- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a medium bowl, stir together the sugar and apples, set aside. Sift together the flour, baking soda, cinnamon and salt.

- Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
- In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. - Beat the butter with a mixer at medium speed until fluffy; gradually add the sugar, beating well. Add the eggs, 1 at a time, beating just until blended after each addition. Add the apple, beating just until blended.

- Spray tube pan with Baker's Joy (tm) or grease and flour pan.

- Preheat the oven to 350 ° Fahrenheit.
- In a large mixing bowl combine the first 4 ingredients. Stir by hand until smooth.
- Sift together the soda, salt, and flour. Add the sifted mixture to the wet ingredients. The batter comes together more like a dough- stiff and dry in this step- than a regular cake batter. Beat by hand 200 strokes.
- Fold in the nuts and apples. The apples should almost immediately start adding moisture to the dough, relaxing it and making it more "wet." However, the batter will still be thick and chunky.
- Cut strips of wax paper and line the bottom of the tube pan.
- Turn the cake batter into the tube pan.
- Bake for one hour. Let cool on a wire rack. Use the wax paper to help lift the cake from the pan.

- Place the rack in the center of your oven. Preheat the oven to 325 degrees F. Line a 9x9-inch or 8x8-inch square baking pan with parchment paper so that it overhangs two of the sides like handles. Lightly coat the parchment with nonstick spray. Set aside. Place the nuts in a single layer on an ungreased baking pan. Bake until toasted and fragrant, about 8 to 12 minutes. Do not walk away during the last few minutes (this is when nuts love to burn). Immediately transfer to a cutting board. Coarsely chop and set aside.
- In a medium bowl, whisk together the white whole wheat flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice.
- In the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, stopping in between each to scrape down the bowl. Beat in the Greek yogurt and vanilla extract. With the mixer on low, slowly add the dry ingredients, mixing just until evenly moistened. Fold in the apples and 1/2 cup of the toasted chopped walnuts. The batter will be very thick.
- Scrape the batter into the prepared pan and with the back of a spatula, spread it evenly. Bake until a toothpick inserted into the center comes out clean and the edges are light golden brown, about 35 to 45 minutes. The baking time will vary depending upon the moisture content of your apples. The center of the cake will still feel soft but should spring back just a little when touched. Check at the 35-minute mark. If your cake isn't done but the top is browning more quickly than you would like, loosely tent it with foil, then continue baking as directed. When it's done, place the pan on a wire rack and let cool completely before frosting.
- To make the frosting: In a mixing bowl or a stand mixer fitted with the paddle attachment, beat the cream cheese, butter, and brown sugar at medium speed until creamy, about 1 to 2 minutes. Add the vanilla and salt and beat until blended. Reduce the mixer speed to low. Gradually add the powdered sugar, beating just until combined. Increase the mixer speed to high. Beat 1 additional minute or until smooth. Spread the frosting generously onto the cooled cake. Sprinkle the remaining walnuts over the top. Slice generously and serve.

- Sift together the cinnamon, nutmeg, flour, baking soda and salt.
- Add the flour mixture to the apple mixture to the apple mixture and mix well with a spatula.
- Add the walnuts and prunes. The batter will be very thick.
- Spoon the batter into the prepared pan and smooth the top.
- Lift the pan from the counter about 2 inches and drop it back down to get out all of the air bubbles.
- Bake the cake for 1 1/2 to 1 3/4 hours, until a tester in the center comes out clean.
- Allow to rest on the countertop for at least 30 minutes before turning out onto a cake plate to cool completely.

- Preheat oven to 350 deg F.
- Grease and lightly flour a 13 x 9 inch cake pan.
- Mix together sugars, eggs and shortening.
- Dissolve soda in buttermilk.
- Mix together the dry ingredients, adding to the sugar mix alternately with the buttermilk.
- After mixing the above well, fold in apples and pour into prepared cake pan.
- Mix topping and sprinkle over batter.
- Bake for 35- 45 minutes.

The girls and boys in my junior high home economics classes like this cake because it's not too sweet. I like it because it has high fiber and nutritional value-the apples are used unpeeled. Parents who have apple trees are always glad to donate the apples!

Sift together flour, soda, salt, cinnamon and cloves; add raisins and walnuts to flour mixture. Add flour mixture to egg mixture; beat slightly. Bake at 350° in greased 13x9-in. baking pan. Check for doneness after 25 minutes. , To make frosting, melt butter in saucepan; stir in flour until mixture bubbles. Add milk, stirring with wire whisk until mixture thickens. Cool. Add sugar and vanilla to cooked mixture; mix until smooth and blended. Spread on cooled cake; sprinkle with nuts.
