FRESH FIG, APPLE, AND POMEGRANATE SALAD



Fresh Fig, Apple, and Pomegranate Salad image

Mixed greens-including spinach, arugula, leaf lettuces, and Romaine-combine with fresh figs, apples, and pomegranates to create a fresh, crunchy salad. Tossed with a creamy vinaigrette and topped with feta and sliced almonds, there is interest in every bite.

3 tablespoons white wine vinegar
3 tablespoons extra-virgin olive oil
3 tablespoons sour cream
1 teaspoon Dijon mustard
1 stalk green onion, chopped
1 clove garlic, minced
salt and freshly ground black pepper to taste
5 ounces mixed salad greens
8 medium (blank)s fresh figs, halved
1 medium Granny Smith apple, chopped
4 tablespoons pomegranate seeds
4 tablespoons sliced almonds
4 tablespoons crumbled feta cheese

Steps:

  • Combine vinegar, olive oil, sour cream, and Dijon mustard in a small food processor or blender. Puree until dressing has begun to blend, about 30 seconds. Add green onion and garlic; process until smooth, 30 to 45 more seconds. Season with salt and pepper.
  • Place mixed greens in a large salad bowl and add vinaigrette to taste. Toss greens until coated, then divide evenly among 4 salad bowls.
  • Top salads with equal amounts of fig halves, chopped apple, pomegranate seeds, almonds, and feta cheese.

Mixed Green Salad With Parmigiano Crisps image

Number Of Ingredients 10

1 cup grated Parmigiano
4 cups salad greens, such as mesclun, arugula, red leaf, romaine or baby spinach
1 cup mixed fresh herb leaves, such as parsley, basil, oregano, chives or cilantro
1 cup grape tomatoes, cut in 1/2
1/4 cup thinly sliced red onions
1/2 cup cucumber, peeled and thinly sliced
1/4 cup high quality extra-virgin olive oil
1/4 cup red wine vinegar
Salt
1/4 cup toasted chopped walnuts, sunflower seeds or chopped hazelnuts

Steps:

  • For the crisps:
  • Preheat the oven to 375 degrees F. Line a sheet tray with a silicone mat. Make 4 even, very thin circles of Parmigiano on the mat. Be sure that the circles are not touching. Bake 7 to 8 minutes or until the cheese has melted, turned golden brown and looks like lace. Remove the tray from the oven and let the crisps cool for about 1 minute. Using a spatula, remove the crisps from the silicone mat and reserve on a plate.
  • For the salad:
  • Fill your sink with cool water. Toss in all the salad greens and gently swish until all the dirt and grit falls to the bottom of the basin. Gently lift the greens out of the water and put in a salad spinner. If the greens are especially dirty empty the sink, rinse to rid of dirt and repeat the process. Spin the greens until they are dry and still very fresh looking. If not using the greens right away, store them wrapped loosely in paper towels then sealed in plastic bags in the crisper drawer of your refrigerator.
  • In a large bowl, place the greens and herbs. Add the tomatoes, onions, and cucumbers. Drizzle in half of the oil and vinegar and season with salt. Using your hands, gently toss the salad to combine. Taste! Add the remaining oil and vinegar, if needed and season again with salt, if needed (you probably will). The salad should be very flavorful but not soggy.
  • Arrange the salad on individual salad plates or bowls. Sprinkle each salad with the nuts and garnish with a Parmigiano crisp.

I love figs, so when I found this recipe I knew I had to try it. The vinaigrette came out very thick, so I had to adapt it to suit my needs. Pared with the goat cheese and pears, this was wonderful. The vinaigrette's sweet-tart taste makes it well suited for a marinade for grilled or roasted pork and chicken.

1/2 cup balsamic vinegar (or white wine vinegar)
5 dried black figs, stemmed and coarsely chopped
10 tablespoons water (1/2 cup plus 2 T)
1 tablespoon fresh lemon juice
2 tablespoons shallots, minced
1 teaspoon fresh thyme, minced
1 garlic clove, minced
1/4 cup olive oil
1/4 teaspoon salt
6 cups mixed salad greens
1 1/2 cups bosc pears, thinly sliced
1/4 cup goat cheese, crumbled
candied walnuts (optional)
grape tomatoes, chopped (optional)

Steps:

  • Combine balsamic vinegar and figs in a small saucepan over high heat, and bring to a boil. Reduce heat, and simmer until reduced to 1/3 cup: about 5 minutes.
  • Combine the fig mixture, water, and lemon juice in a blender, and process until smooth.
  • Place the fig mixture in a small bowl. Stir in shallots, thyme, and garlic. Add olive oil and salt; stir well with a whisk.
  • To serve: Drizzle enough dressing on the greens to coat. Place the greens on 6 salad plates and top with pear and goat cheese.

4 tablespoons crumbled Gorgonzola
4 tablespoons toasted chopped pecans
Lemon Vinaigrette, recipe follows
1 cup extra-virgin olive oil
1/2 cup fresh lemon juice
1 teaspoon salt
1 teaspoon lemon extract
2 tablespoons lemon curd
1 tablespoon honey
1 teaspoon Dijon mustard

Steps:

  • Place a pile of greens on each salad plate. Arrange the fruits on top and sprinkle with cheese and nuts. Lightly drizzle with vinaigrette.;
  • Combine all the ingredients in a bowl and whisk to combine.
