These inconspicuous-looking chicken nuggets have a hidden layer of tasty red curry. Served with a sweet and sour dipping sauce, they are fusion food magic!

2 pounds chicken tenders
4 tablespoons thai red curry paste
1 can coconut milk
2 cups Progresso™ panko bread crumbs
Oil for frying
1/4 cup agave nectar
1/4 cup lime juice
1 tablespoon rice vinegar
1 tablespoon sriracha
1 teaspoon fish sauce
1 tablespoon chile flake (or less to taste)
Pinch salt

Steps:

  • Mix the coconut milk with the curry paste. Add a teaspoon of salt. Cut the tenders the short way so you end up with about 30 nugget-sized pieces. Mix the chicken into the curry mixture. Allow to marinate in the fridge for 1 hour.
  • Meanwhile, mix all the dip ingredients.
  • When the chicken is about ready, get the breadcrumbs onto a flat dish, and bring the frying oil to 350°F.
  • One by one, shake some of the marinade off each piece of chicken and dredge it in the breadcrumbs, pressing to make sure the breading sticks on. After you do about 5, fry them as you start breading the next batch. Fry only about 4-5 minutes until well browned and cooked through.
  • Serve with the dipping sauce.

1/2 cup mango chutney, divided
1 teaspoon curry paste, divided
1/2 teaspoon cumin, divided
2 (6 ounce) boneless skinless chicken breasts, each cut into eight pieces
1/2 cup flaked coconut

Steps:

  • Preheat oven to 425 degrees F, spray baking sheet with nonstick spray.
  • Combine 1/4 cup of chutney, 1/2 tsp curry paste, 1/4 tsp cumin in a serving bowl; cover and refrigerate.
  • Combine chicken, the remaining chutney, curry, and cumin in a bowl and toss to coat.
  • Put the coconut on a sheet of wax paper, coat the chicken one piece at a time with the coconut.
  • Place nuggets on baking sheet, and bake until cooked through, about 15 minutes.
  • Serve with chutney sauce.

1 Tbsp. curry powder, divided
1/2 tsp. ground red pepper (cayenne), divided
6 small boneless skinless chicken breasts (1-1/2 lb.), each cut into 4 chunks
2 eggs
2 Tbsp. water
1 cup BAKER'S ANGEL FLAKE Coconut
1/4 cup butter, melted
1/2 cup MIRACLE WHIP Dressing
1/4 cup peach preserves

Steps:

  • Heat oven to 400°F.
  • Mix flour, 2 tsp. curry powder and 1/4 tsp. pepper in shallow pan. Add chicken; toss to coat well, shaking off any excess. Beat eggs and water in medium bowl with whisk until blended. Dip coated chicken into egg mixture, then in coconut, turning to evenly coat each piece before placing in shallow pan sprayed with cooking spray. Drizzle with butter.
  • Bake 10 min. on each side or until coconut is golden brown and chicken is done.
  • Mix dressing, preserves, remaining curry powder and remaining pepper. Serve chicken with dressing mixture for dipping.

3 cups whole grain cereal (Corn Flakes or brown rice cereal recommended)
1/4 cup shredded sweetened coconut
1 pound boneless, skinless chicken breast, cut into strips
Nonstick cooking spray

Steps:

  • Preheat oven to 400-degrees F. Coat a baking sheet with nonstick spray and set aside. Place egg whites in a bowl and beat until frothy. Place cereal and coconut in a resealable plastic bag; season with salt and pepper and crush well. Dredge chicken strips in egg white and place a couple at a time into the bag to coat with coconut mixture. Transfer to baking sheet. Bake for 6 to 7 minutes per side, until chicken is cooked through.

2 medium potatoes, peeled and cubed
1 small onion, chopped
4 boneless skinless chicken breast halves (4 ounces each)
1 cup light coconut milk
4 teaspoons curry powder
1 garlic clove, minced
1 teaspoon reduced-sodium chicken bouillon granules

1/4 teaspoon pepper
2 cups hot cooked rice

Steps:

  • Place potatoes and onion in a 3- or 4-qt. slow cooker. In a large nonstick skillet coated with cooking spray, brown chicken on both sides. , Transfer to slow cooker. 1/2 cup beer
5 ounces cake flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

2 cups grated coconut
1 cup all-purpose flour (more if needed for coating the chicken)

Steps:

  • Heat the oil to 350 degrees, in a heavy pot, or deep fryer.
  • In a bowl, combine the egg, buttermilk and the beer; mix well.
  • In another bowl, combine the flour, baking powder, baking soda and the salt; add to the buttermilk/egg mixture, mix well (batter should have the consistency of a thin pancake batter).
  • Dredge the chicken pieces into the all-purpose flour.
  • Then dip into the buttermilk mixture to coat.

