Number Of Ingredients 15

3 large eggs
Assorted food coloring
BREAD:
2/3 cup warm 2% milk (70° to 80°)
2 large eggs, room temperature
2 tablespoons butter, melted
2 tablespoons sugar
1-1/2 teaspoons salt
3 cups bread flour
1 package (1/4 ounce) quick-rise yeast
1 tablespoon canola oil
EGG WASH:
1 large egg
1 tablespoon water
1 tablespoon sesame seeds or poppy seeds

Steps:

  • Place 3 eggs in a single layer in a small saucepan; add enough cold water to cover by 1 in. Cover and quickly bring to a boil. Remove from heat. Let stand 15 minutes., Rinse eggs in cold water and place in ice water until completely cooled. Drain; dye hard-boiled eggs with food coloring, following package directions. Let stand until completely dry., In bread machine pan, place the first 7 bread ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons additional milk or flour if needed., When cycle is completed, turn dough onto a lightly floured surface. Punch down dough; divide into thirds. Roll each into a 15-in. rope. Place ropes on a greased baking sheet and braid. Shape into a ring. Pinch ends to seal. Lightly coat dyed eggs with oil; arrange on braid, tucking them carefully between ropes. For egg wash, whisk egg with water. Brush over dough; sprinkle with sesame seeds., Cover with a kitchen towel; let rise in a warm place until almost doubled, about 30 minutes. Preheat oven to 350°., Bake until golden brown, 30-35 minutes. Remove from pan to a wire rack to cool. Refrigerate leftovers.

Grandma Rose was from Calabria Italy. We always had this at Easter time. Great for toast and really good for French Toast. Just eat with a dab fresh butter and a cup of coffee. If you braid it, you can put sugar cubes on top that will burst in the oven in those areas, That is how the Italian bakeries do the tops. Ours is plain....

1 quart whole milk, scalded and room temp
12 large eggs
2 oranges, juice and zest of
2 lemons, juice and zest of
4 cups granulated sugar
2 cups room temp. butter
3/4 tablespoon salt
1/4 lb fresh bakery yeast
flour, enough to make a soft but not sticky dough

Steps:

  • Scald whole milk and let cool, add in the yeast.
  • Beat eggs, and juice, and zest.
  • Beat sugar and butter until fluffy continue to beat well.
  • Add the beaten egg mixture into the beaten sugar butter mixture.
  • Combine with the cooled scaled milk , and yeast mixture.
  • Combine well, add sifted flour, continue adding flour until a soft dough comes together.
  • Turn out onto a table and knead until soft, not too sticky, 5- 10 minutes.
  • Let double in a greased bowl, covered.
  • Punch down and let rise again.
  • Form into braids after second rising, or put into loaf pans.
  • Let rise until almost doubled Bake 350 degrees, until golden, 20 minutes approximately.
  • Note; the amount of flour can be anything from 8- 12 cups, or more. but add gradually until you have a soft slightly sticky dough -- where when touched your finger comes away tacky but not sticking to the bread board.Keep your dough soft not firm --.
  • All depends on flour and humidity and how much juice from your oranges and lemons.
  • Can braid and place under braiding but showing raw eggs white or already coloured, eggs will cook while baking, for an Easter morning delight.
  • Directions on making the dough, can vary, as I have done the procedure in different ways, and now we can't get fresh compressed yeast in our stores, so I use active dry yeast, usually 2 tablespoons.

2 1/2 cup warm water
1/4 cup sugar
1 1/4 teaspoon salt
1 Tablespoon yeast
5 cups all purpose flour
2 Tablespoons oil (I used olive oil)

Steps:

  • In a stand mixer add the warm water, sugar, salt and yeast. Let the yeast proof until it bubbles for about 5 minutes. Using the dough hook start adding the flour one cup at a time until the dough combines and forms a soft dough.
  • On a floured surface knead the dough until smooth and elastic and form a ball. Add the oil to the large bowl and add the dough to the bowl and cover. Let rise until it has doubled 1- 1 1/2 hours.
  • Grease and flour 2 9x5 inch pans. Punch the dough to release the air. Lay the dough onto a flat surface and cut into two loaves. Roll each loaf up and place into the loaf pans. Let rise until it doubles another 1-1 1/2 hours.
  • Bake in a preheated 350 degree oven for 30-35 minutes or until golden brown on the tops. Remove from the oven and let cool for 10 minutes before slicing.

