2 egg whites, room temperature
6 tablespoons butter
1/4 cup sugar
1/2 cup flour, sifted
1/4 teaspoons vanilla extract

Steps:

  • Cut a stencil out of a plastic coffee can lid in the shape of a 3-inch disk. Whip the egg whites until stiff and chill. In a mixer, cream the butter, then add the sugar and continue mixing. Add the flour and blend in, then add the vanilla and blend again. Add the chilled egg whites and mix on low until well incorporated and the batter is smooth. With a small offset spatula, spread batter through the stencil so it is a circle onto a silpat or parchment paper, about 6 per cookie sheet. Bake in a preheated 350-degree oven until light golden brown, 7 to 8 minutes. Quickly remove the pan from the oven and one at time place a fortune across the center with a bit hanging out. Fold cookie circle in thirds over fortune with flaps only slightly overlapping each other. Turn over and bring opposing sides together and pinch. Let cool.

2 cups Crisco® All-Vegetable Shortening
1 cup sugar
1 1/2 tsps. vanilla extract
3 large egg yolks
1/3 cup orange juice
4 1/2 cups Pillsbury BEST® All Purpose Flour
1/2 tsp. salt
Smucker's® Orchard's Finest® Pacific Mountain Strawberry Preserves
Powdered sugar

Steps:

  • BEAT shortening, sugar and vanilla in large bowl with electric mixer until blended. Beat in egg yolks and orange juice. Combine flour and salt. Mix in gradually until dough is soft. Add more flour if needed. Wrap in wax paper or plastic wrap. Refrigerate overnight.
  • HEAT oven to 350 degrees F.
  • ROLL out half of chilled dough at a time to about 1/4-inch thickness on a floured surface. Cut using a star cutter. Place on ungreased cookie sheets. Cut out centers of half the stars using a small round cutter. Repeat with remaining dough. Keep chilled until ready to use.
  • BAKE 10 to 12 minutes. Cool on cookie sheets for 1 minute. Place on cooling racks to cool completely. Spread whole stars with preserves. Place stars with centers cut out on top. Sift with powdered sugar.

1/2 cup margarine, softened
1/2 cup light brown sugar, packed
2 eggs, lightly beaten
2 tablespoons flour
3 ounces walnuts, chopped
1/2 tablespoon vanilla
1/3 cup mini chocolate chip
confectioners' sugar

Steps:

  • Beat margarine and sugar until light.
  • Beat in eggs. Add rest of ingredients and mix well.
  • Place batter by small teaspoonfuls far apart on well greased cookie sheet(s). Probably have to do this in 4 batches.
  • Bake at 350 degrees F. for 10 minutes until edges and undersides are well browned. If not adequately browned, it won't roll. Loosen each cookie immediately and roll up while hot.
  • Place rolled up cookies on a napkin lined plate and sprinkle with confectioners sugar when cooled. Do this until process until you use up all the batter.

1 white sugar cube
1 ripe strawberry, stem removed
2 black peppercorns
1 3/4 ounces gin
1/2 ounce Pomegranate, Tawny Port and Balsamic Reduction, recipe follows
1/2 ounce vermouth (recommended: Dolin Blanc)
Cracked ice, for shaking
2 blue cheese stuffed olives, for garnish
8 ounces 10 year tawny port
4 ounces pomegranate juice
4 ounces balsamic vinegar

Steps:

  • In a metal cocktail shaker, muddle the sugar cube, strawberry and peppercorns well. Be sure to crack the peppercorns. Add the gin, Pomegranate, Tawny Port and Balsamic Reduction, vermouth and cracked ice into the shaker. Top, seal and shake vigorously. Double strain up into a chilled martini glass. Garnish with the olives on a bar toothpick.
  • Pour the tawny port, pomegranate juice and balsamic vinegar into a small skillet on medium heat until reduced by little less than half. Take off the heat and allow to cool to room temperature before incorporating into a cocktail.

HAZELNUT FORTUNE COOKIES

1 egg white
1 teaspoon hazelnut extract
1-ounce hazelnut paste
1/4 cup sugar
1/4 cup all-purpose flour
3 tablespoons butter, melted but cooled
1 cup chocolate, melted
1/2 cup hazelnuts, chopped

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly whip the egg white, hazelnut extract, hazelnut paste, and sugar. Sift the flour and mix into the egg white until smooth. Stir in the butter.
  • Using a template 3 1/2-inch round, spread the batter on a sheet pan lined with a silpat. (If you don't have a template, you can drop 2 teaspoons of batter onto the sheet pan and spread evenly into a 3 1/2-inch circle.)
  • Bake for approximately 5 minutes until the edges become brown. Remove from the oven.
  • One at a time and working quickly, turn a cookie over, place a fortune in the center of the cookie. Draw opposite edges towards the center, slightly overlapping and then fold the ends downwards, in half. You can fold over the rim of a bowl. Cookies will crisp as they cool.
  • When cool, coat the outer rim with melted chocolate and rolled in chopped hazelnuts.

