An easy recipe for gluten-free French Toast. This classic gluten-free breakfast recipe also has a dairy-free option.

4 large eggs
2 tablespoons sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
1/2 cup milk (Dairy-free use unsweetened almond milk or coconut milk. )
8 slices gluten-free bread
2 tablespoons butter (Dairy-free use Smart Balance of gluten-free cooking spray. )

Steps:

  • Whisk together the eggs, sugar, cinnamon, nutmeg, salt, pure vanilla, and milk in a shallow dish such as a pie plate or casserole dish.
  • Melt the butter over medium heat in a skillet.
  • Dip the gluten-free bread in the egg mixture, flipping to make sure both sides get well coated. The longer you leave the bread in the egg mixture the more it will soak up the egg mixture and will take a little longer to cook.
  • Cook the soaked bread piece on medium heat until golden brown. Flip to cook the other side of the bread until golden brown. Each slice should take 2-3 minutes to cook. Serve immediately. To keep the French Toast warm while cooking the additional slices, place the cooked slices on a baking sheet and in the oven at 275°F.

A delicious french toast recipe designed for use with gluten-free breads. It is lactose and casein free if you use ghee, or completely dairy-free if you use a dairy-free margarine (such as "Becel Vegan"). Serve with maple syrup and fresh fruit. I made this with Food For Life's Brown Rice Bread but you can use it with any store-bought or homemade GF bread. Bon appetit!

4 slices gluten free bread
2 medium eggs
2 tablespoons orange juice
1/4 cup rice milk (plain or vanilla) or 1/4 cup soymilk (plain or vanilla)
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon vanilla extract
2 tablespoons ghee or 2 tablespoons margarine
2 teaspoons honey

Steps:

  • Whisk together all ingredients except ghee/butter/margarine and bread in a pie pan or small baking dish until thoroughly blended.
  • Heat ghee, butter or margarine in non-stick pan or griddle over medium-high heat.
  • If you're using a dense bread, such as those from Food for Life, Soak for 3-5 minutes on each side.
  • If you're using a homemade bread or a softer or more crumbly bread, soak for only 1-2 minutes on each side.
  • Using a fork or tongs, remove each slice of bread from the liquid and allow excess liquid to drip off.
  • Place in hot ghee/butter/margarine and cook on each side until browned.
  • Serve immediately with maple syrup, jam and/or fresh fruit.

A delicious vegan fudge that you can't tell the difference. Feel free to add nuts, marshmallows, raisins, cranberries and other dried fruit, and anything else you might like at the end, before you put it in the pans. Cooking time is chill time.

Number Of Ingredients 6

1/2 cup unsweetened cocoa powder
4 cups icing sugar
1/2 cup almond milk (I use unsweetened Almond Breeze, or other non-dairy choice)
2 tablespoons dairy-free margarine (I use Earth Balance)
1 teaspoon vanilla extract (choose whatever taste you'd like) or 1 teaspoon mint extract (choose whatever taste you'd like)
1/2 cup chocolate chips (I use Enjoy Life)

Steps:

  • In a large bowl, sift together icing sugar and cocoa powder. Stir in chocolate chips.
  • In a medium saucepan, bring the almond milk and non-dairy margarine to a boil, over medium-high heat, careful not to burn. Using a whisk, stir constantly.
  • Once boiling, remove from heat and stir in icing sugar mixture, until combined well and chocolate is melted.
  • Stir in extract.
  • Spread into a 8x8 silicone pan and refridge until solid. If you don't have a silicone pan, you'll want to lightly grease your pan.
  • Cut into small pieces (or large pieces if you prefer!). I cut it in about a 9x9 squares, so they are bite sized pieces.
  • Notes: I froze this after it was solid and we snacked on some to save for Christmas trays and it was perfect, but once left out for a bit it got a little soft. It still tasted like 'real' fudge though!

2 slices whole grain bread
1/2 cup milk
1 tablespoon cornstarch
1 teaspoon sugar
1/2 teaspoon vanilla extract
2 teaspoons butter
1 pinch salt

Steps:

  • Preheat griddle to just above medium heat.
  • In a medium bowl, combine all ingredients except bread and butter. Mix until the cornstach is disolved. Transfer mixture to a shallow bowl or pan.
  • Dip both sides of each bread slice into the mixture.
  • Melt butter on the griddle or skillet. Place bread on heated surface and cook each side to a light golden brown.
  • Serve immediately.

Since I am dieting and have to watch my sugar, I came up with this staple and have many versions of the guilt free french toast-this is my new favorite...yummy! This recipe uses gluten-free bread Ezekiel 4:9 Whole Wheat/Cinnamon Raisin. I usually do overnight soaking them in the egg wash to soften them up, so they can retain the goodness and yumminess of the ingredients since the bread is very chewy-hard to begin with. This process does not make it soggy, makes it better to cook with!! This recipe is enough for four slices of the bread. Preparation includes overnight soak. Food.com does not recognize a new item on the market called Ideal Confectionery-Its a powdered sugar substitute that is almost the real deal-great on anything!! No after taste and all natural!!

1/4 teaspoon vanilla extract
2 tablespoons sugar substitute (granular)
1/4 cup skim milk (sometimes I use Almond milk)

Steps:

  • Mix all ingredients together-whisk thoroughly in a small dish.
  • Dip both sides of the bread and set in a small overnight dish.
  • Add remaining of the egg wash to the french toasts.
  • Cover and refrigerate overnight.
  • Uncover and cook on stovetop with non-stick spray.
  • Serve warm with Ideal Confectionery (substitute powdered sugar), sugar free syrup or sugar-free jelly/jam!
