Who says you can't have dessert if you are diabetic - this recipe from Australian BH&G Diabetic Living.

2 tablespoons cream cheese (extra-light)
2 teaspoons almond meal
1/4 teaspoon vanilla essence
3 sheets phyllo pastry
cooking spray
100 g peaches (slices in juice drained)
icing sugar (to dust optional)

Steps:

  • Drain peaches and pat dry with paper towel and thinly slice.
  • Preheat oven to 180C fan forced.
  • Line a baking tray with baking paper.
  • Put cream cheese, almond meal and vanilla essence in a small bowl and mix until well combined, set aside.
  • Put 1 pastry sheet on a clean surface and spray with cooking spray and then top with another pastry sheet and spray with cooking spray and then top with third pastry sheet and spray with cooking spray.
  • Cut the pastry stack in half crossways.
  • Spread half of the cream cheese mix along one long side of one of the pastry stacks, leaving about 5cm at each end and top with half of the peach slices and fold int he sides and roll up to enclose the filling and then repeat with remaining pastry stack, cream cheese mix and peach slices.
  • Place pastry parcels on the baking tray and bake for 15-20 minutes or until the pastry is light golden.
  • Dust with icing sugar, if you like, to serve.
  • VARIATION - replace almond meal with hazelnut meal and the peach slices with 125 grams of fresh strawberries, hulled and quartered.

A no-cook, make-ahead party favourite with a thick, cream cheese topping, a buttery biscuit base and finished with raspberry coulis

100g butter , melted, plus a little extra for the tin
200g crunchy biscuit (we used Fox's butter biscuits)
600g soft cheese
100g icing sugar , plus extra to taste
2 tsp vanilla extract
300ml pot double cream
450g raspberry
3 really ripe peaches , peeled if you like, or 6 canned peach halves (juice saved), diced into raspberry-sized chunks

Steps:

  • Line the base and sides of a 20cm loose-bottomed or springform tin with baking parchment - use smudges of butter to help the paper stay in place around the sides. Put the biscuits in a plastic food bag and crush to crumbs using a rolling pin, then mix thoroughly with the melted butter. Tip into the prepared tin and press down firmly to create an even base. Chill while you prepare the filling.
  • Put the soft cheese, icing sugar and vanilla in a bowl, then beat with an electric mixer until smooth. Tip in the cream and continue beating until mixture is combined. Scatter over 100g of the raspberries and half of the peach chunks. Using a spatula, fold in with just a few folds - as you assemble the cheesecake they'll ripple through more.
  • Spoon the cream mixture onto the biscuit base, working from the edges inwards. Smooth the top of the cheesecake down with the back of a dessertspoon or spatula. Leave to set in the fridge overnight.
  • In a food processor, blitz 250g of the remaining raspberries, sieve, stir back in 1 tsp of the seeds, if you like, and sweeten to taste with icing sugar. Add enough water or canned peach juice to make it saucy and chill until serving.
  • Bring the cheesecake to room temperature about 30 mins before serving. If using a loose-bottomed tin, unmould by placing on top of a can, then gradually pull down the sides of the tin. Slip the cheesecake onto a serving plate, removing the lining paper and base. Scatter the remaining raspberries and peach chunks over the cheesecake, dribble over some of the sauce and serve the rest alongside.

1-1/4 cups plus 3 tablespoons sugar, divided
3 egg yolks, lightly beaten
2 cups heavy whipping cream
2 teaspoons vanilla extract
2 packages (8 ounces each) cream cheese, cubed
1/2 cup peach nectar
4 teaspoons lemon juice
4 medium peaches, peeled and chopped or 1-1/2 cups frozen sliced peaches, chopped

Steps:

  • In a small saucepan, heat milk to 175°; stir in 1-1/4 cups sugar until dissolved. Whisk a small amount into the egg yolks. Return all to the pan, whisking constantly. Cook and stir over low heat until mixture reaches at least 160° and coats the back of a metal spoon. , Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Transfer to a large bowl., In a blender, combine the cream, vanilla and cream cheese; cover and process until smooth. Add to cooled milk mixture. Stir in peach nectar and lemon juice. Refrigerate for several hours or overnight. , Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Place peaches in a bowl; sprinkle with remaining sugar. Set aside, stirring several times. Drain and discard juice from peaches. Add some of the peaches to each batch of ice cream during the last 5 minutes of freezing. , Refrigerate remaining mixture and peaches until ready to freeze. Transfer ice cream to a freezer container; freeze for 2-4 hours before serving. May be frozen for up to 2 months.