1/2 cup flour
1 tablespoon cornstarch
1/4 cup sugar
1/4 teaspoon salt
1/4 cup cooking oil
1/4 cup egg whites
1 1/2 teaspoons water
1 teaspoon vanilla extract

Steps:

  • Write individual fortunes on strips of paper. Sift flour, cornstarch, sugar, and salt into a medium bowl. Add oil, egg whites, water, and vanilla extract; stir until smooth. Preheat oven to 300 degrees. Bake 1 cookie at a time. Drop 1/4 cup batter onto an oiled baking sheet; spread evenly to make an 8-inch circle. Bake until cookie turns light golden brown, 12 to 14 minutes. (Don't allow edges to become overly brown or cookie will crack when folded.) Using pot holders to protect your hands, immediately remove hot, pliable cookie from baking sheet and place a fortune in center. Fold cookie in half to form a half-moon, then grasp ends of cookie and gently pull together to crease. Hold folded cookie for a minute to maintain its shape as it cools and becomes crisp. Repeat with remaining batter.

3/4 cup vegetable shortening
1 cup firmly packed light brown sugar
1/2 cup milk
1 egg
1/2 teaspoon salt
2 1/2 teaspoons baking powder

3 cups all-purpose flour
One 1-pound bag chocolate chips
2 cups chopped walnuts
2 cups sweetened condensed milk
1 teaspoon vanilla extract
Two 1-ounce squares unsweetened chocolate, melted
1 teaspoon butter
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F.
  • For the dough: in a mixer, beat together the shortening and brown sugar. Add the milk and the egg, and beat until combined. Add the salt, baking powder, vanilla and flour. Mix until everything is thoroughly combined.
  • Remove dough from bowl, cut in half. Roll each half of dough between 2 sheets of waxed paper. Peel waxed paper off the bottom of 1 of the layers and place it in a greased 9 by 13-inch baking pan. Press dough with hands into the corners of the pan, trimming any pieces that come over the sides. Peel off the waxed paper from the other side.
  • Meanwhile, stir all the filling ingredients together. Evenly pour fudge filling on top of first layer in pan. Remove waxed paper from 1 side of top dough layer and place that side over filling. Then remove waxed paper from the top side. Bake until top is brown, about 30 to 35 minutes. Let cool on a rack for 4 to 5 hours or even overnight. Sprinkle with powdered sugar and cut into serving pieces

This is a good Valentine's Day dessert for the non-chocoholic. Pomegranate is said to be the true "love apple" that Adam and Eve had in the Garden of Eden. To juice them, use a juicer or place the kernels in a blender and blend briefly. Strain the juice to remove any seed fiber.

1 cup simple syrup
2 sheets gelatin, sponged
2 egg whites, room temperature

  • To make the Granita: In a bowl whisk the liquids together. Take off 1/2 cup of the liquid, add the sponged gelatin and warm it to melt the gelatin. Combine all the liquids and pour into an 8 by 8-inch pan. Freeze overnight. Scrape the next day into a freezer container.
  • Preheat the oven to 350 degrees F.

  • Cooking spray, for pans
  • Write your fortunes on 24 pieces of paper that are about 1/2-inch wide and 2 1/2-inches long.
  • Preheat the oven to 300 degrees F.
  • In a small bowl sift together the flour, cornstarch and sugar.
  • In a medium bowl whisk together the egg whites, vanilla, oil, and water until smooth. Add the dry ingredients into the wet ingredients and mix until a smooth batter is formed.
  • Working in batches of 4, drop the batter by tablespoons onto a nonstick baking sheet that has been lightly coated with cooking spray. Tilt the baking sheet in a circular motion to spread the batter into 4-inch diameter circles.
  • Bake until the edges of the cookies are golden brown, about 10 minutes. Remove from oven, and working quickly, use a spatula to remove the cookies from the baking sheet. Put a fortune into the center of a cookie and fold it in half. Bring the points together with open seams on the outside. Arrange in muffin tins to help keep the shape while cooling.
  • Repeat with remaining fortunes and cookies. Transfer to a serving bowl or basket and serve.

  • Preheat oven to 400°. Write fortunes on small strips of paper (3-1/2x1/4-in.); set aside. Line a baking sheet with parchment. Using a pencil, draw two 3-1/2-in. circles on a sheet of parchment. Place paper, pencil mark down, on a baking sheet; set aside., In a small bowl, beat butter, sugar, egg white and vanilla. Add flour; mix well. Spread 1 tablespoon batter over each circle. Bake 4-5 minutes or until lightly browned., Slide parchment onto a work surface. Cover one cookie with a kitchen towel. Place a fortune in the center of the other cookie; loosen cookie from parchment with a thin spatula.
