How to Freeze Sandwiches for Lunch Meal Prep - Deli Freezer Sandwiches

2 slices bread of choice
2 Tbsp spread (s & condiment(s) of choice)
2 slices deli meat of choice
1 to mato slice* (only IF you grill/panini press your sandwiches before freezing!)
2 slices cheese of choice

Steps:

  • Arrange slices of bread on work surface (as many slices as your desired number of freezer sandwiches).
  • Layer on sandwich fillings assembly-line style!
  • Start with your spreads-I used pesto on some of my sandwiches and mustard for the others, but you could also use hummus or another freezer-friendly sandwich spread.
  • Next, add a few slices of deli meat of choice on top, followed by sliced tomato*, sliced cheese, and top bread slice. (*Omit tomato if you DO NOT plan to grill/panini press your sandwiches before freezing!)
  • To grill/press sandwiches before freezing, preheat panini press. Add assembled sandwiches and grill as desired. Allow grilled sandwiches to cool before packaging and storing.
  • If you DO NOT want to grill your freezer sandwiches before freezing, package and store as-is. (You can always grill them later!)
  • Store in packaging of choice. Option #1: Store each sandwich individually in its own freezer-safe zip-top bag, reusable silicone bags, airtight storage container, or reusable beeswax wraps.
  • Option #2: Wrap individual sandwiches with plastic/foil before storing together in a large freezer-safe bag, original bread loaf bag, or airtight storage container.
  • Refrigerate for 2-3 days, or freeze for up to 2-3 months.
  • When ready to eat, thaw out freezer sandwich overnight in the fridge. Reheat in the toaster oven, toast on the stove top, grill on a panini press, or enjoy cold!

6 sausage patties
coconut oil cooking spray
6 eggs, divided
6 dashes cayenne pepper, divided
salt and ground black pepper to taste
6 whole grain English muffins, split and toasted
6 slices American processed cheese

Steps:

  • Heat a large skillet over medium heat. Cook sausage patties in the hot skillet, turning often, until sausage is cooked through and browned, 10 to 12 minutes. Remove patties to a paper-towel lined plate.
  • Meanwhile, coat a 3-inch mini frying pan with coconut oil cooking spray and place over medium heat. Whisk 1 egg and 1 dash of cayenne pepper in a small bowl and season with salt and pepper. Pour egg mixture into frying pan. Cook, without stirring, until set on the bottom, about 1 1/2 minutes. Flip egg and cook, without stirring, until set on the other side, about 1 minute more. Remove from heat, place on a plate, and repeat with remaining eggs and cayenne pepper.
  • Assemble breakfast sandwiches when eggs and sausage are cool: place an egg patty on the bottom piece of an English muffin, top with a slice of cheese, a sausage patty, and the English muffin top. Wrap in aluminum foil and freeze.
  • Unwrap and microwave each sandwich for 2 minutes when ready to eat.

2 tablespoons Miracle Whip
6 ounces tuna, drained
1/4 cup chopped green onion
1/4 cup shredded carrot
1 tablespoon lemon juice
2 tablespoons butter, softened
8 slices whole wheat bread

Steps:

  • Beat cream cheese and Miracle Whip till smooth. Stir in tuna, onion, carrot and lemon juice until well blended.
  • Spread butter thinly on each piece of bread.
  • Use 1/4 of the tuna mixture on each sandwich.
  • Freeze individually.

Years ago, there was a deli in the town I worked and everyday faithfully, I would stop there for the Tuna sandwich (which was the best ever!) I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

2 (12 ounce) cans of solid albacore tuna (in water)
1 small green bell pepper (finely diced)
1 small red bell pepper (finely diced)
1 small onion (finely diced)
1 celery (finely diced)
2 medium sized dill pickles (finely diced)
4 tablespoons mayonnaise (heaping, use a regular kitchen tablespoon)

Steps:

  • Drain tuna very well and add to large bowl
  • dice all of the above very small as indicated and add to tuna.
  • I add about 3 -4 heaping kitchen sized tablespoons of Mayo into the tuna you may have to add a little more or a little less based on your preference
  • add a few shakes of black pepper and salt (opt).
  • Chill in airtight container in fridge. The longer you let it chill, the better the flavor. This can be served on pretty much any kind of bread. My personal favorite, onion rolls or seedless rye!

6 1/2 ounces tuna, washed,drained and flaked
3/4 cup onion, finely chopped
1 tablespoon sun-dried tomatoes or 1 tablespoon oven dried tomatoe
3/4 cup celery, washed and finely chopped
12 slices bread
1 cup grated mozzarella cheese
1/2 cup milk
2 eggs, beaten
oil, as required to fry

Steps:

  • In a large bowl, combine the tuna with the onion, sun-dried/oven dried tomatoes and celery.
  • Divide this mixture into 6 equal parts.
  • Spread each portion of the mixture onto 6 slices of bread.
  • Top with the mozzarella cheese.
  • Then, carefully press down another bread slice over each of the prepared bread slices.
  • This way make the sandwiches.
  • Combine the milk and egg mixture in a big and wide bowl.
  • Carefully dip each sandwich in this mixture.
  • Heat a few tbsps.
  • of oil in a non-stick pan.
  • Shallow fry all the prepared sandwiches in the oil, one at a time.
  • Make sure the sandwiches are browned on both sides before removing and draining on clean paper kitchen towels.
  • Serve hot.
  • Enjoy!
