FRESH FIG CHUTNEY

- In a large saucepan combine the vinegar, sugar, onion, ginger, mustard seeds, lemon zest, cinnamon stick, salt, allspice, and cloves and bring to a boil. Reduce the heat to a simmer and cook until mixture is thickened and reduced by 2/3, forming a thick syrup. Add the figs and cook gently until the figs are very soft and beginning to fall apart and most of the liquid they've given off has evaporated, about 30 minutes.
- Transfer the chutney to a non-reactive container and allow to come to room temperature before serving. The chutney may be made up to 3 weeks in advance and stored in the refrigerator in an airtight container. (Alternately, hot chutney may be ladled into hot sterilized canning jars and processed in a hot-water bath according to manufacturer's directions.)
POACHED FIGS IN SPICED RED WINE WITH VANILLA GELATO

- In a saucepan combine the wine, sugar, cinnamon and cloves. Bring the liquid to a boil over moderately high heat, stirring, and simmer the mixture for 5 minutes. Add the figs and simmer just until figs are heated through. Let cool to warm. Arrange scoops of gelato in two stemmed glasses and top with the figs and some of the poaching liquid. Garnish with mint if desired.
POACHED FRESH FIGS

- Combine wine, sugar, lemon zest, 1 1/2 cups water, thyme, and vanilla bean in a non-reactive medium size saucepan and heat to simmer, let simmer gently for 5 minutes.
- Add figs to the syrup and continue to simmer until the figs are tender about 5 minutes. Remove from the heat and let figs cool about 10 minutes in the syrup. Remove and discard the thyme.
- Divide the figs among four glasses or bowls and spoon the warm syrup over the fruits. Garnish with Creme Fraiche and fresh thyme sprigs.
FRESH MINT CHIP GELATO

- In a large heavy saucepan, stir the sugar and cornstarch to blend. Whisk in the cream and milk and cook over medium heat, whisking constantly, about 10 minutes, or until the mixture thickens and begins to bubble.
- Transfer the cream mixture to a heatproof bowl and add the mint. Set the bowl over a bowl of ice water to cool the mixture down quickly and stir occasionally until cool; discard the mint after 5 minutes. (Don't steep the mint for too long or it will impart a grassy flavor; a quick steep while the cream cools will do.) Cover the mint cream and refrigerate about 4 hours, or until completely cold.
- Freeze the mint cream in an ice cream maker according to the manufacturer's instructions until frozen.
- Meanwhile, place the chocolate in a heatproof bowl, set it over a saucepan of simmering water and stir the chocolate until it has just melted. Remove from the heat and cool until the chocolate is barely warm and still fluid.
- Transfer the gelato to a large bowl set over a bowl of ice. Working quickly, drizzle the melted chocolate into the gelato while whisking or stirring vigorously. The chocolate will flake apart as it hits the cold gelato, forming bits of chocolate throughout. If you prefer larger pieces of chocolate throughout the gelato, use a wooden spoon to slowly stir in the melted chocolate. Serve immediately, or transfer to a container and freeze until firm, 3 to 4 hours.

FRESH FIG GELATO WITH ORANGE AND CINNAMON
The fig trees are full down here & I have many neighbors who oddly do not eat their figs... so more for me! This sounded sooo good I had to save it for a few more weeks until the figs are ripening. From The Times-Picayune - those folks know good cookin'! The prep time doesn't include the 3 hour chill time before freezing so plan ahead.

Steps:
- Place figs, orange juice, 1 tablespoon brown sugar and cinnamon in a small pan and cook over low heat until the figs have softened, 10 to 15 minutes, depending on thickness of the skin. Mash until the mixture is almost pureed but still has some texture. Set aside until it reaches room temperature. Cover and refrigerate.
- In the meantime, place milk, cream and 1/4 cup of the brown sugar in a small pan and cook over low heat, whisking from time to time, until it is warm, about 175 degrees.
- Place egg yolks, 1/4 cup of the brown sugar, vanilla and salt in a small metal bowl and whisk until completely mixed. Add 1/4 of the warm milk mixture to the eggs, whisking all the while. Continue adding milk to the eggs, 1/4 cup at a time, until you have added about 1 1/2 cups.
- Slowly, whisking all the while, return the now milk-and-egg mixture to the remaining milk mixture in the pan and continue cooking until it just begins to thicken or reaches about 185 degrees. Do not allow the mixture to boil. Pour through a medium fine strainer into a metal bowl, discard the solids and set aside until it reaches room temperature.
- Add the cooled fig mixture. Cover and refrigerate until it reaches 40 degrees, about 3 hours. Transfer to an ice cream maker and proceed according to the manufacturer's instructions.

FIG-HONEY GELATO

- In a saucepan, heat the figs over medium-high heat with the sugar, stirring roughly so they break apart.
- Cook, stirring, until the figs have mostly melted and begin to bubble, about 5 minutes.
- Remove from the heat and stir in the honey, orange liqueur, mascarpone, milk and salt. Chill well, about 30 minutes in the refrigerator; then freeze according to ice cream maker's instructions.

- Rinse and cut off the stems of the figs. Slice them in half and lay out, cut side up, on a baking sheet. Roast for 15 minutes.
- Put the roasted figs into a food processor and puree them until completely smooth. Scrape down the sides of the machine a few times to make sure you get everything thoroughly pureed. Chill the puree.

- Cut the stalks off the figs and chop into quarters, then place in a small saucepan with half the sugar. Stir over low heat to dissolve the sugar. Let the mixture simmer gently, stirring occasionally, for 15 minutes. Strain the figs and continue to simmer the liquid over low heat for 10 minutes, or until it becomes syrupy. Set aside to cool.
- Put the remaining sugar in a small saucepan with 250 ml (9 fl oz/1 cup) of water. Stir to dissolve the sugar, bring to the boil and cook, without stirring, for 15 minutes. Every now and then, wipe the inside of the pan with a basting brush dipped in cold water to prevent crystallization.
- Meanwhile, whisk the egg yolks in a large bowl until pale and creamy. Whisking slowly, gradually beat in the sugar syrup. Scrape the bowl and whisk again to incorporate the ingredients. Some syrup will set on the side of the bowl, don't scrape this into the mixture as it will form lumps.
- Roughly chop the cooked figs in a food processor. Add the reserved fig syrup and blend until smooth, then fold into the egg mixture using a spatula. Fold in the lemon juice.
