Steps:
- Place ingredients in bread machine according to manufacturers directions.
- Start machine on dough setting.
- When dough cycle is complete, remove dough with floured hands and cut in half on floured surface.
- Take each half of dough and roll to make a loaf about 12 inches long in the shape of French bread.
- Place on greased baking sheet and cover with a towel.
- Let rise until doubled, about 1 hour.
- Preheat oven to 450°.
- Bake for 15 to 20 minutes or until golden brown, turning pan around once halfway during baking.
- Remove baked loaves to wire racks to cool.

- Unplug the bread machine & then remove bread pan.
- Place the water and then the rest of the ingredients into the bread pan. You can make a little indent on top of the flour in order to avoid the yeast falling into the water (until the machine starts). Do not combine the salt with the yeast (as the salt can kill the yeast). Place the yeast & salt in separate parts of the bread pan.
- Place the bread pan back into the bread machine & then plug in the bread machine.
- Put your machine on the "Dough" setting and press the start button. In our bread machine, the kneading & rising on the dough setting takes about 1:30 hours.
- When your bread machine has finished, unplug the machine & pour the dough onto a cutting board. Wear oven mitts (as the bread pan/bread machine may be hot). Sprinkle some flour on the cutting board (before you pour the dough) in order to avoid the dough sticking to the cutting board.
- Divide the dough into 4 equal parts if you want to make 4 skinny baguettes (roughly 12 inches long). Or divide the dough into 2 equal parts in order to make 2 thicker french bread "rolls".
- Roll the divided dough with your hands into your preferred shape (i.e. baguette or thicker bread roll). See our tips below on shaping the bread dough (especially about the making the dough roll about 1/2 the width of your desired end product... as the dough expands as the yeast rises).
- Place the shaped dough onto a nonstick baking sheet.
- Coat the dough with olive oil. Use a small pastry brush.
- Cover the dough & baking sheet with a light kitchen cloth or plastic wrap in order to protect from dust, etc.
- Let the dough rise for 1 hour.
- During this "rising" time, preheat your oven to 450 degrees F.
- After the hour, remove the covering from the dough and "score" (slice) the top of each dough roll with a sharp knife. Make diagonal slices about 1/2 inch deep and about 3 inches apart. This will help prevent the bread from cracking during baking. See the tips below about how to score bread.
- Place the baking sheet in the oven. It should bake at 450 degrees for 15-20 minutes or until golden brown. Wear oven mitts.
- At the 8-10 minute mark, turn the baking sheet around in order to ensure an even "browning" of the bread. Wear oven mitts.
- Remove the baking sheet when done and place the bread on a cooling rack. Wear oven mitts.

This recipe comes from Fleishmann's Yeast and is absolutely the best french bread recipe I have found. The texture is wonderful and it tastes and looks great. I always get rave reviews when I make this.

- Add 3/4 cup water, salt, flour, parmesan cheese, garlic powder and yeast to bread machine pan in order suggested by manufacturer.
- Select dough/manual cycle.
- When cycle is complete, remove dough from machine to a lightly floured surface.
- Roll dough into a 15x10 inch rectangle.
- Beginning at long end, roll up tightly as for jelly roll.
- Pinch seams and ends to seal.
- Taper ends by gently rolling back and forth.
- Place loaf, seam side down on a greased baking sheet sprinkled with cornmeal.
- Lightly brush loaf with oil.
- Cover and let rise in warm draft-free place until almost double in size, 10 to 15 minutes.
- With a sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across the top of loaf.
- Lightly beat egg white and 1 tablespoon water; brush some of egg white mixture over top of loaf.
- Bake at 375 for 20 minutes.
- Brush again with remaining egg white mixture and sprinkle with sesame seeds.
- Bake 5 to 10 minutes more or until done- bread should sound hollow when tapped.
- Remove the bread from the baking sheet and cool on a wire rack.

BREAD MACHINE FRENCH BREAD DOUGH
Easy to make enjoyed by all recipe for your bread machine. We make 1 loaf about 12in long often using it for homemade garlic bread as well as sandwich bread. Also we have made dinner rolls (approx 9) and it works just fine for these. This recipe came from our bread machine booklet and after trying several different recipes we always revert back to this no fail one. Please enjoy. - Add Water to your bread machine first, then add the sugar, salt, flour and yeast. Put it on your dough cycle. Check consistency of dough during cycle as you may need to add a little water or flour depending on your bread maker. When complete, roll dough out to a 12in long loaf of bread and allow to rest on a lightly floured baking sheet covered by a towel for 1 hour. With a knife cut three diagonal slashes across the top of the bread and then glaze. Bake in a preheated oven at 400F/205C for 15 to 20 minutes or until done. Allow to cool on wire tray, then enjoy.

FRENCH BREAD (FOR BREAD MACHINE)
I'm always in demand to bring bread to any gathering. This is simple and very tasty. I usually make 10-20 loaves at Christmas for gifts.

- 1. Add ingredients to bread machine according your machines instructions.
- 2. Set machine to "dough stage".
- 3. When done, cut into 2 sections. Roll each out into an 8 x 11 sheet and roll up.
- 4. Sprinkle bottom of loaf pans with cornmeal. Place bread on top. Make 3 slits in bread dough
- 5. Heat a large container of water in microwave. Set pans in microwave and cover with a towel. Set rise again for 1 hour. Heat from the hot water will help bread rise.
- 6. Preheat oven to 430 degrees. Place bread in oven and bake for approximately 17 minutes. Bread is done when golden brown and has a hollow sound when tapped
- 7. Remove from pans and spray with butter and then sprinkle with garlic salt. Let cool, wrap and place in freezer bags. Freeze until ready to use or use immediately.
- 8. NOTE: These can be made into rolls (approximately 22) rolled in fat free Italian dressing then rolled into a mixture of 1 envelope onion soup and 1 cup parmesan cheese that has been mixed together. Let rise and bake as above.