Curry powder is stirred into this braise only during the last minute of cooking, delivering a bright hit of spice on top of the paprika and turmeric mellowed into the slow-simmered chicken. This dish from "Burma Superstar" by Desmond Tan and Kate Leahy (Ten Speed Press, 2017), needs time on the stove but not much attention, and gets even better after resting in the fridge, making it an ideal weeknight meal that can last days. There's plenty of coconut milk broth to spoon over rice or noodles. At his restaurant, Burma Superstar in Oakland, Calif., Mr. Tan also serves this with platha, a buttery, flaky Burmese flatbread, for dipping.

2 1/2 pounds boneless, skinless chicken thighs
1 tablespoon ground paprika
1/2 teaspoon ground turmeric
2 teaspoons kosher salt, plus more as needed
1/3 cup canola oil
2 yellow onions, finely diced
4 garlic cloves, minced
1 (13-ounce) can unsweetened coconut milk
1 1/2 tablespoons fish sauce, plus more as needed
1 teaspoon Madras curry powder
1/2 teaspoon ground cayenne
Cooked rice or noodles, for serving
1 cup cilantro sprigs, for serving
1 lime or lemon, cut into wedges, for serving

Steps:

  • Trim the chicken thighs of excess fat and cut into 1/2- to 1-inch pieces; transfer to a bowl. Add the paprika, turmeric and salt, and use your hands to mix well. Let the chicken marinate at room temperature while you prepare the other ingredients, or cover and refrigerate overnight.
  • In a large pot, heat the oil over medium-high. Stir in the onions, lower the heat to medium-low and cook gently, stirring often to prevent scorching, until tender and translucent, 8 to 10 minutes. Add the garlic and continue to cook, stirring often, until most of the water from the onions has been cooked out and a glossy layer of oil has risen to the surface, about 5 minutes more.
  • Add the marinated chicken and stir to release the spices into the onion. Pour in the coconut milk and bring to a near boil. Let the coconut milk simmer briskly for about 4 minutes to thicken a bit. Lower the heat to medium-low and add the fish sauce. Stir in 1 1/2 cups water and bring to a near boil. The broth will thin out as the chicken starts to release its juices.
  • Lower to a gentle simmer and cook, stirring occasionally, until the chicken is tender, 30 to 45 minutes. Droplets of paprika-red oil will rise to the surface. Stir in the curry powder and cayenne, simmer briefly and remove from the heat.
  • If time permits, let the curry sit for at least 20 minutes before serving. This allows the chicken to soak in more flavors as the curry cools. Bring to a simmer again right before serving and taste, adding more salt or fish sauce if desired. Serve over rice or noodles, with bowls of cilantro and lime wedges.

Vegetable oil for frying
1/2 cup cornstarch
1/4 teaspoon salt
1/8 teaspoon pepper
1 tsp cayenne pepper {optional}
3 large eggs, lightly beaten
3 - 4 cups of sweetened coconut flakes (Baker's Coconut)
3 - 4 medium boneless, skinless, chicken breasts, cut into strips or nuggets.

Steps:

  • In a medium pot, add 2 - 3 Inches of oil. Turn burner to medium and allow oil to get nice and hot. The perfect temperature should be 365*F
  • In a bowl mix cornstarch, salt, pepper & cayenne pepper. Set aside.
  • In a second bowl, add 3 eggs and lightly beat.
  • In a third bowl add coconut flakes.
  • Take chicken and douse in cornstarch mixture.
  • Then dip into eggs and cover well.
  • Then dip in coconut and set aside on a plate. Do this to all chicken.
  • Once chicken is ready, check oil. Place the end of a wooden spoon in the oil. If bubbles form around the spoon the oil is ready. If bubbles do not form around the spoon then the oil is not hot enough.
  • Once oil is hot enough, GENTLY add chicken one piece at a time to oil, ensuring chicken does not touch and stick together upon initial contact into oil.
  • Cook chicken for approximately 4 minutes then flip and allow the other side to cook.
  • Cook second side for an additional approximate 4 minutes.
  • Gently remove golden chicken and set on a paper towel lined plate.
  • Cook chicken in batches if all does not fit into pan.
  • Once all chicken is cooked, serve with your favorite sauce.
  • We enjoyed this plain, with honey, with an orange sauce and with sweet & sour sauce. Choose your favorite dipping sauce and enjoy!
