BRUSCHETTA
This easy bruschetta recipe from Food Network's Ree Drummond makes a great appetizer or tasty first course for a larger meal.

Steps:
- In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
- Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
- Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
- To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.
BRUSCHETTA
This easy bruschetta recipe is a go-to summer appetizer that will leave everyone satisfied and coming back for more. Perfect for summer parties, weeknight dinners, or even weekend brunch!

- For tomato mixture: Heat olive oil in a small skillet or saucepan over medium-low heat. Add garlic and saute until just starting to turn golden (don't brown it), about 1 minute.
- Pour into a large mixing bowl. Let cool while you chop the tomatoes and basil.
- Pour tomatoes into bowl with cooled oil mixture. Add parmesan, basil, balsamic vinegar, salt and pepper. Toss mixture well. Serve right away over toasted bread (spoon some of the juices along with it). Garnish with more parmesan if desired.
- To toast bread*: position oven rack a few inches below broil and preheat broiler. Align bread slices on an 18 by 13-inch baking sheet. Broil first side until golden brown, about 1 minute (don't walk away and keep and eye on them they'll brown quickly), then flip slices to opposite side and broil opposite side until golden brown.

BRUSCHETTA

- Preheat the oven to 425 degrees. Slice the baguette at an angle 1/2-inch-thick. Brush both sides of the bread with olive oil and sprinkle one side with salt and pepper. Bake for 10 minutes, until lightly toasted.
FRENCH TOAST BRUSCHETTA
I had some delicious sourdough on hand, and ripe cherry tomatoes- and that's what inspired this recipe! A delicious sensory-stimulating twist on classic french toast and summer-time bruchetta.

- Prepare bruchetta: dice the tomatoes, shred the basil, dice one scallion, and mince garlic, then add in oil and vinegar, then combine and pinch a bit of rosemary on top.
- Slice the bread, each slice about 1/2-1 inches.
- Heat skillet at medium-low settingand butter it, allowing butter to melt, and whip the eggs. Once aggs are uniform in color, allow bread to soak, 1 or 2 pieces at a time.
- Soak no more than 20 seconds for both sides, then place 1 or two slices of bread in pan. When underside of bread looks cooked, flip the bread. sprinkle mozzarella on top, and add lid. Remove the slices when it looks cooked all the way through and cheese is melted, anywhere between 1-3 minutes.
- Top with heavy amounts of Bruchetta, serve & enjoy!

EASY COLD APPETIZER BRUSCHETTA
A great "make ahead" recipe that is packed full of traditional bruschetta flavor. A perfect appetizer or cocktail party tapas. The perfect companion to a before dinner glass of red wine.

- Preheat broiler on low. On a non-stick cookie sheet, arrange 25 slices of cocktail sourdough bread squares and brush one side lightly with extra virgin olive oil. Toast under broiler for approximately 3 minutes each side or until toasted lightly. Transfer toasts to serving plate.
- In a medium bowl, gently toss together the tomatoes, onions, garlic, capers and olives. In a separate bowl whisk together 3 tablespoons of the olive oil, the 3 tablespoons of balsamic vinegar and the oregano.
- May refridgerate two mixtures until ready to serve. When ready to serve, pour oil/vinegar mixture over tomato mixture and toss together gently. Season to taste with salt and freshly ground pepper.
- Serve cold in a bowl alongside the cocktail toasts and a small bowl of freshly grated parmesan cheese for topping.

BEST EVER BRUSCHETTA
I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.
