EASY CORN DIP

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise
Two 10-ounce packages frozen fire-roasted corn
Two 4.5-ounce cans chopped green chiles
1/2 cup jarred jalapenos, chopped
1/2 cup jarred salsa
Kosher salt and freshly ground black pepper
3 cups grated Monterey Jack cheese
1/4 cup fresh cilantro leaves
Corn chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
  • Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
  • Top with the cilantro and serve warm with the corn chips on the side.

1 cup sour cream
1/2 cup mayonnaise
8 ounces grated sharp cheddar cheese
2 to 3 fresh jalapeños (seeds and membranes removed, finely minced)
1/2 cup chopped fresh cilantro (more or less, to taste)
1 tablespoon cumin
1 teaspoon garlic salt
Freshly ground black pepper (to taste)

Steps:

  • In a large bowl, combine corn, sour cream, mayonnaise, cheese, jalapeños, cilantro, cumin, garlic salt, and black pepper. Stir until well mixed. Refrigerate for at least 4 hours (preferably 8 hours to overnight) to allow flavors to blend. Serve with tortilla chips or corn chip scoops.

Generally, when you think of creamed corn, you think of hot soup or pudding. But this version opens up another possibility: dip. Made with fresh parsley and caramelized onions, it's served cold with crisp vegetables or baguette toasts - a lovely way to start a holiday party.

2 tablespoons olive oil
1/2 cup sliced onions
Kosher salt
2 cups frozen corn
1 clove garlic, chopped
1 cup sour cream
1/4 cup mayonnaise
1/3 cup fresh parsley, finely chopped
2 teaspoons grated Parmesan
Freshly ground black pepper
Melba toasts, baguette toasts or celery sticks, for serving

Steps:

  • Heat 1 tablespoon oil in a medium skillet over medium-low heat. Add the onions and 1/2 teaspoon salt, and cook until soft and just starting to brown, about 4 minutes. Add the corn, and cook, stirring, until heated through and starting to turn golden, about 3 minutes. Add the remaining 1 tablespoon oil and the garlic, and cook until fragrant, about 2 minutes. Set aside 1/2 cup of the vegetable mixture. Transfer the rest to a food processor, add 1/4 cup water and process until mostly creamy with a little texture.
  • In a medium bowl, combine the sour cream, mayonnaise, parsley, Parmesan, 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the pureed vegetables and the reserved mixture, and stir to combine. Refrigerate, covered, for at least 1 hour up to 3 days before serving. Serve chilled, with dippers.

Do not let the title fool you, this is delicious. This is an appetizer/dip recipe that goes well with tortilla chips. Everytime I make this dip people rave about it and ask for the recipe.

2 (8 ounce) packages cream cheese
1/3 cup sour cream
2 -3 tablespoons taco seasoning, from prepared taco season packet (more to increase spiciness)
2 -3 tablespoons canned jalapeno slices, finely chopped (can vary according to taste or spiciness)
1 (15 ounce) can white shoepeg corn, well-drained
1 1/2 cups shredded Mexican blend cheese, divided into 3/4 cups

Steps:

  • In large bowl combine cream cheese and sour cream and beat until smooth.
  • Beat in taco seasonings and jalapenos. Beat into this mixture one of the 3/4 C of the shredded cheese.
  • Fold in the corn and mix well.
  • Place mixture into a 9-inch square or comparable sized prepared baking dish(sprayed with non-stick).
  • Cover the top with the remaining 3/4 C of the shredded cheese.
  • Garnish top with a few sprinkles of taco seasoning.
  • Bake at 300 degrees F until cheese is melted and bubbly. (DO NOT OVERBAKE--IT WON'T BE CREAMY).
  • Serve hot with tortilla chips.

This is a yummy dip that you won't be able to stop eating. Sometimes I add some cooked, chopped bacon. Cut down the fat by using low-fat or fat-free varieties of the cheese, sour cream, and miracle whip. Add an extra jalapeno if you like it spicy! Use two cans of sweet corn if you can't find the shoepeg variety.
