LEMON GINGER SORBET

Lemon Ginger Sorbet image

From "Cooking Light". Nice tart lemon flavour with a tangy gingery aftertaste. Took me a while to get the texture right, but that's because I made it without an ice cream machine.

Provided by Pepita

Categories     Frozen Desserts

Time 4h20m

Yield 8 serving(s)

Number Of Ingredients 5

3 cups water
1 cup sugar
6 tablespoons honey
1 tablespoon ginger juice (from one 2-inch piece of fresh ginger, peeled)
1 cup fresh lemon juice

Steps:

  • Combine the water and sugar in a large saucepan, and bring to a boil, stirring until the sugar dissolves. Remove from heat, and stir in honey. Cool completely.
  • Grate ginger; place ginger on several layers of damp cheesecloth. Gather edges of cheesecloth together; squeeze cheesecloth bag over a small bowl to measure 1 tablespoon ginger juice. (When I did this step, the juice came pouring out as I grated the ginger, so I was able to skip the straining part),.
  • Combine the sugar mixture, ginger juice, and lemon juice in a large bowl.
  • Pour mixture into the freezer can of an ice-cream machine, and freeze according to manufacturer's instructions. Spoon the sorbet into a freezer-safe container; cover and freeze 1 hour or until firm.
  • *OR* if you don't have an ice cream machine, stir the sorbet every half hour or so to as it is freezing (to break the ice crystals and prevent it from separating) until it reaches the desired consistency. You may have to run it through the blender if it freezes too solid or if it separates into its components; you may also want to take it out of the freezer and leave it in the fridge for 20 minutes immediately before serving to soften it up.

FRESH FIG AND PORT SORBET

Fresh Fig and Port Sorbet image

The ingredients are clearly classic Portuguese (figs, port) and sorbet was almost part of the Moorish repertoire (ice was brought from the Sierra Nevada mountains to the Alhambra to provide coolness for sliced fruit), but in all other respects, this is about as non-traditional a recipe as you can find for the Zaar World Tour 5 (2009)! This recipe uses no milk or cream; the flavor of the figs and port is there, but understated and it is absolutely wonderful. You can stay within the traditional Iberian palate and use vanilla sugar instead of plain sugar (don't use vanilla extract, unless you cook off the alcohol), but that's just gilding the lilly. Full credit goes to Eating Out Loud (http://www.eatingoutloud.com/2008/08/fresh-fig-port-sorbet.html), who in turn credits Ms. Adventures in Italy for the idea of a Fig Sorbet (http://www.msadventuresinitaly.com/blog/2007/07/03/fresh-fig-sorbet/)

Provided by Gandalf The White

Categories     < 4 Hours

Time 1h30m

Yield 1-2 serving(s)

Number Of Ingredients 6

8 fresh figs
1/4 cup water
1 meyer lemon, zest and juice
1/3 cup sugar
4 tablespoons port wine
1 1/2 cups water

Steps:

  • Trim the hard parts and stems of the figs and quarter the remainder.
  • Add the figs and water to a saucepan, cover and bring to a simmer.
  • As the mixture heats up, add the lemon zest.
  • Stir 2-3 times over the first 10 minutes.
  • After about 10 minutes, the figs will soften and begin to break up.
  • When the figs are soft, add the sugar and cook uncovered for 2-3 minutes more until the mixture becomes thick and syrupy.
  • Remove from the heat.
  • Using either a stick blender in the pot or transferring the mixture to a regular blender, VERY CAREFULLY (Remember, this mixture is hot), puree the mixture.
  • Now add the port, 1 1/2 cups of water and the lemon zest to the mixture.
  • Taste and if it's too tangy (i.e., you didn't have Meyer lemons and substituted regular lemons), you may need to adjust with a tiny amount of sugar.
  • Once the mix is cool, pour into your ice cream maker and follow the manufacturer's directions to get a semi-firm consistency.
  • Remove the ice cream and place in a container in the freezer compartment of your refrigerator for at least 2 hours.
  • Remove, scoop, and enjoy!

HIBISCUS SORBET

Hibiscus Sorbet image

Red beverages made from strawberries (which grow in abundance in states where slavery proliferated, like Louisiana) and hibiscus, a plant native to West Africa, are particularly popular during Juneteenth celebrations. This hibiscus sorbet is flavored with spices and citrus that are reminiscent of bissap, a hibiscus-infused beverage enjoyed in countries like Guinea, or Sorrel, a festive beverage enjoyed during the holidays in Jamaica. Though bissap is typically tart, this sorbet toes the line between just-sweet-enough and barely-tart, thanks to the lime juice and the steeped hibiscus flowers. The steeped hibiscus flowers also provide a rich, deep and vibrant red color.

Provided by Food Network

Categories     dessert

Time 2h50m

Yield 4 cups

Number Of Ingredients 7

1/2 cup dried hibiscus flowers, optional
2-inch knob fresh ginger, peeled and sliced
2 cinnamon sticks
4 whole cloves
1 cup hibiscus syrup
2 tablespoons light corn syrup
3 tablespoons lime juice

Steps:

  • Place the hibiscus flowers if using, ginger, cinnamon sticks, cloves and 2 1/2 cups water in a small saucepan and bring to a simmer over medium-low heat, about 10 minutes. Remove from the heat, cover and steep for 15 minutes.
  • Strain the liquid and discard the solids. Stir in the hibiscus syrup, corn syrup and lime juice. Cool to room temperature and then refrigerate until chilled, 2 to 4 hours.
  • Freeze the mixture in an ice cream machine according to the manufacturer's instructions. Transfer to a 9-by-5-inch loaf pan and store, covered, in the freezer. If the sorbet is too hard when serving, let soften in the refrigerator for 10 to 15 minutes.

GINGER - SIDECHEF
Powdered ginger is actually stronger than fresh. When seasoning food, start with less and add more as needed. Grate a touch of ginger over a vanilla panna cotta or strawberry sorbet to wake up the flavor. A knob of ginger from a root purchased in a mainstream grocery store will likely be between a 1/2 inch to 2 inches in length.
