HOT DOG CASSEROLE

Steps:
- Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Spread 1 can of chili and beans in the bottom of a 9x13 inch baking dish. Roll up franks inside tortillas and place in baking dish, seam side down, on top of chili and bean 'bed'. Top with remaining can of chili and beans, and sprinkle with cheese.
- Cover baking dish with aluminum foil, and bake at 425 degrees F (220 degrees C) for 30 minutes.

- Preheat broiler.
- Cut a lengthwise slit in each hot dog.
- Cut a strip of cheese the length of the slit about 1/4" thick; fill the slit with cheese and wrap a slice of bacon around the hot dog, securing the ends with a toothpick.
- Broil slowly, turning often, until the bacon and hot dogs are cooked through and browned.
FRANKFURTER-CHEESE CASSEROLE
In this casserole you add cottage cheese, instead of cheddar or american. Its easy to prepare and the ingredients go well together.

Steps:
- Cook macaroni according to package directions; drain well.
- Thinly slice four of the frankfurters; set aside.
- Cook onion and green pepper in butter till tender but not brown.
- Blend in flour, worcestershire, mustard, 1/4 teaspoons salt and dash of pepper; add milk all at once.
- Cook and stir till thickened and bubbly.
- Stir in the sliced franks, cooked macaroni, and cottage cheese; mix well.
- Turn into a 1 1/2 quart casserole.
- Bake, uncovered at 350 for 20 minutes, stirring once.
- Cut remaining 2 franks diagonally into thirds; arrange atop casserole.
- Bake till heated through, 15 minutes more.

FRANKFURTER CHEESE BAKE
This is a delicious casserole recipe I got from an old Edna Staebler cookbook a long time ago. I could eat the whole thing myself, although it is supposed to serve 3. You can double it for more people with no problem and they will all leave the table smacking their lips!

- Combine cheese, flour, and salt.
- Stir this mixture, along with the milk and butter into the noodles.
- Pour the noodle mixture into a buttered shallow pan.
- Combine the sliced frankfurters with the brown sugar, miracle whip and mustard.
- Spoon evenly over top of the noodles.
- Bake at 375*F for 20 minutes.
- Recipe can be doubled very successfully.
