1/2 pound fresh salmon
Good olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3/4 cup small-diced red onion (1 small onion)
1 1/2 cups small-diced celery (4 stalks)
1/2 cup small-diced red bell pepper (1 small pepper)
1/2 cup small-diced yellow bell pepper (1 small pepper)
1/4 cup minced fresh flat-leaf parsley
1 tablespoon capers, drained
1/4 teaspoon hot sauce (recommended: Tabasco)
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons crab boil seasoning (recommended: Old Bay)
3 slices stale bread, crusts removed
1/2 cup good mayonnaise
2 teaspoons Dijon mustard
2 extra-large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the salmon on a sheet pan, skin side down. Brush with olive oil and sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked. Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.
  • Meanwhile, place 2 tablespoons of the butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, crab boil seasoning, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes. Cool to room temperature.
  • Break the bread slices in pieces and process the bread in a food processor fitted with a steel blade. You should have about 1 cup of bread crumbs. Place the bread crumbs on a sheet pan and toast in the oven for 5 minutes until lightly browned, tossing occasionally.
  • Flake the chilled salmon into a large bowl. Add the bread crumbs, mayonnaise, mustard, and eggs. Add the vegetable mixture and mix well. Cover and chill in the refrigerator for 30 minutes. Shape into 10 (2 1/2 to 3-ounce) cakes.
  • Heat the remaining 2 tablespoons butter and 2 tablespoons olive oil in a large saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.

5 hamburger buns
1 1/4 pounds skinless salmon fillet (preferably wild-caught)
2 tablespoons mayonnaise
2 teaspoons Dijon mustard

Steps:

  • Preheat a grill to medium-high.
  • Tear one of the hamburger buns into small pieces and pulse in a food processor until finely ground. Cut the salmon fillet in half. Cut one half into large chunks and the other half into small dice. Add the large chunks to the food processor with the bread crumbs and add the mayonnaise, Dijon, jalapeno, lemon zest, garlic, 1/2 teaspoon salt and a few grinds of black pepper. Pulse until the salmon is ground to a paste. Transfer the mixture to a medium bowl and stir in the diced salmon; fold in the chives and parsley.
  • Form the salmon mixture into four 3/4-inch-thick patties.
  • Lightly oil the grill grates. Grill the patties, turning once, until well-marked on both sides and just cooked through, 4 to 5 minutes per side.
  • Meanwhile, split and lightly toast the 4 remaining buns.
  • Assemble burgers with the lettuce, tomato, red onion, pickles, mustard and mayonnaise.

Salmon cakes are one of my go-to emergency meals. Every once in a while I like to use fresh salmon. Salmon is one of those products, like chicken, that's very easy to get into a rut with. People generally find a few recipes that work for them, and just stay with those, but this fairly simple preparation should be easy to add to anyone's rotation. Serve with lemon wedge and remoulade sauce. You can use any bread crumbs instead of panko breadcrumbs, if desired.

¼ cup minced onion
2 tablespoons minced red bell pepper

1 teaspoon hot sauce, such as Tabasco
1/2 cup plain dried breadcrumbs

Steps:

  • Preheat oven to 400 degrees. Place fish on a rimmed baking sheet; season with salt and pepper. Roast until cooked through, 15 to 20 minutes. Let cool completely; pat dry with paper towels. Break salmon into smaller pieces; flake with a fork.
  • In a large bowl, combine scallions, breadcrumbs, and parsley. Add mayonnaise, mustard, eggs, lemon juice, and salmon. Season again with salt and pepper, plus an additional flavoring if desired. Mix gently until ingredients just hold together.
  • Form mixture into 8 patties (each about 3 inches wide). Place on a foil-lined baking sheet. Refrigerate until cold and firm, 20 to 30 minutes.
  • Make Lemon-Herb Sauce: Whisk together mayonnaise, sour cream, fresh lemon juice, and chopped herbs. Season with coarse salt and ground pepper.
  • Heat broiler. Broil patties until lightly golden on top (without turning), 6 to 8 minutes. Serve with Lemon-Herb Sauce.

2 lbs salmon, skinless, boneless
oil, for sautéing the onion and cooking the salmon (about 5-6 Tablespoons, divided)
1 onion, minced
4 Tablespoons panko breadcrumbs for the cakes, plus 1 1/2 cups for breading
1 egg, lightly beaten
2 Tablespoons mayonnaise
1 Tablespoon capers, minced
1 1/2 - 2 Tablespoons freshly squeezed lemon juice
1 Tablespoon dijon mustard
1 teaspoon hot sauce
1 1/2 Tablespoons fresh parsley, minced (you can also add fresh chives or dill)
1 1/2 teaspoons salt, 1/2 teaspoon pepper
oil, for pan frying

Steps:

  • Use a food processor to pulse the salmon into small pieces. The salmon should still have small chunks, not be pulsed into a puree.
  • Using a nonstick skillet, heat 1/2 - 1 Tablespoon of oil, add the onion, season with salt and pepper and cook until tender and lightly golden. Cool slightly. Wipe out the skillet and set aside.
  • In a large bowl, combine the salmon, cooked onion, egg, mayonnaise, capers, lemon juice, mustard, hot sauce, parsley, 4 Tablespoons of breadcrumbs, salt and pepper in a large bowl and mix to combine.
  • Using an ice cream scoop (or your hands, of course), portion out the salmon into 2-3 inch circles. You will have 14-16 salmon cakes, depending on how big you make them.
  • Dredge the salmon cakes in the breadcrumbs.
  • Heat about 1 1/ 2 tablespoons oil in a nonstick skillet on medium-high heat and cook the salmon for about 3 minutes per side, just until golden brown. The fish cooks very quickly, so don't overcook it by using low heat or covering the skillet, etc. It will be dry, if you're not careful.
  • Take the salmon cakes off the heat and drain on a paper towel. Wipe out the skillet and repeat with the rest of the salmon cakes.
  • Serve hot or warm. Store leftover salmon in the refrigerator in an airtight container for 3-5 days.

