French Dip Brisket

Steps:
- Place a large skillet over medium heat with 1 turn of the pan of EVOO, about 1 tablespoon
- Add the bacon to the pan and cook until golden brown, about 5 minutes
- Remove the bacon from the pan with a slotted spoon and reserve on a paper towel-lined plate to drain
- Return the skillet to medium-high heat with the bacon fat
- Season both sides of the brisket with salt and pepper, and sear on all sides until golden brown, 3-4 minutes per side
- While the meat is searing, add the reserved bacon, onion, garlic, bay leaf, mushrooms, beef stock or broth, thyme, Worcestershire sauce and honey to the crock of a slow cooker
- Season with salt and pepper, and stir to combine
- Add the seared meat to the pot and cover
- Cook on high for 5 hours or low for 7-8 hours until the meat is tender
- Thinly slice the brisket
- To serve, dunk bread into sauce, and top with brisket, Swiss cheese, cooked veggies, more juice, and parsley

- For the prime rib: Preheat the oven to 350 degrees F.
- Place rib eye fat-side down in a roasting pan. Pour half of Worcestershire over the top, then sprinkle on half of the steak seasoning. Flip and cover with remaining Worcestershire and seasoning.
- Roast for 2 hours. Let cool completely, then slice thinly on a meat slicer.
- For the au jus: Place red wine in a saucepan over medium-high heat. Reduce by half. Add beef base and dissolve thoroughly. Add onion, garlic, thyme and 6 cups water and simmer until vegetables are soft. Strain.
- For the French dip: Split and toast hoagie rolls. Heat au jus until hot, then add prime rib to heat thoroughly.
- Whisk together horseradish and sour cream in a bowl. Spread on hoagie rolls. Layer Swiss cheese in hoagies, then add caramelized onions and top with hot prime rib.
- Plate sandwiches with fries and cups of warm au jus for dipping.

- Place brisket in a 3-1/2 quart crockpot. Mix the canned broth and onion soup mix together and pour over the brisket. Cover and cook on LO heat for 8-10 hours.
- Remove beef and cut across the grain into thin slices.
- Cut the baguettes in half and fill with brisket slices. Replace baguette cover. Serve with broth for dipping.

- Add oil to a large skillet and heat over medium heat. Cut any large hunks of fat off the brisket then season it generously with salt and pepper on all sides. Add the brisket to the hot oil and cook until browned on all sides, 2-4 minutes per side. Place the onion, carrots and potatoes in the bottom of the crockpot followed by the brisket. Sprinkle with garlic cloves, rosemary, and bay leaves. Add the broth and wine then fill with enough water to cover all of the beef and vegetables. Cook on low for 8 hours, then high for an additional hour.** Remove the bay leaves before serving. For the Sandwiches: Remove the brisket from the crockpot and shred it. Butter both sides of the buns then place them under the broiler on low for 2 minutes or until browned and toasted. Pile the bottom half of the buns with the briskets and a few onions followed by 1-2 slices Swiss cheese. Place that half of the sandwich back under the broiler for another 2 minutes or until the cheese is melted. Top with the other half of the sandwich bun. Use the remaining broth from the crockpot as the "dip" for the sandwiches. Dunk and enjoy!

FRENCH DIP ROAST BEEF FOR THE CROCK POT
This is one of the best recipes I've come up with for beef roast. The cheapest cuts come out tasting like you slaved over a stove all day long. You can add potatoes and carrots to the recipe if you like, or shred it and serve it as a French Dip sandwich with the au jus juice from the crock pot on the side. If you are watching your sodium, use the lite soy sauce and it will taste just as delicious.

- Combine soy sauce and next 6 ingredients.
- Pour over roast.
- Add water to slow cooker until roast is almost covered.
- Cook, covered, on LOW for 7 hours or until very tender.

- You may shred roast with a fork and serve on sandwich rolls with the broth on the side for dipping.
