FRENCH GRATED CARROT SALAD WITH LEMON DIJON VINAIGRETTE
This grated carrot salad with lemon dijon vinaigrette is standard fare in French bistros and markets.

Steps:
- Shred the carrots in a food processor. Set aside.
- In a salad bowl, combine the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, fresh parsley and scallions (or shallots) and toss well. Taste and adjust seasoning if necessary. Cover and refrigerate until ready to serve.
- Notes: Depending on the sweetness of the carrots, you may want to add more or less honey. Also, if you make this salad ahead of time, be sure to check the seasoning again before serving as the flavors tend to mellow.

- Preheat the oven to 400°F. Line a baking sheet with a piece of parchment paper. Cut the asparagus into 1 1/2" long pieces. Spread the asparagus out onto the prepared baking sheet. Drizzle olive oil over the asparagus along with a sprinkle of sea salt. Roast for 4 to 5 minutes, until the asparagus is tender but still has a bite. Allow the asparagus to cool before using.
- Toss the arugula with the asparagus in a large bowl; temporarily set aside.
- Whisk all of the vinaigrette ingredients together in a small measuring cup.
- Toss the salad with the vinaigrette until everything is lightly coated in the dressing. Then garnish the salad with the sliced beets, toasted nuts, and crumbled goat cheese.

- For the Asparagus 1.Trim tough ends from asparagus. Preheat oven to 400°F. Cut the asparagus into 2-inch long pieces. 2.Toss asparagus with 1 Tablespoon olive oil. Spread the asparagus out onto the prepared baking sheet. Sprinkle lightly with sea salt. 3.Roast for 4 to 5 minutes, until the asparagus is tender but still has a bite. Cool asparagus and set aside.
- To Roast BeetsWash beets. Wrap individually in foil. Place in 375 degree oven for 45 minutes. Cool slightly, then rub skin off cooked beats with a paper towel. Slice beets, then dice and chill until ready to serve. To Sugar Pecans Heat a frying pan to medium high heat. Add pecans and 2 Tablespoons sugar and stir until sugar melts. Pour pecans out on to foil, lightly sprayed with PAM oil spray. Let cool.
- For Whole Lemon & Thyme Vinaigrette Wash lemon; slice it; then mince in tiny pieces with a sharp knife. Mix lemon with other ingredients in jar with tight fitting lid. Shake until all ingredients are well blended. Pour over salad and toss until all pieces are coated. Dressing is best the next day. To AssembleToss greens and asparagus with vinaigrette until everything is lightly coated in dressing. Garnish salad with beets, goat cheese and pecans.
