Yield 4 servings

Number Of Ingredients 20

Buttered pecans:
1 heaping cup pecan halves, coarsely chopped
3 tablespoons unsalted butter
1 teaspoon sugar
1/2 teaspoon salt
French toast:
5 large eggs
1 cup whole milk
1/2 cup heavy cream
3 tablespoons lightly packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 teaspoons pure vanilla extract
8 thick slices brioche
4 tablespoons clarified butter, for the pan
Bourbon maple syrup:
1 cup pure maple syrup
2 tablespoons bourbon
Dash of pure vanilla extract
Confectioners' sugar, for serving

Steps:

  • For the buttered pecans:
  • Place a rack in the upper third of the oven and preheat to 350°F.
  • Place the pecan pieces on a rimmed baking sheet and toast for 10 to 14 minutes, until fragrant and golden brown. Remove from the oven and reduce the oven temperature to 200°F.
  • In a medium sauté pan set over medium heat, melt the butter. Stir in the sugar and salt. Add the pecans and cook, stirring, for 3 to 4 minutes, until the butter is lightly browned. Remove the pan from the heat.
  • For the french toast:
  • In a medium bowl, whisk together the eggs and milk.
  • In a small saucepan set over medium heat, warm the heavy cream for about 3 minutes, until just steaming and remove from the heat.
  • In a small bowl, combine the brown sugar, cinnamon, and salt. Add the sugar mixture to the cream and stir just until the sugar is dissolved. Add the cream mixture to the egg and milk mixture. Stir in the vanilla.
  • Working with one slice of bread at a time, put a slice into the egg mixture and let it soak for about 15 seconds on each side. Place on a rimmed baking sheet to rest while all the bread is dipped and the pan is heated.
  • In a medium nonstick skillet or griddle pan set over medium heat, melt the clarified butter. Place 2 or 3 bread slices into the pan and cook for about 2 minutes per side, until golden brown on each side. Add a bit more butter to the pan after you flip the bread, if needed. Transfer to a heatproof plate or rimmed baking sheet with a wire cooling rack set inside. Cover with a kitchen towel and keep warm in the oven while you cook the rest of the toast. Repeat the cooking process with the remaining bread.
  • For the bourbon maple syrup:
  • In a small saucepan set over low heat, gently stir together the maple syrup, bourbon, and vanilla until just warmed and well combined.
  • To serve, place 2 slices of French toast on each plate. Generously sprinkle with buttered pecans, drizzle with syrup, and dust with confectioners' sugar. Serve immediately.

Crispy French Toast Fingers with Blueberry Maple Sauce image

Provided by Ellie Krieger

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 14

1 cup sliced almonds
3 cups cornflakes
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
2 large eggs
3/4 cup low-fat (1 percent) milk
1 tablespoon pure maple syrup
1 teaspoon vanilla extract
Nonstick cooking spray
4 large slices firm whole-grain bread (6 ounces), each piece cut crosswise to make 5 fingers each
2 cups fresh or frozen (unsweetened) blueberries, (10 ounces)
1 tablespoon pure maple syrup, plus more to taste
tablespoon orange juice

Steps:

  • For the crispy French toast fingers: In a food processor, pulse the almonds until coarsely ground. Add the cornflakes, cinnamon, nutmeg, and salt and pulse until the cornflakes resemble the texture of oats. Transfer the cornflakes mixture to a shallow bowl.
  • In a medium bowl, whisk together the eggs, milk, maple syrup, and vanilla until well combined.
  • Spray a large nonstick skillet or griddle with cooking spray and preheat over medium heat. Working with one piece at a time, dip the bread into the egg mixture until completely moistened and coated but not falling apart, about 30 seconds each. Coat each slice of bread in the cornflakes mixture gently pressing it onto the bread. Place each slice of bread in the skillet and cook over medium-low heat, turning once, until the outside is golden brown and the center is warm, about 6 minutes total.
  • For the blueberry maple sauce: In a medium saucepan, combine the blueberries, maple syrup, and orange juice. Bring the mixture to a gentle boil.
  • Reduce the heat to medium low and simmer, stirring occasionally, for 2 minutes.
  • Transfer the mixture to a blender, or use an immersion blender, and blend until almost smooth. Add more maple syrup to taste depending on the sweetness of the fruit.
  • Serve the Crispy French Toast Fingers with the Blueberry Maple Sauce on the side for dipping, if desired.

