My absolute favorite chicken dish. I have put together bits and pieces of other chicken French recipes and this is the result. Almost failproof, comes out good every time.

1 lb boneless skinless chicken breast
2 eggs
1/4 cup parmesan cheese
1 tablespoon fresh parsley, chopped fine
salt and pepper
1/2 cup flour
1/4 cup olive oil
2 tablespoons butter
1 -2 minced garlic clove
1 cup chicken broth
1/2 cup white wine
1/4 cup lemon juice

Steps:

  • Mix together eggs, cheese and parsley.
  • Between two sheets of plastic wrap, pound chicken thin.
  • Lightly salt and pepper chicken.
  • Dredge chicken in flour, then dip in beaten egg mixture.
  • Fry in olive oil until brown on both sides.
  • Remove chicken to platter.
  • In same skillet, saute garlic lightly, then add wine and bring to boil.
  • Add broth and lemon juice.
  • Lastly, stir in butter.
  • Add chicken back to pan and bring to boil.
  • Simmer for about 3 minutes.

4 skinless, boneless, chicken breasts (about 11/2 pounds)
All-purpose flour, for dredging
Kosher salt and freshly ground black pepper
4 large eggs
3 tablespoons water
1/4 cup extra-virgin olive oil
1/2 lemon, with rind, cut in thin rounds
1/2 cup dry white wine, such as Pinot Grigio
1 cup chicken broth
1/2 lemon, juiced
2 tablespoons unsalted butter
1/4 cup chopped flat-leaf parsley

Steps:

  • Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them. Pound the chicken breasts with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, beat the eggs with 3 tablespoons of water to make an egg wash. Heat the oil over medium-high flame in a large skillet.
  • Dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off. When the oil is nice and hot, add the cutlets and fry for 2 minutes on each side until golden, turning once. Remove the chicken cutlets to a large platter in a single layer to keep warm.
  • Toss the lemon slices into the pan and cook for 1 to 2 minutes, until fragrant. Add the wine, broth, and lemon juice, simmer for 5 minutes to reduce the sauce slightly. Roll the butter in some flour and add it to the skillet, this will thicken the sauce. Stir to incorporate and dissolve the flour. Reduce the heat to medium-low and return the chicken to the pan; place the lemon slices on top of the cutlets. Simmer gently for 2 minutes to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

salt & pepper
2 eggs
2 teaspoons grated parmesan cheese
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons vegetable oil
1 cup sherry wine or 1 cup white wine, of your choice
4 tablespoons lemon juice
1 chicken bouillon cube
1/2 cup water

Steps:

  • Beat eggs and cheese together, set aside.
  • Coat chicken in seasoned flour, then dip in egg mixture.
  • Heat oil in large skillet. Brown chicken slowly in oil on both sides, remove to paper toweling.
  • Add wine to pan juices, heat for about 3 minutes gently scraping up brown bits from bottom of pan.
  • Add lemon juice, boullion and water. Bring to boiling.
  • Add chicken pieces back to pan. Lower heat and simmer until sauce thickens slightly, about 4-5 minutes.

¼ cup all-purpose flour, or as needed
salt and black pepper to taste
2 eggs, beaten
1 tablespoon white sugar
1 tablespoon grated Parmesan cheese
2 tablespoons olive oil
4 skinless, boneless chicken breast halves
¼ cup butter
2 teaspoons minced garlic
¼ cup dry sherry
¼ cup lemon juice
2 teaspoons low-sodium chicken base

Steps:

  • Mix together the flour, salt, and pepper in a shallow bowl. In another bowl, whisk beaten eggs, sugar, and Parmesan cheese until the mixture is thoroughly blended and the sugar has dissolved.
  • Heat olive oil in a large skillet over medium heat until the oil shimmers. Dip the chicken breasts into the flour mixture, then into the egg mixture, and gently lay them into the skillet. Pan-fry the chicken breasts until golden brown and no longer pink in the middle, about 6 minutes on each side. Remove from the skillet and set aside.
  • In the same skillet over medium-low heat, melt the butter, and stir in garlic, sherry, lemon juice, and chicken base. Bring the sauce to a simmer, and stir until smooth and slightly thickened, about 5 minutes. Be sure to dissolve any brown flavor bits from the bottom of the skillet as you stir. ½ cup all-purpose flour
4 eggs, beaten
1 pound skinless, boneless chicken breast halves
½ cup white wine
2 cups chicken broth
1 teaspoon chopped fresh parsley
salt and pepper to taste
¼ cup butter
2 lemons, juiced
1 teaspoon cornstarch

Steps:

  • Coat chicken with flour, then egg beat, then saute in a large skillet until almost cooked through. Drain on paper toweling.
  • Preheat oven to 300 degrees F (150 degrees C).
  • In a medium saucepan combine the wine, broth, parsley, salt and pepper to taste, butter or margarine and lemon juice over medium low heat. Stir together while heating slowly. When butter or margarine has melted, slowly stir in cornstarch until sauce thickens slightly. Place chicken in a 9x13 inch baking dish and pour sauce over all.
  • Bake at 300 degrees F (150 degrees C) for about 10 to 15 minutes, or until chicken is cooked through and juices run clear.

I got this recipe from an old cookbook so many years ago I have forgotten which one. It is a wonderfully simple and elegant dish I have served many many times to company. Great with a rice dish and broccoli or green beans.

4 -6 boneless skinless chicken breasts
4 -6 slices deli ham, thin
4 -6 slices swiss cheese, thin
salt
pepper
garlic
2 cans cream of mushroom soup
1 cup white wine
butter or oil (for frying)

Steps:

  • Pound chicken to flatten to about 1/4 inch thick.
  • Season with salt, pepper and garlic to taste.
  • Place a slice of ham and a slice of cheese on each.
  • Roll up as you would a jelly roll and secure with toothpicks or poultry string.
  • Brown chicken on all sides in oil or butter and place in casserole dish.
  • Mix white wine and mushroom soup and pour over chicken.
  • Bake at 350 degrees for 35-45 minutes or until done.
