FRUIT 'N' CREAM CREPES
Steps:
- In a small bowl, combine the first 7 ingredients. Cover and refrigerate for 1 hour., In an 8-in. nonstick skillet, melt 1 teaspoon butter. Stir batter; pour about 2 tablespoons into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Make 3 more crepes, adding remaining butter to skillet as needed., For filling, in a small bowl, beat the cream cheese, 3 tablespoons confectioners' sugar, milk and vanilla until smooth. Spread 1 rounded tablespoon on each crepe; top with 1/4 cup fruit and roll up. Sprinkle with remaining confectioners' sugar.

This recipe has been a family favorite for over 30 years! These crepes are delicious and very rich! Be sure you have at least 1 hour to prepare, they are worth every minute!

Steps:
- Place the eggs, milk, water, melted butter, flour, and salt in the pitcher of a blender; blend until smooth.
- Blend the cream cheese, confectioners' sugar, lemon juice, lemon zest, and vanilla with an electric mixer until smooth. Gently fold in the whipped cream.
- Heat a lightly oiled griddle or non-stick skillet over medium heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Flip over when the batter is set and the edges are beginning to brown. Cook until the other side begins to brown. Stack finished crepes on a plate, cover with a damp towel and set aside.
- To serve, fill each crepe with 1/4 cup sliced strawberries and 1/3 cup of the cream cheese filling, roll up and top with a small dollop of the cream cheese filling and more sliced strawberries.

A girl named Sophie shared this recipe with me, I am not sure where she got it from, but it remains in my memory forever! These crepes are very tasty and would double as pancakes if that's what you prefer, although they make thin pancakes.

Steps:
- Spray non-stick on pan, and heat on medium heat.
- Combine all ingredients in a measuring cup.
- When pan is ready (water droplets thrown on it should sizzle), pour on crepe batter until desired size. (Swivel the pan a little to spread out the batter a bit).
- Once the edges have changed colour and firmed up, flip the crepe and leave on the other side for about 10 seconds.
- Cover with fruit topping and whipped cream.
- Fruit Topping Suggestion: Combine frozen fruit in pot with water and sugar (You can use fresh fruit too, I just happen to have a lot of frozen fruit handy.).
- Heat on medium high heat (while you are making the crepes).
- When it's heated you can either leave as is or puree it.

MIXED BERRY CREPES WITH MASCARPONE

- For the batter: Blend the flour, sugar, and salt in a food processor or blender. Add the milk, water, eggs, butter, and vanilla extract, and process until smooth. Set aside for at least 30 minutes.
- For the fruit: While batter rests, hull and halve the strawberries. Toss with blackberries, sugar, and orange liqueur, if using, in a medium bowl; set aside.
- For the filling: Whisk the cheeses with the sugar, orange zest and juice, and the vanilla extract.
- To make the crepes: Heat an 6-inch nonstick skillet or crepe pan over medium heat until a drop of water bounces and sizzles briefly on its surface before evaporating. Quickly pour in about 2 tablespoons of crepe batter and swirl it to coat the skillet evenly. Cook until the batter sets, about 30 seconds. Flip the crepe and cook the other side until just barely golden. Repeat with the remaining batter, stacking the crepes as they cook.
- Place 1 tablespoon of the cheese filling on the lower left-hand corner of each crepe. Fold crepe in half, then half again to make a triangle with filling in the tip. Repeat with the remaining crepes and filling. Stack filled crepes neatly on serving platter (or hotel pan). (The crepes can be prepared up to this point a day ahead, covered tightly with plastic wrap and refrigerated overnight.)
- To serve: Preheat an oven to 250 degrees F. Cover crepes with foil and warm in the oven until heated through, about 10 minutes.
- Spoon the macerated berries over the crepes and serve.
FRESH FRUIT FILLED CREPES

- Break eggs into a medium bowl and whisk together.
- Add milk, vanilla extract, and whisk into the eggs.
- Slowly add the sifted flour while continually whisking to prevent lumps.
- Add the salt, then whisk in the cooled melted butter.
- Let the batter rest for 30 minutes.
- Heat a non-stick 8 to 10 inch pan on medium high heat. Spray lightly with cooking oil.
- Ladle in about 1/4 to 1/3 cup of batter and swirl to coat the pan bottom.
- Fry for 45 to 60 seconds until slightly browned and the edges are starting to curl, then flip the crepe and fry for another 15 to 25 seconds. Remove to a plate. Continue with the remainder of the batter, spraying with a little cooking spray between crepes.
- Fill with topping of choice.

- For crepes: Combine ngredients in blender or food processor and blend 1 minute. Refrigerate 1 hour. Using crepe pan, coat lightly with butter or oil and turn crepes once, cook till edges just brown. Finish the rest of the crepes, and set aside.
- For filling: Combine cream cheese, vanilla and sugar and blend till creamy. Assemble: Down center of each crepe, spread 2 T cheese mixture. Wash and cut fruit into thin slices. Place fruit slices on cheese. Dot with butter and sprinkle with brown sugar. Fold and place in 9x13" oblong baking dish, seam side down. Finish all. Bake @ 325 for 10-15 minutes till heated through.Arrange on serving plates. For whipped topping: Combine sugar and cream and beat on high till soft peaks form. Serve over warm crepes.
- Any Fresh fruit in season is wonderful. The rest of the recipe is done the same.

- Combine flour, 5 mL sugar and salt in small bowl; set aside. Process milk, egg, egg white Becel® Buttery Taste margarine and in blender 1 minute. Add flour mixture and process just until mixed. Let stand at room temperature 20 minutes. Pour into measuring cup for easier pouring.
- Spray 20 cm crepe pan or nonstick skillet with no-stick cooking spray. Heat over medium-high heat until hot. Pour about 60 mL batter into pan, immediately tilting pan so batter coats bottom. Use back of spoon to spread if needed. Cook until bottom is set and lightly golden, about 1 minute. Turn crepe and cook an additional 20 seconds.

- Sprinkle each crepe lightly with 2 mL sugar, then a squeeze of lemon juice. Fold in half, then again in half if desired. Top with berries and dust, if desired, with confectioners sugar.