- Place 1 cup water, bread flour, sugar, salt and yeast into bread machine pan in the order recommended by manufacturer. Select Dough cycle, and press Start.
- When the cycle has completed, place dough in a greased bowl, turning to coat all sides. Cover, and let rise in a warm place for about 30 minutes, or until doubled in bulk. Dough is ready if indentation remains when touched.
- Punch down dough. On a lightly floured surface, roll into a 16x12 inch rectangle. Cut dough in half, creating two 8x12 inch rectangles. Roll up each half of dough tightly, beginning at 12 inch side, pounding out any air bubbles as you go. Roll gently back and forth to taper end. Place 3 inches apart on a greased cookie sheet. Make deep diagonal slashes across loaves every 2 inches, or make one lengthwise slash on each loaf. Cover, and let rise in a warm place for 30 to 40 minutes, or until doubled in bulk.
- Preheat oven to 375 degrees F (190 degrees C). Mix egg yolk with 1 tablespoon water; brush over tops of loaves.
- Bake for 20 to 25 minutes in the preheated oven, or until golden brown.

SOURDOUGH FRENCH BREAD
You can produce an authentic French loaf in your own kitchen. This really works! Adapted for the bread machine from a recipe found in "World Sourdoughs From Antiquity", by Ed Wood. Prep time includes proofing time for sourdough starter.

- Put ingredients, in order listed, into bread machine pan.
- Set machine for dough cycle and start.
- At end of dough cycle, turn dough out onto a floured surface.
- If dough is too sticky, knead in a little additional flour.
- Divide dough into 2 equal portions and flatten each into a 1 1/2 inch thick oval.
- Fold oval in half once lengthwise and pinch seam to make an elongate loaf.
- Sprinkle cornmeal on a baking sheet and place the loaves on the sheet seam side down.
- Cover and let rise in a warm place (85 degrees F) until about doubled in bulk.
- Place a shallow pan of hot water on the lower shelf of the oven and preheat the oven to 375 degrees F.
- Make shallow slashes in tops of loaves with a razor blade or finely serrated knife, held at a 30 degree angle.
- Place the loaves in the oven and immediately spray them and the oven walls with water from a fine mister, and avoid spraying oven light.
- Repeat this spraying 3 additional times at one minute intervals.
- Continue baking for 30 to 40 minutes or until brown, but remove pan of water from oven after the first 15 minutes.
- Remove loaves from baking sheet and cool on wire racks.
- *To proof sourdough culture, start with 1/2 cup of culture and stir into it 1 1/2 cups warm water and 1 1/2 cups flour.
- Cover with plastic and let sit 8 to 12 hours (the longer it sits, the more 'sour' your bread will taste).
- At this point, measure out the 2 cups required and proceed with recipe; returning any extra to the starter pot to save in the refrigerator until you want to use it again.

- Place the sourdough starter, water, olive oil, salt, sugar, yeast, and flour in that order into the pan of a bread machine, set the machine on the dough cycle, and start the machine.
- After the machine has finished its cycle, turn the dough out onto a floured surface, and knead several times; mix in more flour if the dough is very sticky. Cut the dough in half, and roll each piece of dough out into a rectangle about 8 by 12 inches and 1/2-inch thick. Roll the rectangles into loaves the long way, pinch the seams, and taper and pinch the ends of the loaves.
- Line 2 baking sheets with parchment paper, and sprinkle paper with cornmeal. Place the loaves gently onto the prepared baking sheets, cover loosely with plastic wrap, and let rise in a warm place until doubled, about 30 minutes.
- Place a large baking stone onto the center rack of oven, and place a baking dish onto a lower rack. Preheat oven to 375 degrees F (190 degrees C). Carefully pour boiling water into the baking dish.
- Remove plastic wrap from loaves, and slash several 1/2-inch deep cuts into each loaf with a sharp knife. Whisk egg yolk and milk together in a small bowl until thoroughly mixed, and brush the loaves with the egg yolk mixture.
- Place the loaves into the preheated oven on top of the baking stone, and quickly spray the inside of the oven 4 or 5 times with a water-filled spray bottle. Shut oven door; wait 1 minute, and spray again; repeat twice more, spraying the oven 4 times with water at 1-minute intervals.
- Bake about 15 minutes, and remove the water-filled baking dish. Continue to bake until the bread is browned and the loaves make a hollow sound when thumped, about 15 more minutes. Remove bread to cool on racks.

The love of my life bought me a bread machine several years ago since I love to bake. I needed a loaf of french bread and thought I would play around with a recipe to see what I come up with. The recipe is a hit with my boyfriend and his father. They like it better than the store bought french bread.

- 1. Place all bread dough ingredients in bread machine and select dough cycle.
- 2. When cycle is complete, remove dough and roll into a 12" x 15" rectangle on a lightly floured board. Roll up from long side and pinch seam to seal. Fold ends under. Place seam side down on a greased baking sheet that has been dusted with the cornmeal. Cover loosely with plastic wrap and let rise 45 minutes.
- 3. Make 4 diagonal cuts with a sharp knife across top of bread. Bake 375 degrees for 25 minutes.
- 4. Beat egg white, water garlic powder and italian seasonings, remove bread from oven and brush with egg wash. Return to oven and bake an additional 5 minutes.
