These quick, easy, and freezer friendly beef enchiladas are the perfect make ahead meal. With an amazing enchilada sauce, and cheese melt in your mouth cheese piled high, these beef enchiladas are a dinner idea that your whole family will love!

1 - 1 1/2 lbs lean ground beef
1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp chili powder
1 tsp cumin
1 package corn tortillas
2 28oz enchilada sauce (My fave is A la Orden)
2 cups colby jack cheese (shredded)
green onions (optional garnish )
sour cream (optional garnish)

Steps:

  • First you will add all seasonings to ground beef while browning on medium heat.
  • After you drain the meat, add it back to the pan.
  • Next, toss the meat in about 1/4-1/2 cup of enchilada sauce. Just enough to coat the meat.
  • Now you will heat the corn tortillas in the microwave. (About 5-10 seconds per tortilla in the microwave.)
  • Coat the bottom of the disposable pans in enchilada sauce.
  • Place a spoonful of meat in center of corn tortilla, roll the filled tortilla, and place in the disposable pan.
  • Once the pan is full, top all enchiladas with enchilada sauce. Be generous.
  • - Stop here. Wrap top of pan in foil, and add top, and place in freezer. When you are ready to bake, allow the enchiladas to thaw. Bake on 350 for 15 minutes, then add the cheese. Bake for an additional 5-10 minutes, or until the cheese is nice and melted. If you don't have time to thaw - Remove top from pan, but leave foil on. Bake on 350 for 30-45 minutes, or until enchiladas are heated through. Add cheese on top of enchiladas, and bake for additional 5-10 minutes.
  • Bake enchiladas on 350 for about 15 minutes.
  • Pull the enchiladas from the oven, and top with cheese
  • Put the enchiladas back in the oven, and bake for an additional 5-10 minutes.
  • Allow cooked enchiladas to sit for at least 5 minutes.
  • Enjoy! Feel free to add any toppings you desire. My family loves to add sour cream and green onions

This Ground Beef Enchilada Casserole is made with only 6 ingredients and comes together quickly for a fast and extra delicious dinner perfect for a busy night.

1.25 pounds lean ground beef
½ onion (diced)
10 ounces red enchilada sauce ((1 can))
1.5 cups shredded cheddar cheese
4 ounces chopped green chiles ((1 can))
8 corn tortillas ((or 12 street taco sized corn tortillas))

Steps:

  • Preheat oven to 425˚F.
  • Cook the ground beef and onion in a large skillet over medium high heat until the beef is cooked through and the onion is clear. Drain any excess fat.
  • Turn the burner off and add the enchilada sauce (reserve 1 tablespoon) and green chiles. Mix to combine.
  • In a 8x8 casserole dish, pour the reserved enchilada sauce and spread to cover the bottom. Lay half of the tortillas in the bottom of the dish. You can cut the tortillas to fit if needed.
  • Add half the beef mixture, then top with half the cheese. Repeat with tortillas, meat, and cheese.
  • Bake for 20 minutes, or until the edges are bubbling and the casserole is hot throughout.
  • Garnish with your choice of chopped green onions, fresh cilantro, or pico de gallo.

This layered enchilada dish freezes well and has great flavors. If desired, you can quickly fry the tortillas for 1-2 seconds per side in 3 to 4 tablespoons vegetable oil over medium heat before adding to the dish. Make sure to thoroughly drain excess oil after frying.

1 1/4 lbs lean ground beef
1 medium onion, diced (about 3/4 cup)
3 -4 tablespoons taco seasoning
1/2 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1 (4 ounce) can mild green chilies, chopped
1 (8 ounce) can green chili salsa
1/4-1/3 cup water
12 corn tortillas
1 lb cheddar cheese or 1 lb monterey jack cheese, grated- less if desired
1 (15 ounce) can mild red chile enchilada sauce
1 (15 ounce) can medium green enchilada sauce
1/3 cup sour cream
3 tablespoons cream or 3 tablespoons milk

Steps:

  • Brown meat and onion in large skillet.
  • Meanwhile, prepare sauce: In medium bowl, combine red and green enchilada sauces, sour cream and cream or milk. Whisk together until well blended and smooth.
  • Drain meat and return to pan. Add dry taco seasoning, salt, pepper, green chiles, green chile salsa, and water. Mix well, cover, simmer for 15 minutes. Check to see that most of the water has been absorbed, but do not allow the meat to become dry. Adjust seasonings if needed.
  • In foil and plastic wrap lined 9x13 baking dish, pour 3/4 cup of sauce on bottom of dish to cover. Place half of the tortillas in single layer on sauce. Top with half meat mixture, the sprinkle with cheese. Repeat tortilla/meat/cheese layers. Pour remaining sauce over layers and top with cheese. Cool enchiladas completely. Wrap and freeze.
  • To serve, thaw completely and bake at 350 degrees for 18 to 20 minutes until cheese is bubbly and heated through.
  • Serve with lettuce, tomato, guac, sour cream if desired.

