ONE-POT SPAGHETTI WITH FRESH TOMATO SAUCE

One-Pot Spaghetti with Fresh Tomato Sauce image

This one-pot meal is perfect for the beginner cook: Everything but the cheese goes into one skillet, and it all magically comes together. The tomato paste is here for a little flavor insurance, just in case your tomatoes aren't at their best. Feel free to add an extra tablespoon when they're out of season.

Provided by Food Network Kitchen

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 9

12 ounces spaghetti, broken in half
3 tablespoons extra-virgin olive oil
1 tablespoon tomato paste
4 cloves garlic, thinly sliced
2 medium tomatoes, roughly chopped
Handful fresh basil leaves, plus more for garnish
Large pinch crushed red pepper
Kosher salt
1/2 cup grated Parmesan, plus more for serving

Steps:

  • Put the spaghetti, oil, tomato paste, garlic, tomatoes, basil, crushed red pepper and 1 teaspoon salt in a high-sided medium skillet. Add 5 cups water, and bring to a boil over medium-high heat. Continue to cook, stirring the spaghetti frequently to keep it from clumping, until it is al dente and the sauce has reduced and thickened, 6 to 8 minutes.
  • Stir in the Parmesan (the sauce will thicken more), and season with salt if needed. Divide the spaghetti among 4 bowls, and garnish with more Parmesan and torn basil leaves.

FRESH CROCK POT TOMATO SAUCE

Fresh Crock Pot Tomato Sauce image

This tomato sauce is the best...so easy to make...will not heat up your kitchen and the finishing result is wonderful. You can easily double or triple the recipe! What a great way to use up your summer tomatoes!

Provided by Marz7215

Categories     Onions

Time 18m

Yield 1 pound sauce, 6 serving(s)

Number Of Ingredients 9

2 lbs ripe tomatoes, peeled and cored
2 tablespoons unsalted butter
1 medium chopped onion
1 garlic clove, minced
1 teaspoon salt (to taste)
1 tablespoon chopped basil (fresh is best)
oregano
rosemary
1 pinch sugar

Steps:

  • Peel and coarsely chop tomatoes. Do this by hand and not food processor. Transfer tomatoes to a slow cooker.
  • Melt butter over medium heat in a medium skillet. Add the onion and garlic, and saute until softened but not browned. Scrape into slow cooker.
  • Cover and cook on low for 2 to 3 hours.
  • At the end of the cooking time, stir in herbs. Cover and cook an additional 10 minutes. Taste for salt and add the sugar, if desired. Serve on top of your favorite pasta, you will have enough sauce for 1 lb of pasta.
  • I also add olives to the sauce, during the last phase of cooking. Whatever is left over, I freeze.
  • Another great tip -- when peeling the tomatoes use a vegetable peeler (one suited for softer skin) and it will make life so much easier!

  • Fill the slow cooker with chopped fresh tomatoes, stems discarded, and the garlic. Cover and cook on low overnight, or for about 8-10 hours.
  • Remove the lid and let cool for 30-60 minutes. (This makes it possible to blend them without the risk of the steam making your blender explode. Which is key.)
  • Use a large slotted spoon or small mesh spoon to scoop out the tomato solids and garlic into a blender, leaving the liquid in the slow cooker.
  • Add oregano, salt, olive oil, and basil and blend into a smooth sauce. (You may need to do two batches.) Blend very, very well to ensure that the skin is blended up.

  • Prepare your tomatoes by washing in plain water. Cut them in half or quarters and add to the crockpot. Add the garlic, onion, carrot, and herbs. Drizzle the wine and olive oil. Cover and turn crockpot to low and cook for 2-4 hours stirring occasionally.
  • After the sauce has simmered for a while and tomatoes have released their juices and the vegetables are soft, turn off crockpot and allow the sauce to cool.
  • Run the cooled tomato sauce through a Food Strainer or Food Mill to remove skins, seeds, and to smooth out the sauce. If you are crunched for time, you can pop the cooled sauce into the refrigerator and begin again the following day.
  • Return the strained tomato sauce to the crockpot to cook down further to thicken the sauce. Turn the crockpot to low and vent the cover so excess moisture evaporates. Cook until your desired thickness, 4-6 hours or longer, stirring occasionally.

  • In a large saute pan, heat olive oil over medium-low heat. Add onion and sauté about 10 minutes, stirring often, until onion is soft and translucent. Add minced garlic and cook for 1 minute more. Remove from heat.
  • Meanwhile, clean, core, and quarter the tomatoes. I live the skins on- the natural pectin in the skin will help thicken the sauce. I don’t worry about removing seeds as they don’t bother me after I puree the sauce but feel free to remove if you’d like!
  • Add the quartered tomatoes to the base of the slow cooker. Add the sautéed onions and garlic, tomato paste, fresh basil, sugar, and Italian seasoning.
  • Cover and cook on low for 4 hours. After 4 hours, the tomatoes will be falling part and lots of juice will have accumulated. In batches, transfer tomato mixture to a blender or food processor and blend until smooth. Return pureed tomatoes (now sauce!) back to the slow cooker and cover. Cook again on low for 3-4 hours until sauce has reduced a bit and the flavors are concentrated. Season to taste with salt and pepper.
