CHILE DE ARBOL SALSA RECIPE
Steps:
- Bring 4 cups water to a boil, then remove from heat.
- Remove the stems and seeds from the dried chile de arbol peppers. Removing the seeds is optional for a smoother, less seedy salsa.
- Dry toast the chile de arbol peppers in a dry pan, about a minute per side. This will help loosen them and release their natural oils.
- Add the toasted peppers to a bowl and cover with the very hot water. Soak them for 15 minutes, or until the peppers are softened. You may need to stir a bit to make sure all of the peppers are submerged.
- Heat the olive oil in a large pan. Add the onion and cook for 4-5 minutes to soften. Add the garlic and cook another minute, until you can smell the garlic. Add it to a food processor or blender.
- Add the rehydrated peppers to the food processor or blender along with the onion, garlic, cilantro (if using), lime juice and salt.
- Process until smooth.
- Taste and adjust with salt and a few splashes of water for a thinner salsa.
- Add all of the ingredients to a food processor. Process until smooth.
- Pour the mixture into a small pot and bring to a boil. Reduce heat and simmer for 10 minutes.
- Cool and serve.

- Peel, rinse and dry the tomatillos. Slice them in half and set them onto a large lined baking sheet.
- Slice 1 serrano pepper in half and set it on the baking sheet with the tomatillos, skin sides up.
- Roast the tomatillos and serrano pepper at 425 degrees F. for 15 minutes, or until the tomatillos begin to char slightly. The skins will darken.
- Remove and transfer to a food processor or blender.
- Add the remaining ingredients and process until smooth. Adjust for salt and serve. Or, refrigerate in a sealed container to let the flavors mingle. Great with tortilla chips!

- Preheat oven to 400 degrees F (200 degrees C).
- Place jalapeno chile peppers on a medium baking sheet. Bake in the preheated oven 15 minutes, or until roasted. Remove from heat and chop off stems.
- Place jalapeno chile peppers, garlic, onion, white sugar, salt, ground cumin and diced tomatoes with green chile peppers in a blender or food processor. Chop using the pulse setting for a few seconds. Mix in whole peeled tomatoes. Chop using the pulse setting to attain desired consistency. Transfer to a medium bowl. - Broil peppers 4 in. from the heat until skins blister, about 4 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. - Soak the Guajillo chili peppers in water for a couple of hours. The seeds should float to the top. Discard the stems and pods and clean off any remaining dirt. Wash the cilantro leaves in a colander and set aside.
- In 3 tablespoons of oil, saute the onions till soft and translucent, on a medium heat, stirring often. Turn the heat down a bit and add the cilantro and chili peppers. Keep stirring and saute for 10 minutes, then add the Ro-Tel, cumin & cayenne, and let simmer for about 20-25 minutes more, covered, on a low heat, stirring occasionally. Once the flavors go through, give it a final stir and transfer the whole thing to a blender. Add 3 cups of chicken stock and blend on low till it forms a paste.

- In a large saucepan, cook the beef, onions and garlic until meat is no longer pink, breaking meat into crumbles; drain. If desired, top with sour cream, jalapenos, tomatoes and cilantro. , Freeze option: Freeze cooled chili in freezer containers; it may be frozen for up to 3 months.