This is how I like to eat salmon patties in summertime. It's a light supper good for when the weather is super hot; a glass of white wine, dry rose or a lighter beer like a pilsner or lager is a good accompaniment. You can of course put the salmon patties on a bun and then have a real salmon burger. If you go this route, maybe top the patty with some cole slaw and some mayo or remoulade.

1 1/2 pounds salmon
2 pieces of bread, (crust removed and torn to bits)
2 tablespoons minced onion
1 egg white
1 teaspoon white pepper
1 teaspoon salt
2 tablespoons sour cream
2 tablespoons dill, (chopped)
Salmon caviar ((optional))
1 fennel bulb, (sliced thin)
1/2 red onion, (sliced thin)
Juice of 2 lemons
1 cucumber, (peeled if the skin is bitter)
1 tablespoon pickled mustard seeds ((optional))
Salt and black pepper
2 teaspoons sugar
3 tablespoons sunflower (walnut or squash seed oil)
2 cups watercress

Steps:

  • Either grind your salmon, the onion and the bread through the fine die of the grinder (how I do it), or pulse it a few times in a food processor. Put the mixture in a bowl and mix in the egg white, white pepper, salt, sour cream and dill. Form into patties. Put the patties in the fridge while you make the salad.
  • Toss the sliced fennel and red onion with a little salt and the lemon juice and let it marinate for 20 minutes. Cut the cucumber lengthwise and remove the seeds with a spoon. Slice it thinly and add it to the bowl with the fennel and onion. Stir in the pickled mustard seeds, black pepper, sugar and sunflower oil and set aside.
  • I like to grill my salmon burgers. Get your grill very hot and scrape down the grates with a wire brush. Dip a paper towel into some vegetable oil and use tongs to wipe down the grill grates. Set the salmon patties on the grill and cook with the grill cover up for about 3 minutes. Flip and grill for another 3 minutes or so.
  • When you are ready to serve, toss the watercress in with the rest of the salad and serve with the salmon patties. Top the patties with the salmon caviar if you have it.

1 1/4 lbs skinless salmon
1 cup panko bread crumbs, (divided)
2 1/2 Tbsp minced fresh parsley
2 green onions, (chopped (1/3 cup))
1 garlic clove, (minced (1 tsp))

1 1/2 tsp lemon zest, (plus lemon wedges for serving)
1 tsp dijon mustard
3/4 tsp old bay seasoning
1 egg yolk
Salt and freshly ground black pepper
6 Tbsp olive oil, (divided)

Steps:

  • Using a sharp knife coarsely chop salmon to a sausage like texture (approx. 1/4-inch pieces). This can also be done in a 3 batches in quick bursts in a food processor.
  • In a large mixing bowl stir together 1/4 cup panko bread crumbs, parsley, green onions, garlic, mayonnaise, lemon zest, dijon mustard, old bay seasoning, egg yolk, 1/2 tsp salt (or to taste) and 1/4 tsp pepper.
  • Add salmon then toss well to evenly coat with mixture. Scoop mixture 1/3 cup at a time creating 8 equal portions.
  • Pour remaining 3/4 cup panko into a shallow dish. Press and shape portions into 3-inch patties then coat and gently press into panko, coating both sides.
  • Pour 3 Tbsp oil into a large non-stick skillet and heat to medium-high heat.
  • Add four salmon patties (if needed carefully tilt pan for oil to run under salmon if it isn't already). Let fry until golden brown on bottom, about 2 minutes.
  • Carefully flip and continue to cook until second side is golden brown and patties are just cooked through, about 2 minutes longer.
  • Let drain on paper towels then repeat with repeat process with remaining four salmon patties. Serve warm with lemon wedges for spritzing over.

Last weekend we went to Yosemite and cooked them up on a camp stove. I served them on whole wheat buns with a home made tarter sauce. Simple, lots of flavor and nutritious.

1 lb fresh salmon fillet, chopped small
3 tablespoons olive oil
3 green onions, sliced
1 small red bell pepper, chopped small
2 garlic cloves, minced (1 teaspoon)
1 cup Simply Potatoes Traditional Mashed Potatoes
1/4 cup sun-dried tomato, snip with kitchen scissors into small pieces
1 egg
1/2 teaspoon salt

  • Heat 1 tablespoon olive oil in saute pan, add red bell pepper, garlic and green onion. Cook on medium-low heat for 5 minutes to soften. Place patties in a dish with the panko bread crumbs, turn patties to coat with crumbs. Refrigerate or freeze for later. To serve, heat 2 tablespoons olive oil in pan, add thawed patties and cook on medium-low heat until golden brown -- approx 6 minutes each side until salmon is cooked through. Serve with a dab of good tarter sauce and lemon wedges.
