Fresh Blackberries and Cream Ice Pops image

Yummy pops made from fresh blackberries and frozen yogurt or ice cream... so refreshing and delicious, and good for you! An easy, tasty summer snack!

8 ounces fresh blackberries
2 cups vanilla frozen yogurt, softened
2 tablespoons white sugar
1 6-piece ice pop mold

Steps:

  • Place the blackberries into a blender or food processor. Cover and puree until the mixture is smooth. Pour the blackberry puree through a fine sieve placed over a large bowl to strain out the seeds.
  • Add the softened frozen yogurt and sugar to the strained blackberry puree and mix well. Pour into ice pop molds, and freeze.

Blackberry Ice Cream image

Started with Dee514's Cinnamon Ice Cream (#67382) and grew from there. Has gorgeous deep lavender color and rich blackberry flavor. A hint of rich cinnamon (I use Penzey's Vietnamese Cinnamon) adds an exotic depth to it. Uses electric ice cream maker. Prep time doesn't include chilling base. Cook time is freezing time.

2 cups fresh blackberries, rinsed
1 cup sugar, divided
1 egg yolk
1 cup half-and-half
1 cup whipping cream
1/8 teaspoon cinnamon
1/2 teaspoon vanilla

Steps:

  • Mix blackberries and 1/2 cup sugar in small saucepan. Bring to low boil, simmer 5 minutes to dissolve sugar and break up berries. Cool slightly. Puree in blender. Press puree through fine sieve to remove seeds. Discard seeds. Set puree aside.
  • Mix egg yolk, remaining 1/2 cup sugar, and 1/2 cup half and half in a small saucepan. Cook over low heat, stirring constantly, until mixture comes to a boil and thickens slightly (about 5 min).
  • Whisk remaining half and half, all of cream and cinnamon and vanilla into cooked mixture. Whisk in blackberry puree.
  • Cool and chill the ice cream base mixture for 1-2 hours or overnight.
  • Pour cold mixture into electric ice cream machine and process according to manufacturer's directions (takes about 25 minutes in my Cuisinart electric ice cream maker).

  • Add the blackberries to a blender and pulse until fully pureed. You want a smooth, juicy consistency. Press the puree through a fine mesh sieve and discard the pulp. You should have about 2 cups of liquid. Transfer the liquid to a medium saucepan, add in the lemon juice and sugar. Heat over medium-high heat until reduced and thickened, about 5 minutes; stir occasionally. Transfer to a bowl and refrigerate until cold, about 2 hours.
  • Add the heavy cream to a large bowl. Using and electric mixer beat until stiff peaks form. Turn the speed to low and slowly pour in the condensed milk. Add the vanilla extract. Turn the speed back up to high and beat until thickened.
  • Transfer 2 cups of the whipped cream to a separate bowl. Add in the cooled puree and mix until well combined. Gently fold into the remaining whipped cream to create swirls. Don't over mix or you will lose the swirls.Transfer to a freezer-safe container and freeze for at least 6 hours.

I actually used frozen blackberries from last summer (I'm trying to work my way through my deep freeze.....) and Stacy's organic nonfat vanilla yogurt. I used honey instead of sugar. I didn't have an ice pop mold but I did have dixie cups and popsicle sticks so I used those. Pretty good. I'll increase the blackberries just a little next time.
