SALSA FRESCA

Salsa Fresca image

This quick fresh tomato salsa will always be best when tomatoes are in season. But you can pump up the flavor with a little lime juice if the flavor of your tomatoes is a little dull. Juicy tomatoes will yield a more watery salsa than pulpy roma tomatoes.

Provided by Martha Rose Shulman

Categories     dips and spreads, side dish

Time 10m

Yield 2 cups

Number Of Ingredients 7

1/4 small white or red onion, minced
1 teaspoon red wine vinegar
1 pound fresh, ripe tomatoes, finely chopped
1 to 3 jalapeño or serrano chiles, to taste, minced (and seeded, if you would like a milder salsa)
4 tablespoons chopped fresh cilantro, more to taste
1 to 3 teaspoons fresh lime juice (optional)
Salt to taste

Steps:

  • Place minced onion in a bowl and cover with cold water. Add vinegar and let sit for 5 minutes or longer. Drain and rinse with cold water.
  • In a medium bowl, combine remaining ingredients and stir in onions. (If your tomatoes are full of flavor, you won't need lime juice.) Ideally, let stand at room temperature for 15 to 30 minutes before eating so that flavors will blend and ripen.

QUICK SALSA

Quick Salsa image

Salsa... I admit that nothing can beat fresh salsa. But, this is a great alternative to fresh tomatoes when they aren't as readily available during the winter months. So, I opt to do this version from time to time. It is quick and it uses canned diced(or whole) tomatoes. It works pretty well. The canned tomatoes have to be in their own juice, not puree (check the label). If you can, get an organic one, like Muir Glen. But really, any brand will work just fine.

Provided by ellie36

Categories     Appetizers

Time 10m

Yield 6

Number Of Ingredients 7

14.5 can tomatoes diced or whole
1 cloves garlic cloves (up to 2)
1 jalapeno (ribs and seeds removed)
0.25 cup cilantro
0.25 onion (up to 1/2) (I added 1/4)
salt/pepper
1 lime (or lemon...works just as fine) juiced

Steps:

  • Drain tomatoes rather well over a sieve. You don't want your salsa to be too watery. In the meantime, place garlic, onion and jalapeno in a food processor. Process for 30 seconds or until finely chopped (not too fine). Add drained tomatoes and cilantro, then pulse for an additional 30 seconds or so until nicely chopped. Add salt and pepper to taste. Add lime juice. If it doesn't taste right adding more lime juice will usually do the trick. Sometimes, I add a splash of olive oil to blend the ingredients together.

HOW TO THICKEN SALSA? (3 EFFECTIVE SALSA THICKENING ...

  • Roma Tomatoes. If you have problems with watery salsa, you should consider using Roma tomatoes. These tomatoes are harder than traditional tomatoes, so mixing them to make salsa gives you a heavier texture.
  • Adding More Veggies. The salsa’s crispy consistency is enhanced by adding slices of vegetables such as chili, bell pepper, and other spices. You can also use thicker fruits and vegetables like cucumber, avocado, and tomato to change the thickness of salsa.
  • Cornstarch. For each cup of salsa you want to thicken, you must first add 1 tablespoon of cornstarch to the bowl and add cornstarch. When you’re done, you need to add the same amount of water to the bowl so you can mix the cornstarch and water.
