful roasted garlic and tomato sauce.

1 head garlic
2 tablespoons olive oil, (plus more for the garlic or as desired)
1 pint cherry or grape tomatoes
Coarse kosher salt and freshly ground black pepper
1 pound penne
1/4 cup fresh basil, (torn)
Freshly grated Parmesan Cheese for topping

Steps:

  • Preheat the oven to 400ºF. Cut the top quarter off the head of garlic, drizzle the bulb with olive oil, and wrap tightly in a square of aluminum foil. Place in the oven on the middle rack and bake 50 minutes or until soft and brown.
  • Meanwhile, place tomatoes on a rimmed baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and pepper. Place in the oven and bake 40 minutes, stirring once or twice to make sure they don't burn.
  • While the tomatoes and garlic are roasting, bring a large pot of water to a boil and cook the penne according to package directions, reserving 1/2 cup cooking water just before draining. Return the pasta to the pot.
  • Once the tomatoes and garlic are done, remove from the oven and mash the tomatoes with a fork. Squeeze the garlic out into the tomatoes, add another tablespoon of olive oil, and mash it all together with the fork. Add the tomato sauce to the pasta along with a splash of the reserved cooking liquid and stir to coat completely. You can add more pasta water or olive oil if you prefer to loosen the sauce up a bit. Add the basil and stir one more time, then serve topped with Parmesan cheese.

1 large onion, chopped

1/2 cup fresh parsley, chopped (I don't always use)

2 tablespoons parmesan cheese, freshly grated (optional)

Steps:

  • In skillet, cook sausage over medium heat until no longer pink in centre, about 15 to 20 minutes. (I boil first to get rid of some of the fat).
  • Drain well; cut into thin round slices.
  • In large pot of boiling water, cook pasta until tender but firm; drain and return to pot.
  • In nonstick pan, heat oil over medium heat; cook onions until tender, about 5 minutes.
  • Add garlic, tomatoes, basil and oregano;.
  • Simmer uncovered for 10 minutes.
  • Add cooked sausage.
  • pour over pasta; toss to mix.
  • Sprinkle with parsley, pepper to taste and parmesan if using.

1/3 cup olive oil
8 large garlic cloves, finely chopped
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes (use less if you don't like spice)
1/4 teaspoon ground black pepper
1 teaspoon granulated sugar
4 pints cherry tomatoes (any large cherry tomatoes should be cut in half)
1/2 cup (113 grams) vodka (use 2/3 cup for a more vodka dominant sauce)
3/4 cup (170 grams) heavy cream
1 cup fresh basil, coarsely chopped
Freshly grated Parmesan (for serving)

Steps:

  • Place a large pot of water over medium-high heat and bring to a boil. Add in a dash of salt, then add in the pasta and cook for 7 to 8 minutes, or until al dente. Reserve a 1/2 cup of pasta water, then drain the penne and place into a bowl until needed.
  • In the meantime, heat oil in a 12" skillet or large saucepan over medium-heat. Add garlic and cook for about 30 seconds, or until fragrant. Then stir in the salt, red pepper flakes, black pepper, and sugar, and cook for another 30 seconds.
  • Add in the tomatoes and stir to coat. Cook the tomatoes, stirring occasionally, until the tomatoes burst and release their juices to form a sauce, about 10 t0 12 minutes. If any tomatoes don't burst, lightly press on the with a spoon to help them along.
  • Remove pan from heat, and stir in the vodka. Then stir in the heavy cream. Return to stovetop and stir in the basil.
  • Toss pasta with with tomato sauce and let simmer for 2 minutes. Then remove from heat and serve warm, with freshly grated parmesan cheese.

2 1 pound lobsters
3 tbsp. extra virgin olive oil
2 minced shallots
2 cups chopped onions
3 tbsp. minced garlic
¾ cup white wine
3 tbsp. fresh oregano leaves
14.5 ounces penne
2 pints grape or cherry tomatoes
1 tsp. hot pepper flakes
3 tbsp. unsalted butter
½ cup chopped parsley
¼ tsp. kosher salt
¼ cup chopped basil

Steps:

  • Begin by cooking the lobsters: Bring two inches of water to a boil over high heat, in a very large pot. Add the lobsters and hold down the lid to kill them quickly. Steam them for 12 minutes.
  • Remove the lobster meat from the shells, and chop it all up in half inch pieces. Set aside.
  • At this time bring a big pot of water to a boil for the penne.
  • In a large skillet, heat the oil on low heat. Add the shallots, onion, and garlic and cook about five minutes, or until the vegetables are softened.
  • Add the wine and oregano, and on high heat, cook until the wine is slightly reduced, about three minutes. Also add the pasta and three tablespoons of kosher salt to the pot and cook until al dente. Reserve one tablespoon of the pasta cooking water.
  • Reduce the heat to medium and add the tomatoes, butter, parsley, salt, and hot pepper flakes. Cook the tomatoes for five minutes.
  • Drain the pasta. Add the lobster to the skillet and cook until just heated through. Add the penne, basil, and reserved pasta water. Serve right away.