These are very tasty. Not the typical enchiladas because they dont taste very Mexican. I've made these with whole grain tortillas and regular tortillas and both are really good. The process can get a little bit messy, but the results are worth it! This is a great OAMC meal, and this recipe increases easily by 3, 6, or 9- just change the quantity to 24, 36, or 48 enchiladas. Original recipe here makes enough to serve 5-6. This is not the greatest picture, so please feel free to post another one if you can do better! Recipe adapted from the book: Don't Panic, Dinner's in the Freezer.

1 cup onion, chopped
1/2 cup green pepper, chopped
5 tablespoons butter, divided
2 cups cooked chicken (or turkey)
1 (4 ounce) can diced green chilies, undrained
1/4 cup flour
1 teaspoon ground coriander
3/4 teaspoon salt
2 1/2 cups chicken broth
1 cup sour cream
6 ounces shredded monterey jack cheese, divided
12 tortillas, 6-inches (or soft taco size)

Steps:

  • Using a large, non-stick skillet, cook onion and green peppers in 2 T. butter until tender, about 5 minutes. Transfer onion mixture to a bowl with the cut-up cooked chicken and can of chili peppers. Set aside.
  • Using the same skillet, make the sauce: Melt the rest of the butter and stir in the flour, coriander, and salt. Add in the chicken broth and stir until thickened and bubbly. Cook and stir 1-2 minutes more. Remove from heat; stir in sour cream and 1/2 cup of the cheese. Take 1/2 cup of the sauce and add to the bowl with the chicken mixture.
  • This is the part that gets a little bit messy. (I line 2 baking sheets with foil to make easy clean-up and set up a little assembly line.) Quickly dip each tortilla into the skillet with the hot sauce to soften. (If the sauce gets too cool it will thicken and you'll have a hard time covering all 12 tortillas.) Put the coated tortilla on a cookie sheet and add about 1/4 cup of the chicken mixture. Roll up. Arrange rolls side-by-side on the other lined baking sheet. Repeat with the rest of the tortillas. If there is any leftover sauce, pour it over the enchiladas. Sprinkle with remaining cheese.
  • To serve right away: Bake at 350 for about 25 minutes or until hot and bubbly.
  • To freeze: flash freeze. Fold the sides of the foil around enchiladas. Use more foil or plastic wrap as needed. On serving day, thaw completely and bake uncovered at 350 for about 25 minutes until bubbly.

1 medium onion, chopped
1 can beans (I use refried but pinto or black beans works well too)
1 cup frozen corn or 1 cup Mexican-style corn
1 (4 ounce) can of sliced black olives
1 cup precooked white rice (optional)
1 (15 ounce) can enchilada sauce (I like hot)
1 can cream of mushroom soup
1 cup picante sauce
12 8 inch size corn tortillas, cut into bite-size pieces (white or yellow)
2 cups shredded cheddar cheese

Steps:

  • Brown ground beef with onions.
  • Add the beans,olives,corn, sauces and soup.
  • Mix well.
  • Simmer 10 minutes.
  • In a 9x13 pan- spread a little of the sauce mixture on bottom of pan.
  • Layer 1/2 of the torn tortillas, 1/2 of the sauce and 1/2 of cheese.
  • Repeat layers.
  • Bake in 350 degree oven for 30 minutes or until bubbly hot.
  • Serve with sour cream and chopped green onions.

1 (15 ounce) can enchilada sauce
1 (10 1/2 ounce) can mushroom soup
1/2 cup sour cream
1/2 teaspoon cumin

1 teaspoon jalapeno seasoning salt
1 teaspoon garlic salt
1 teaspoon onion powder
1 1/2 cups shredded cheddar cheese

Steps:

  • Cook the ground beef. Add the seasonings, the soup, and the sour cream. Pour a thin layer of the enchilada sauce on the bottom of your pan.
  • Place 4 tortillas in pan and 1/3 of the meat mixture. Then top with cheese. Layer like this until all the meat mixture and tortillas are used. Top with cheese and any remaining sauce. Cook @ 350 degrees for 30 minutes.
