- Heat a large skillet over medium-high heat for 3 minutes. Add the oil and heat another minute.
- Scatter the beans evenly in the pan and sprinkle with the salt (see Cook's Note). Allow the beans to cook undisturbed until browned, blistered and beginning to split on the first side, about 3 minutes. Using tongs or a slotted spatula, flip the beans and continue to cook another 2 minutes. Flip one more time and cook until all the beans have a good amount of golden brown, an additional minute. Remove to a paper towel-lined plate to drain. Serve with your favorite dip or simply with a squeeze of lemon.

- Heat the oil in a large skillet over medium-low heat. Add the shallots and cook, stirring frequently, until soft and translucent, about 8 minutes. Do not brown.
- Add the beans, salt, pepper and water; bring to a boil. Cover the skillet, reduce the heat to low, and cook for 8 minutes.
- Remove the lid and increase the heat to high. Cook, stirring frequently, until the liquid is evaporated, the beans are tender, and the shallots are jammy, about 6 minutes. Taste and adjust the seasoning with salt, pepper, and a pinch of sugar. Serve warm.

- Preheat the oven to 400 degrees F. Line a sheet tray with parchment paper.
- Set up a dredging station: Place the flour in a medium bowl. Whisk together the milk and eggs in a second medium bowl. Stir together the onion pieces, panko, salt and pepper in a third medium bowl.
- Dip the green beans first into the flour to coat, shaking off any excess flour, then dip the beans in the egg mixture to coat. Finally, dip the beans into the panko-onion mixture and place the green beans on the prepared sheet tray, about 1/4-inch apart.
- Bake the green beans, turning them over halfway through baking, until they are golden and crispy, 12 to 15 minutes. Transfer to a platter and serve immediately.
FRENCH CUT GREEN BEANS WITH ALMONDS AND FRIED ONIONS

- Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.
- Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.
- Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

- Bring a pot of water to a boil; cook beans in boiling water until bright green, about 2 minutes. Immediately transfer green beans to a bowl of ice water to stop the cooking process. Drain and dry beans with paper towels.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).

- In a stainless steel pot over medium-high heat, combine green beans, garlic powder, onion powder, salt and pepper. Cook, covered, until the beans begin to sweat. Remove lid and stir occasionally until beans are tender.
- When the beans and spices have begun to 'burn' on the bottom of the pan, which will lend a grilled flavor, stir in the olive oil and turn off heat. Cover, and let stand a few minutes. - Heat the oil in a deep fryer or electric skillet to 375 degrees F (190 degrees C).
- Combine the green beans and water in a saucepan. Cover and bring to a boil. Cook until the beans are bright green, about 4 minutes. Drain and transfer to a bowl. Cover with cold water and set aside.

- Preheat oven to 250 degrees. Heat oil in deep fryer to 375 degrees. You could use a heavy pot on the stove top with about 2 inches of oil in it. You want the beans to float and not be crowded.
- Wash the greenbeans and dry them well. Snip the ends but leave them full length.
- Prepare pancake mix per instructions on the box. You will need about 3 cups of the mixture.
- Dip the greenbeans in the batter mixture and put them in the hot oil. Put them in one at a time so they don't "glue" together but you can do quite a few at a time. Cook them until they are golden brown.
- Remove cooked beans from oil and drain on paper towels. While they are still hot sprinkle them with the parmesan cheese.
- Place the beans on a cookie sheet in the preheated oven while you cook the remaining beans. Try not to leave them in the oven for too long as the batter will start to get soft. Usually mine don't make it to the oven because they get eaten before they get that far.

T.G.I. Friday's doesn't exactly specialize in health food: The mega-chain is famous for bar food like loaded potato skins and Jack Daniel's-glazed chicken wings. So, it's no surprise that when the restaurant added veggies to the appetizer list, they were deep-fried. The dish, Crispy Green Bean Fries, hit the menu in 2006, and customers went crazy. The beans are coated in a garlicky breading, fried and served with cucumber-wasabi ranch dip. They're a top-seller these days, and fans like Karlyn Siegwarth from Pittsburgh have been begging us for the recipe. Reps in Carrollton, TX, wouldn't give it up, so our chefs created this perfect copy.

- Make the dip: Puree the dressing, cucumber, horseradish, milk, vinegar, wasabi powder, cayenne pepper, and salt to taste in a blender until smooth. Cover and refrigerate until ready to serve.
- Prepare the beans: Fill a large bowl with ice water. Bring the broth to a boil in a saucepan over high heat. Add the green beans and cook until tender, about 5 minutes. Remove the beans with a slotted spoon and transfer to the ice water to stop the cooking. Let cool in the water, then drain and pat dry.
- Whisk the egg and milk in a shallow bowl. Put 1/2 cup flour in another shallow bowl. Combine the breadcrumbs, the remaining 1/2 cup flour, the onion powder, garlic powder, cayenne, and salt and pepper to taste in another bowl.
- Line a baking sheet with parchment paper. Toss the green beans in the flour and shake off the excess. One at a time, dip the beans in the egg mixture, dredge in the breadcrumb mixture and lay on the prepared baking sheet. Freeze until the coating is set, about 30 minutes.
- Heat 3 inches oil in a deep pot over medium heat until a deep-fry thermometer registers 350 degrees F. Fry the green beans in batches until golden brown, 1 to 2 minutes. Transfer the beans with tongs or a skimmer to a rack or paper towels to drain. Serve with the dip.
