A dressed-up version of French toast has the sweet tropical flavor of pineapple. I use homemade hot fudge sauce for topping.

1 cup chopped fresh pineapple, drained
1 ½ teaspoons ground cinnamon, divided
4 slices good bread
2 tablespoons cream cheese
1 cup whole milk
1 egg
2 tablespoons white sugar
½ teaspoon vanilla extract
1 tablespoon butter
2 tablespoons hot fudge sauce, or to taste

Steps:

  • Mix pineapple and 1 teaspoon cinnamon in a bowl. Spread each slice of bread with 1 1/2 teaspoon cream cheese. Top 2 slices with 1/4 cup pineapple mixture apiece; reserve remaining pineapple mixture. Place remaining slices of bread atop pineapple mixture and press lightly to make 2 sandwiches.
  • Whisk remaining 1/2 teaspoon cinnamon, milk, egg, sugar, and vanilla extract in a shallow bowl. Lay each sandwich in milk mixture and let bread absorb mixture for a few seconds; flip and repeat.
  • Heat a nonstick skillet over medium heat, melt butter in the hot skillet, and fry sandwiches on both sides in butter until golden brown, 2 to 3 minutes per side. Top each sandwich with half the remaining pineapple mixture and drizzle 1 tablespoon hot fudge sauce over pineapple.

This is the most delicious French toast, that is made in the oven, serve sprinkled with powdered sugar, and smothered with maple syrup. Plan ahead this needs to be chilled overnight.

10 cups white bread (cubed into 1-inch pieces)
1 (8 ounce) package cream cheese
8 large eggs
1 1/2 cups milk
2/3 cup half-and-half cream
1/2 cup maple syrup
1 teaspoon vanilla
2 -3 tablespoons powdered sugar (to garnish)

Steps:

  • Place the bread cubes in a greased 13 x 9-inch baking dish.
  • Beat the cream cheese at medium speed of mixer until smooth.
  • Add in the eggs (1 at a time) mixing well after each addition.
  • Add in the milk, half and half, 1/2 cup maple syrup and vanilla; mix well until smooth.
  • Pour the cream cheese/milk mixture over the top of the bread cubes; cover, and refrigerate overnight.
  • The next morning: Set the oven to 375 degrees.
  • Remove the bread mixture from the fridge; let stand on the counter for 30 minutes before baking.
  • Bake for 40-50 minutes, or until set (should be a nice golden brown colour).
  • Remove from the oven, sprinkle with powdered sugar.
  • Serve with maple syrup.
  • Delicious!

1 loaf French bread, cut into 3/4-inch slices
1 (8 ounce) container cream cheese spread with pineapple
4 eggs
1 cup milk
¼ cup white sugar
2 tablespoons melted butter
½ teaspoon ground cinnamon
¼ teaspoon salt

Steps:

  • Spray a 9x13-inch casserole with cooking spray.
  • Spread a dollop of cream cheese onto a slice of bread, then cover with another slice to make a little sandwich. Repeat with remaining bread and cream cheese. Place sandwiches in a single layer in the prepared casserole.
  • Whisk together eggs, milk, sugar, melted butter, cinnamon, and salt in a bowl; pour over sandwiches in the casserole, making sure bread is completely saturated with egg mixture. Cover with plastic wrap and refrigerate, 8 hours to overnight.

Plan ahead this needs to be refrigerated for a minimum of 8 hours or overnight. I tossed the bread cubes with a couple teaspoons of cinnamon before placing in the baking dish, but that is optional, if you prefer a less sweeter taste just omit the white sugar completely --- this is *very* good!

10 cups bread cubes (cut into about 1-inch cubes, use stale bread but not hard for this)
1 (8 ounce) package cream cheese
3 -4 tablespoons sugar (optional or to taste)
8 large eggs, slightly beaten
1 1/2 cups full-fat milk
2/3 cup half-and-half cream (or use all half and half cream)
1/2 cup maple syrup
2 teaspoons vanilla
powdered sugar

Steps:

  • Place the bread cubes in a buttered 13 x 9-inch baking dish.
  • In a bowl beat the softened cream cheese with sugar at medium speed with an electric mixer until smooth and well combined.
  • Add in eggs one at a time mixing well after each addition.
  • Add in milk, half and half cream, maple syrup and vanilla; beat until well combined.

