CHEF JOHN'S CREAMY CORN CUSTARD

Corn custard is a wonderful side dish for all kinds of meats. Since it is so soft and light, texturally, it makes a great foil for things like barbecue pork, grilled steaks, and fried fish.

1 tablespoon butter, or as needed, divided
2 cups corn
1 ½ cups heavy whipping cream
1 ¼ teaspoons salt
1 pinch cayenne pepper
½ cup cold milk
3 egg yolks
2 eggs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter six 6-ounce glass or ceramic ramekins. Set ramekins into a 2-inch deep baking dish.
  • Place corn into a large saucepan and stir in cream, salt, and cayenne pepper. Bring to a simmer and remove from heat; stir in milk.
  • Transfer corn mixture to a blender and pulse several times to get the mixture moving. Blend on high speed until smooth and creamy.
  • Whisk egg yolks with eggs until smooth in a mixing bowl. Slowly whisk about 1/4 cup hot corn mixture into eggs until the corn mixture is incorporated. Repeat several times more until all the corn mixture is combined with eggs.
  • Divide corn mixture equally into the 6 ramekins. Pour hot tap water into the baking dish to come about halfway up the sides of the ramekins.
  • Bake in the preheated oven until custards are just set, 30 to 35 minutes. Let custards cool for about 10 minutes before serving in ramekins or unmolding onto serving plates. To unmold, insert a knife between the custard and the ramekin, go around the edge with knife to loosen, and turn over onto a plate to unmold.

This is my own alteration of a few different recipes. Not too rich or too sweet as many egg custards can be. Can be served warm immediately or cold.

4 cups whole milk
1 tablespoon vanilla extract
1 teaspoon butter
4 eggs
½ cup white sugar
3 tablespoons cornstarch

Steps:

  • Cook and stir milk, vanilla extract, and butter in a saucepan over medium heat until simmering. Remove mixture from heat before it comes to a boil.
  • Whisk eggs, sugar, and cornstarch together in a bowl until sugar dissolves.
  • Set saucepan back over low heat. Pour in egg mixture slowly, whisking constantly, until custard thickens enough to coat the bottom of a spoon, 5 to 10 minutes.

2 cups corn kernels, fresh or thawed
1 1/2 cup heavy cream
1/2 cup milk
1 1/4 teaspoon kosher salt
Pinch of​ cayenne
3 large​ egg yolks
2 large eggs

Steps:

  • Gather the ingredients.
  • Combine corn, cream, milk, salt, and cayenne in a large saucepan. Bring the mixture to a simmer over medium heat, stirring often. Remove pan from heat and let mixture cool slightly.
  • Carefully pour mixture into a blender and puree until very smooth. Set aside.
  • Preheat oven to 325 degrees F. Butter six 6-ounce ramekins and place them in a 9 - by 13-inch baking dish.
  • Combine the eggs and egg yolks in a large bowl and whisk for 30 seconds.
  • Slowly add the warm custard mixture to the eggs, 1/2 cup at a time, stirring until blended.
  • Ladle mixture into prepared ramekins and place in baking dish. Pour hot tap water into baking dish to come about halfway up the sides of ramekins.
  • Bake for 30 to 35 minutes, or until corn custard is just set. Remove ramekins from water in baking dish and let cool for 10 minutes before serving.

Wait! I know this sounds bizzare but you must trust me when I say that this tastes wonderful! Think about it like this, we put sugar on our cornflakes and we eat sweet popcorn and this is really just one step past that. Once you get over the idea, you'll be glad you made this I promise. The natural starch in the corn thickens the custard naturally, the same way as processed corn starch does. A unique Brazilian recipe that is Lovely lovely lovely!