3 cups warm water
3 tablespoons active dry yeast
3 teaspoons salt
4 tablespoons vegetable oil
½ cup white sugar
8 cups bread flour

Steps:

  • In a large bowl, combine warm water, yeast, salt, oil, sugar, and 4 cups flour. Mix thoroughly, and let sponge rise until doubled in size.
  • Gradually add about 4 cups flour, kneading until smooth. Place dough in a greased bowl, and turn several times to coat. Cover with a damp cloth. Allow to rise until doubled.
  • Punch down the dough, let it rest a few minutes. Divide dough into three equal parts. Shape into loaves, and place in three 8 1/2 x 4 1/2 inch greased bread pans. Let rise until almost doubled.
  • Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes. The loaves may need to be covered for the last few minutes with foil to prevent excess browning.

A delicious old-fashioned white bread recipe just like Grandma used to make!

Number Of Ingredients 5

1 package dry yeast (about 2 1/4 teaspoons)
1 cup warm water (about 30-40 seconds in the microwave is perfect)
3 cups bread flour (if you can't find this go ahead and use all-purpose)
1 teaspoon salt
1 tsp honey

Steps:

  • In a large bowl, mix the honey and warm water together, add the yeast and stir until dissolved.
  • Add 2 1/2 cups of the flour and the salt to the yeast mixture.
  • Stir until you get a ball of dough. The dough will be soft.
  • ---all of these parts are super handy to do if you have a mixer!
  • Put the dough on a floured surface. Knead until smooth and stretchy (about 9 minutes) adding in the remaining flour as needed to keep the dough from becoming too sticky.
  • ---if you have a mixer with a dough hook...use it here!
  • Place the dough in a bowl sprayed with cooking spray or coated with oil.
  • Put the bowl in a warm place and cover with a towel (or use my warm water in bowl method above :)) or plastic wrap sprayed with cooking spray.
  • Let the dough rise until doubled in size. (about 45 minutes)
  • Punch your down and then cover and wait 5 minutes.
  • Gently shape the dough into a loaf.
  • Place in loaf pan coated with spray, butter, shortening.
  • Cover (again with a towel or sprayed plastic wrap) and let rise until doubled again (about 45 minutes)
  • Preheat oven to 450 degrees F (230 degrees C)
  • Bake at 450 degrees for about 20 minutes.
  • if you like...apply a egg or milk wash before baking.

This is my Grandma's no-knead white bread recipe and it's the only one that I will use for white bread. It's really easy to make and you don't have to knead it on the table. I also make my dinner rolls and even my cinnamon rolls from this recipe as well.

IN A SMALL BOWL ADD (PROOFING THE YEAST) :
1 c very warm water (hot tap water to the touch , not scalding hot)
1 Tbsp sugar
1 pkg active dry yeast - 2 1/4 teaspoons
IN A LARGER BOWL ADD :
2 c very warm water (hot tap water to the touch , not scalding hot)
3 Tbsp melted butter or oil
1 - 1 1/2 tsp salt
6-7 c all purpose flour , * divided

Steps:

  • 1. NOTE VERY IMPORTANT: Warm water is hot tap water to the touch but not scalding hot.
  • 2. In a small bowl add the cup of warm water ( hot tap water but NOT scalding to the touch) , the tablespoon of the sugar and the dry yeast...let sit until all foamy on top. This is proofing your yeast to make sure your yeast is active and has not gone bad.
  • 3. In a large bowl : put 2 cups warm water , 3 Tbs. melted Margarine or Oil , and 1 teas. Salt . * Add enough of the flour to make a soft sponge . Add the yeast mixture and beat well.
  • 4. Cover the bowl and let raise in a warm place , until it is all foamy ; then beat in the * flour until it's a soft ball and it's easy to knead with your hands.
  • 5. Put in a greased bowl to let raise , Cover with a moist kitchen towel. Let it rise to double of it's beginning size , punch down once .
  • 6. Mix into rolls , buns , or for bread . Bake in a pre-heated oven @ 375°.
  • 7. For bread : Separate dough evenly and Place in 2 greased bread pans , cover with moist towel and let rise. Bake for 25 - 35 minutes or until golden brown .
  • 8. For Cinnamon rolls : Just add : 2 eggs and 1/2 - 1 cup more sugar to the dough. Roll out the dough to a rectangular shape and spread with butter , sprinkle with sugar and cinnamon . Add raisins if desired too . Roll up and cut into 1-1/2" cinnamon rolls . Place on a greased cookie sheets and let raise , Then bake . When the cinnamon rolls are cool top with a white glaze icing made from : Confectioners sugar , Butter , Vanilla and Milk ; Mix thoroughly until smooth.

1 package (1/4 ounce) active dry yeast
1/3 cup warm water (110° to 115°)
1/2 cup sugar, divided
1 cup whole milk
1/2 cup butter, cubed
1 tablespoon salt
1 cup mashed potatoes
2 large eggs, room temperature, beaten
5 to 6 cups all-purpose flour
1/4 cup butter, melted
3/4 cup sugar
1 tablespoon ground cinnamon

Steps:

  • In a large bowl, combine yeast, warm water and 1 teaspoon sugar. In a saucepan, heat milk, butter, salt and remaining sugar until butter is melted. Remove from heat; stir in potatoes until smooth. Cool to lukewarm; add eggs and mix well., Beat potato mixture and 5 cups flour into yeast mixture until smooth. Stir in enough remaining flour to make a soft dough. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch down dough and divide in half. On a lightly floured surface, roll each half into a 16x8-in. rectangle. Brush with melted butter. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in 2 greased 8x4-in. loaf pans. Cover and let rise in a warm place until doubled, about 45 minutes. Preheat oven to 375°. Bake loaves until golden brown, about 20 minutes. Cover loosely with foil if tops brown too quickly. Remove from pans to wire racks; serve warm.

2 cups water
1/3 cup oil
2 tablespoons honey, melted
2 tablespoons yeast
2 1/2 teaspoons salt
1 cup white flour
5 1/2 cups whole wheat flour

Steps:

  • In a mixer bowl add water, oil, honey, yeast, salt and white flour mix together.
  • Add 3 cups of whole wheat flour and blend together.
  • Add remaining flour in small amounts to get a firm but elastic texture (more flour may be added if needed).
  • Knead on high speed for 10 minutes. Dough should be firm but elastic.
  • Form into 2 loaves and place in well greased loaf pans. Let rise until doubled in size. (Could be covered with a damp kitchen dish towel) about 1/2 hour to 45 minutes. (if you press on the dough at the corner of the pan it should dimple (or leave an indentation) when ready).
  • Bake at 350'F for 30-45 minutes or until bread sounds hollow when lightly tapped (if necessary, cover loosely with foil the last 5-10 minutes of baking to prevent over browning) Immediately remove bread from pans. Cool Completely on wire racks.

2 c water, warm ( 110 to 115 degrees)
1/2 c sugar
1 Tbsp salt
2 eggs, beaten
1/4 c vegetable oil

  • 1. In a large bowl, dissolve yeast in warm water. Add sugar, salt, eggs, oil, and 3 cups of flour, beat until smooth. Stir in enough remaining flour,( I use about 6 1/2 cups) to form a soft dough.

  • Shortening. Grandma perhaps added shortening to her bread dough to give it a light and chewy consistency, and it saved her time because she didn’t have to knead the dough.