4 slices bread, use a good quality,bakery loaf
2 eggs
1 cup milk
1 pinch salt
6 tablespoons cream cheese
1 pinch cinnamon
1 teaspoon sugar
1/2 teaspoon vanilla extract
cinnamon sugar
1/2 cup sour cream
1/2 cup strawberry, cut up

Steps:

  • Cut each slice of bread in half.
  • Beat eggs with milk and pinch of salt.
  • In separate bowl, mash cheese until smooth with cinnamon, sugar, and vanilla, adjusting to taste.
  • Spread one-fourth of cheese filling evenly over four slices of bread.
  • Top with unspread slices of bread to form half-sandwiches.
  • Dip and soak each sandwich in egg-milk mixture, turning so both sides of each sandwich absorb liquid.
  • Let excess drip off.
  • Heat unsalted butter in 10 inch skillet, and when hot but not brown, add sandwiches.
  • Reduce heat and fry slowly for 5 to 7 minutes, or until first side is golden.
  • Turn and brown second side over low heat.
  • If sandwiches fry too quickly, filling will not be warm.

Very easy! It just takes minutes to make the night before and then just bake it in the morning. I usually make a small 8" x 8" casserole, using half the ingredients, except a little more bread (5 slices) and a little less cream cheese (6-7 oz.). NOTE: optional nuts have been added.

8 slices bread, cubed
2 (8 ounce) packages cream cheese, cubed
12 eggs, beaten
2 cups milk
1/3 cup maple syrup
1/2 cup pecans, chopped (optional)

Steps:

  • Layer half of the bread cubes in a greased 9 X 13 casserole dish.
  • Scatter the cream cheese cubes over the bread, then add the other half of the bread cubes on top.
  • Combine egges, milk, and syrup. Pour over the casserole.
  • Cover and refrigerate overnight.
  • In the morning, bring to room temperature, and sprinkle the nuts over the top of the casserole, lightly pressing them in with a spatula.
  • Bake 30 to 45 minutes in a 350 oven.

6 -10 stale plain croissants
6 eggs
2 1/2 cups milk
1/2 cup sugar
1 1/2 teaspoons vanilla
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
2 ounces cream cheese
4 tablespoons strawberry jam
1 tablespoon butter

Steps:

  • Preheat Oven to 350°F.
  • Slice croissants in half, spread insides with cream cheese and place about a rounded teaspoon of strawberry jam on top, place tops on croissants in sandwich fashion and arrange them in baking dish.
  • Beat eggs, add sugar, mil, vanilla, nutmeg and cinnamon, beat till well combined, pour mixture over croissants, use a plate to hold the croissants down and keep them from rising to the top, to allow them to soak in the milk and egg mixture, allow to set for about 5 minutes.
  • Bake in a 350 F oven for about 30 to 35 minutes. They will fluff up and the casserole will have a custardy french toast consistency.
  • Serve with your favorite Syrup and Breakfast meat.

4 slices Texas toast thick bread or 4 slices thick sliced French bread
5 eggs
1 cup milk
3/4 cup sugar or 3/4 cup Splenda sugar substitute, divided
2 teaspoons vanilla
8 ounces cream cheese, softened
1/2 pint fresh blackberries
1/4 cup blackberry jam

Steps:

  • Preheat oven to 300. place bread in oven until crusty and kind of hard. Remove bread from oven. Raise oven temperature to 375.
  • In medium or large bowl, beat eggs with milk, 1/4c sugar (or splenda), and 1 t vanilla.
  • Tear each slice of bread into about 5 or 6 pieces and stir into egg mixture. Let sit.
  • In small bowl, combine cream cheese and 1/2 c sugar (or splenda). Set aside.
  • In another bowl, combine fresh blackberries and blackberry jam.
  • Spray bottom of a loaf pan with non-stick cooking spray.
  • Spoon half of bread/egg mixture into bottom of pan.
  • Put blackberry mixture on top of bread mixture in pan, by spoonfuls. Do the same with the cream cheese mixture.
  • Spoon remaining bread/egg mixture over berries and cream cheese.
  • Bake at 375 for 35-40 minutes, until fluffy and golden brown.
  • Serve with powdered sugar and syrup, if desired.