1lb penne pasta

4-5 garlic cloves, thinly sliced

  • Cook penne according to directions on package.
  • Heat olive oil in a skillet over medium heat. Add garlic and sauté 1-2 minutes, until garlic starts to get fragrant.

Fresh Tomato Pasta with Lemon & Basil image

A summer-fresh pasta filled with flavors of bright lemon, garlic, & fresh basil. A beautiful dish for ripe garden tomatoes!

12 oz. penne pasta (gluten-free if desired)
4 large ripe tomatoes
1-2 cloves garlic
1 medium shallot (about 1/4 cup)
3/4 cup fresh basil
Juice from 1 lemon (about 3 Tbsp. or more to taste)
2 tsp. olive oil (omit for oil-free)
Salt to taste
Optional: capers, pine nuts, etc.

Steps:

  • Cook pasta according to package directions, leaving al dente (slightly firm, not mushy).
  • While pasta is cooking, finely dice shallot, mince garlic, and dice tomatoes. Add to a large bowl.
  • Roughly chop or chiffonade basil. Set aside.
  • When pasta is done cooking, drain, and immediately add to bowl. Stir.
  • Add lemon juice, olive oil, basil, and capers if using. (Start with 1 lemon and add more to taste if necessary.)
  • Toss well to combine, and salt to taste.
  • Great served warm, cold, or room temperature. Best if eaten within 2-3 days.

Roasted Tomato and Garlic Penne image

I love this simple dinner because it's fast and filling. It's also healthy and light. Vegetarian friendly as well. It's adapted from a Rachel Ray 30 minute meal that I saw on her show and made my own. This can be made tossed or as a casserole, your choice. This feeds my family of 4 with plenty of leftovers. Special note: when roasting the tomatoes and garlic, you can cut the top off of a garlic bunch and place it cut side up on same cookie sheet, sprinkle w/olive oil, salt and pepper and roast. Once roasted, use butter knife to dig out garlic (soft and sweet) and spread on crusty bread to compliment your pasta dish. This is of course, if you are a garlic lover!

1 1/2 lbs grape tomatoes (or cut up in quarters 4-5 tomatoes of your choice)
6 whole garlic cloves
1/3 cup olive oil
1 tablespoon salt
1 tablespoon pepper
1 lb penne pasta, cooked
1/2-1 cup parmesan cheese, grated
2 tablespoons fresh basil, chopped

Steps:

  • Preheat oven to 375 degrees.
  • Start your water for the pasta. Add salt to your boiling water just before adding the pasta. Cook as directions on the box imply. However, if you are going to turn this into a casserole, don't cook pasta fully.
  • Wash and dry grape tomatoes. Place them on a cookie sheet. Peel garlic and place whole on same cookie sheet. Drizzel the olive oil over all, making sure all ingredients are covered. Sprinkle generously with salt and pepper.
  • Roast in the oven until the tomatoes have burst open and the garlic is soft.
  • Drain pasta and set aside in large bowl.
  • Once tomatoes and garlic are done pull the cookie sheet out (leave oven on if your going to make the casserole) and using a potato masher, smash the tomatoes and garlic, making a sauce. Pour over pasta and stir. Add 1/2 the cheese and mix inches Using the other half on top along with chopped basil for garnish.
  • If your making a casserole. Pour the pasta, tomatoe and garlic mixture, 1/2 cheese into a baking dish. Cover the top with remaining cheese and bake until golden and bubbly. Use basil when serving for garnish.
  • Serve with a green salad and crusty bread.

Penne pasta 1 (8-oz) package
Basil oil 1 tbsp
Olive oil 1 tbsp
Garlic 3 cloves
Grape tomatoes 1 pint
Pepperjack Cheese 1 cup
Mozzarella 1 cup
Parmesan cheese ¼ cup
Basil 1 tbsp

Steps:

  • Bring a large pot of water to a boil over high heat. Add in 1 package penne pasta and cook until al dente for about 11 minutes, then drain.
  • Meanwhile, heat 1 tablespoon each of basil oil and olive oil in a large skillet over medium-high heat. Add 3 minced garlic cloves and cook until soft.
  • Add 1 pint of halved grape tomatoes and reduce heat to medium. Simmer for 10 minutes.
  • Stir in 1 cup shredded Pepper Jack, 1 cup shredded mozzarella, and ¼ cup grated Parmesan cheese.
  • Once the cheese starts to melt, mix in the cooked penne pasta.
  • Serve immediately garnished with fresh basil.