MAPLE BOURBON GINGER SPLASH

Categories     beverage

Time 5m

Yield 1 serving

Number Of Ingredients 7

2 tablespoons organic maple syrup, plus more for the rim
Light brown sugar, for the rim
Ice
2 ounces bourbon
2 tablespoons fresh lemon juice
Splash of ginger beer
Lemon twist, for garnish

Steps:

  • Put some maple syrup on a saucer and put some sugar on a second saucer.
  • Dip the rim of a double old-fashioned glass in the syrup, then dip it in the sugar. Once the rim is all coated in sugary goodness, add a few ice cubes, and set aside.
  • Now, it's time to get shakin'. Add the bourbon, maple syrup and lemon juice in a cocktail shaker filled with ice and do what you do best: Shake it.
  • Pour the drink into the prepared glass. Add a splash of ginger beer -- I like a little sparkle in there. Stop making fun of me.
  • Peel a small piece of lemon rind using a vegetable peeler. Twist the rind and toss it in the glass. Enjoy!

Time 40m

Yield 24 fingers

Number Of Ingredients 11

1 cup pure maple syrup
One 2-inch piece fresh ginger, peeled and sliced
2 tablespoons bourbon
Nonstick cooking spray
One 1-pound loaf broiche or challah
6 eggs, at room temperature
1 cup whole milk, at room temperature
2 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
1/2 teaspoon bourbon
1/8 teaspoon fine salt

Steps:

  • For the syrup: Place the maple syrup and ginger in a small saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer for 10 minutes. Use a slotted spoon to remove the ginger and discard. Stir in the bourbon and keep warm while you make the French toast fingers.
  • For the French toast: Place two racks in the upper and lower thirds of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper and spray lightly with cooking spray.
  • Slice the brioche into 2-inch slices and then cut each slice into three to four 1-inch-wide fingers. In a large bowl whisk the eggs, milk, butter, vanilla, bourbon and salt. Dunk the fingers into the egg mixture, let the excess drip off, and then place them onto the baking sheet. Bake the fingers until they are firm and golden brown, 15 to 18 minutes, flipping the fingers over halfway through baking. Serve warm with the syrup.

BREAKFAST RICOTTA WITH BERRIES & MAPLE SYRUP

Breakfast Ricotta with Berries & Maple Syrup image

Provided by Ina Garten Bio & Top Recipes

Time 50m

Yield 3 to 4 servings

Number Of Ingredients 13

2 tablespoons unsalted butter
3 tablespoons sliced blanched almonds
1/8 teaspoon fleur de sel
1/3 cup pure maple syrup
2 cups Fresh Homemade Ricotta, recipe follows, or good fresh ricotta
2 tablespoons honey
1 teaspoon pure vanilla extract
1 pint mixed berries, such as raspberries, blueberries and strawberries
Toasted brioche or challah, for serving
4 cups (1 quart) whole milk
2 cups (1 pint) heavy cream
1 teaspoon kosher salt
3 tablespoons good white wine vinegar

Steps:

  • Melt the butter in a small saute pan over medium heat. Stir in the almonds and saute, tossing frequently, for 2 to 3 minutes, until the almonds are a golden brown. Sprinkle with the fleur de sel, add the maple syrup and keep warm.
  • Meanwhile, combine the ricotta, honey and vanilla and divide it among breakfast plates. Surround the ricotta with the berries and spoon the almond and maple syrup mixture over the ricotta. Place a slice of toasted brioche on each plate and serve warm.
  • Set a medium-meshed sieve over a deep bowl. Line the sieve with two double layers of cheesecloth and dampen the cheesecloth.
  • Pour the milk and cream into a large stainless steel or enameled pot such as Le Creuset and stir in the salt. Bring to a full rolling boil over medium heat, stirring occasionally (a full rolling boil means that the bubbles have expanded in the pot). Turn off the heat and stir in the vinegar. Allow the mixture to stand for one minute until it curdles.
  • Pour the mixture into the cheesecloth-lined sieve and allow it to drain into the bowl, discarding the liquid as it collects in the bowl. Allow it to drain at room temperature for 20 to 25 minutes. The longer you let the mixture drain, the thicker it will be. Transfer the ricotta to another bowl, discarding the cheesecloth and any remaining liquid. Use immediately or cover with plastic wrap and refrigerate. Yield: about 2 cups
