CHERRY BAKED OATMEAL (& MORE RECIPES!)

This cherry baked oatmeal is one of our best loved cherry recipes! It's delicious, easy and tastes like cherry crisp. Use dried or fresh cherries!

Number Of Ingredients 12

1 cup dried tart cherries (or substitute fresh cherries or drained canned cherries)
1/2 cup pecan pieces (or chopped pecans)
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
3/4 teaspoon ground cardamom (or substitute more cinnamon)
½ teaspoon kosher salt
1 egg, beaten (omit for vegan)
2 cups milk (or 2 1/2 cups almond milk)*
1/3 cup pure maple syrup
2 teaspoons vanilla extract
3 tablespoons butter or coconut oil, melted and cooled slightly

Steps:

  • Preheat oven to 375ºF.
  • If desired, roughly chop the dried cherries. In a large bowl, mix the cherries, pecans, oats, baking powder, cinnamon, cardamom, and kosher salt.
  • Grease an 8- or 9-inch square pan and pour in the oat and cherry mixture.
  • In a small bowl, whisk the egg (if using). Mix in the milk, maple syrup, and vanilla. Slowly drizzle the milk mixture over the oats, and mix to combine if necessary.
  • Over the top of the oats, drizzle the melted butter or coconut oil. (If desired, add a few more cherries to the top for presentation.)
  • Bake 35 to 45 minutes until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for about 10 minutes.
  • To serve, cut into pieces. If desired, top with a drizzle of milk and extra maple syrup. Store leftovers refrigerated.

Steps:

  • Rince your cherries in cool water. Dry on paper towels. When perfectly dry, arrange on a cookie sheet, that will fit in your freezer. Freeze.When frozrn hard. Remove from freezer, and put into plastic freezer bags...Seal tightly...less air the better. THere you are...when you want a taste....open bag, pour some out. Sit back and enjoy a refreshing treat. This recipe uses frozen cherries, so it's great to make all year round! This is a sweet cobbler you can reduce the sugar slightly for a less sweeter taste. Although I have never tried it, I imagine that you could also make this using frozen or fresh blueberries.

4 cups frozen dark sweet cherries (can use 1 cup more)
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon cinnamon
1 pinch salt
1 1/2 cups flour
2 tablespoons sugar (can use 1 tablespoon)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cold butter, cut into small pieces (no substitutes)
2/3 cup buttermilk

Steps:

  • Set oven to 400 degrees (oven rack to second-lowest position).
  • Butter a 9-inch glass baking dish.
  • To make filling: cook all the filling ingredients in a 2-quart heavy saucepan over medium heat, stirring occasionally until the sugar begins to dissolve (about 3-4 minutes).
  • Spoon the filling into prepared baking dish.
  • To make the topping: in a medium bowl, whisk together flour, sugar, baking soda, baking powder and salt.
  • Blend in the cold butter using your fingertips or a pastry blender until mixture resembles coarse meal.
  • Stir in buttermilk with a fork JUST until combined (do not overmix!).
  • Drop the dough in mounds over the filling, leaving space between the mounds.
  • Lightly sprinkle sugar over the dough.
  • Bake for about 25-30 minutes, or until the topping id golden brown and the fruit is bubbling.
  • Cool slightly and serve warm.