6 ears fresh corn on the cob
1 (14 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
1 1/2 cups water
1 pinch salt
1/2 teaspoon freshly grated nutmeg (approx)

Steps:

  • Cut the corn from the cob and place it in the blender with the water. Blend well then strain the mixture through a sieve and extract as much juice as possible using the back of a spoon to press down on the mixture.
  • Put the corn juice in a saucepan along with the evaporated and condensed milk and salt.
  • Simmer over a medium heat for about 10 minutes stirring constantly until the mixture becomes creamy and slightly thickened.
  • Pour into 6 custard cups or ramekins, grate the nutmeg lightly over the top and allow to cool.
  • Refrigerate for at least 4 hours before serving.
  • YES YES YES!

2 cups heavy whipping cream
1/4 cup sugar
1 tablespoon light brown sugar
2 medium ears sweet corn, husks removed
1 envelope unflavored gelatin
2 tablespoons cold water
1 cup whole milk
16 fresh blackberries
1/2 teaspoon grated lemon zest
2 teaspoons lemon juice
1 teaspoon turbinado (washed raw) sugar
Fresh mint leaves

Steps:

  • Place cream, sugar and brown sugar in a small saucepan. Cook and stir over medium heat until sugars are dissolved. Cut corn from cobs; add corn to saucepan. Cook and stir over low heat for 5 minutes, stirring occasionally. Remove from heat; cover and let stand 10 minutes. Transfer corn mixture to a blender; cover and process until pureed. Strain through a fine-mesh strainer into a small bowl; set aside., In a large saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in milk and strained corn mixture. Pour into eight 4-oz. ramekins or custard cups. Refrigerate, covered, until set, 5 hours or overnight., In a small bowl, combine berries, lemon zest and juice. Sprinkle custards with raw sugar; top with berries and mint.

Steps:

  • Preheat oven to 350 degrees. Whisk flour, cornmeal, baking powder, and baking soda in a medium bowl; set aside. Generously butter a 10-inch cast-iron skillet, and place in the oven to preheat.

These lovely custard baked pastry cups are delectable. They are a must have at every Portuguese family gathering. This recipe is a modern version of the classic recipe which is very time consuming. You will be amazed to know that you will never have to buy these from the bakery again! Enjoy.

Number Of Ingredients 6

2 cups half-and-half cream (10% m.f.)
8 egg yolks
1 teaspoon vanilla
2 tablespoons flour
1 cup white sugar
397 g of tenderflake pastry dough (located in the freezer section in your local grocery store.)

Steps:

  • Preheat oven to 350°F.
  • **24 Hours before you make the pasteis de nata, remove tenderflake puff pastry from the freezer and let unthaw at room temperature.
  • Place all filling ingredients in a saucepan and whisk together until it is somewhat frothy in appearance. The temperature of the stove should be at medium heat. Stir constantly.
  • Bring liquid mixture to a slow boil. Remove from heat when the mixture has thickened.
  • Let mixture cool completely before pouring into the tart shells.
  • The tenderflake puff pastry block will come in two blocks. (Cut each block into 12 if using large cups and 24 if using mini cups).
  • Dust knife with flour as needed when cutting to prevent sticking.
  • Roll each piece of dough in the palm of your hand, like you would a meatball. Then flatten out by pressing your palms together.
  • Dust fingers with flour before working each piece in a rotating circular motion to expand to size. Spray muffin tin with non stick spray even if they are non stick !
  • Place dough in muffin tin and work in so that the dough is even with the top edge.
  • Fill each tin which is lined with dough with the filling so that filling is almost to the top.
  • For large cups bake for 35-45 minutes and for mini cups bake for 20-28 minutes. Until golden in colour or desired colour has been achieved (SOME PREFER TO HAVE THEM A DARK CARMEL COLOR ON TOP). I use a convection oven so adjust your heat and length of baking time accordingly.
  • ***When you remove the cups from the oven you will notice the filling to be quite puffed up but they will deflate once they start to cool.
  • Let baked cups cool completely then refrigerate in an airtight container.
  • These tasty morsels never last long enough to freeze so I am not sure if they keep well frozen.