The daughter of a friend gave me this recipe. I've been making cobblers all my life but nothing tops this. By far the best cobbler I've ever made. I was a little hesitant about the crescent rolls but wow, the combination of flavors is amazing. Thanks Sherry for this recipe. Can't wait to try it with different pie fillings.

1 cup cold unsalted butter, cut into small cubes
2 1/2 cups Gold Medal™ all-purpose flour
2 teaspoons granulated sugar
1 teaspoon salt
4 to 8 tablespoons ice water
4 oz cream cheese (from 8-oz package), softened
3 tablespoons packed brown sugar
1 egg yolk
2 cups diced fresh peaches
1 1/2 teaspoons cornstarch
2 to 4 tablespoons packed brown sugar (depending on sweetness of fruit)
1 egg
1 tablespoon milk
Additional granulated sugar

Steps:

  • In medium bowl, combine cold butter, flour, 2 teaspoons granulated sugar and the salt; toss to coat butter. Using fingers or pastry blender, pinch butter into flour until coarse crumbs form. Begin adding ice water 1 to 2 tablespoons at a time, mixing with fork or spoon just until dough comes together when pinched between fingers.
  • Turn dough out onto lightly floured surface; knead a few times just to bring dough together. Divide dough in half; shape into 2 flattened disks. Wrap each disk well in plastic wrap; refrigerate at least 30 minutes.
  • In medium bowl, beat cream cheese, 3 tablespoons brown sugar and the egg yolk with whisk or electric mixer until well combined. In another medium bowl, toss peaches, cornstarch and 2 to 4 tablespoons brown sugar to taste. Set Filling aside while rolling and cutting dough.
  • Heat oven to 400°F. Line 2 cookie sheets with silicone nonstick baking mat or cooking parchment paper; set aside. In small bowl, beat egg and milk with whisk for egg wash; set aside.
  • Roll out dough, 1 disk at a time, to 1/4- to 1/8-inch thickness. Using 3-inch round cutter or upside-down drinking glass, cut out rounds of dough (about 16 per disk). Repeat with remaining dough disk. Place half of the dough rounds on the 2 cookie sheets, leaving room between each (8 per sheet).
  • Divide cream cheese mixture evenly among rounds. Divide peach mixture evenly among each cream cheese-topped dough round. Lightly brush edge of each dough round with egg wash. Top each with second dough round to cover filling. (This may take some rearranging of peach chunks but don't stress, just call them "rustic".) With fork, seal edge of each pie; poke a few holes in top of each to allow steam to escape and prevent pie from exploding during baking. Brush tops of pies with egg wash; sprinkle with granulated sugar.
  • Bake in center of oven, 1 sheet at a time, 20 to 25 minutes or until bottoms of pies are golden brown and sugared tops are slightly crackled and beginning to turn golden. Remove from oven; cool at least 10 minutes before serving.

10 oz shortbread cookie
6 tablespoons unsalted butter, melted
2 ripe yellow peaches, quartered, plus 4-5 thinly sliced
4 packs gelatin, divided
1 cup cold water, divided
32 oz cream cheese, softened
1 ¼ cups sugar, plus 2/3 cups (135 G), divided
1 teaspoon vanilla extract
1 teaspoon lemon juice
½ cup heavy cream
2 drops orange food coloring, optional
⅔ cup hot water
1 cup prosecco

Steps:

  • Grease and line the sides of a 9-inch (20 cm) round springform pan with parchment paper.
  • Add the shortbread cookies to a food processor. Pulse until finely crushed. Add the melted butter and pulse until combined.
  • Transfer the cookie crumb mixture to the springform pan. Use a spatula or measuring cup to press the cookie crumbs down to form an even base. Freeze for 10 minutes.
  • Add 2-3 quartered peaches (depending on size) to a food processor. Blend until smooth. Strain through a fine-mesh sieve.
  • In a small bowl, combine ½ cup (120 ml) cold water and 2 packets of gelatin. Let the gelatin bloom for 5 minutes, until the water is mostly absorbed. Microwave for 20-30 seconds, or until the gelatin is melted.
  • In a large bowl, beat the cream cheese, 1¼ cups (250 G) sugar, the vanilla, and lemon juice together with an electric hand mixer until combined.
  • Add the heavy cream and melted gelatin and beat for another 2-3 minutes, until well combined and fluffy.
  • Spread half the cheesecake mixture over the chilled cookie crust. Freeze for 10 minutes.
  • Mix 1 cup (255 G) of the strained peach puree and orange food coloring, if desired, into the remaining cheesecake mixture. Carefully pour the mixture over the first layer of cheesecake. Spread evenly and freeze for another 10 minutes.
  • In a small bowl, combine the remaining ½ cup (120 ML) cold water with the remaining 2 packages of gelatin. Let the gelatin bloom for 5 minutes, until the water is mostly absorbed. Microwave for 20-30 seconds, or until the gelatin is melted.
  • Combine the gelatin mixture, hot water, and the remaining ⅔ cup (135 G) sugar and whisk to dissolve the sugar. Slowly pour into the prosecco and stir to combine. Let sit for 5 minutes to cool slightly. Skim off any foam that rises to the top. Set aside.
  • Starting from the outside and working inward, arrange the sliced peaches over the peach cheesecake layer in a circular pattern with the curved sides facing out. Begin with the larger slices, overlapping slightly, and continue until the entire surface is filled.
  • Spoon half of the prosecco gelatin over the peaches. Carefully transfer to the refrigerator and let set for 30 minutes. Pour the remaining prosecco gelatin over the peaches up to the rim of the pan. Chill in the refrigerator for at least 6 hours, or overnight.
  • Release the springform and remove the parchment, then slice and serve.

2 (8 ounce) packages cream cheese, softened
3 eggs
1 cup corn syrup
2 teaspoons vanilla extract
¾ cup peach preserves

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
  • In a medium bowl mix together the flour sugar and salt. Cut in the butter until the mixture is fine and crumbly. Stir in 1/3 cup corn syrup until a dough forms. Press into the bottom of the prepared pan.
  • In another bowl, beat cream cheese and eggs using an electric mixer, until smooth and creamy. Mix in 1 cup corn syrup and vanilla until well blended. Spread evenly over the crust.
  • Bake for 35 to 40 minutes in the preheated oven, until the edges are light brown. Remove from the oven and spread peach preserves over the hot filling immediately. Chill for at least 3 hours before cutting into small squares.

225g fresh spinach , washed
1 tbsp groundnut oil
1 large shallot , finely diced
25g walnuts or pine nut , roughly chopped
75g vegetarian cheddar , grated
pinch freshly grated nutmeg
2 tbsp double cream
1 tsp walnut oil
25g butter , melted
12 squares filo pastry , each measuring 16cm x 16cm

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Place spinach in a pan and stir over a high heat until wilted. Strain, squeeze out as much liquid as possible, then roughly chop.
  • Heat oil in a frying pan, sauté shallot until softened. Add walnuts, then fry for 2-3 mins. Remove from heat, stir in spinach, cheese, nutmeg, cream and seasoning.
  • Mix walnut oil with butter. Brush a thin coating on a piece of pastry. Place another piece on top with corners at a different angle, brush with the butter and repeat with one more piece. Place a spoonful of spinach mix in the centre, bring up corners of pastry and pinch in the middle to form a parcel. Repeat to make remaining parcels, then transfer to a greased baking tray. Brush parcels with remaining butter and oil. Bake for 20 mins until golden.

I love cream cheese and peaches. I have friends who own a wonderful peach orchard so I eat and freeze. Since I have been cooking many year I have a keen eye out for something that sounds different and tasty. When friends and family get together I always enjoy being asked for my recipes

one box yellow cake mix
4 medium eggs
1 c water
1 large 6 oz instant vanilla pudding mix
1/3 c cooking oil
1 large can sliced peaches (drain and reserve juice)
12 oz cream cheese
1/2 c white sugar

Steps:

  • 1. In a large bowl, mix cake mix,eggs,water,Pudding mix and cooking oil, beating time recommended on cake mix box. Pour mixture into greased and floured 13 x 9 inch pan. Spread drained peach slices evenly over surface of mixture.
  • 2. Soften cream cheese (at room temp for 2 hours) and mix with sugar and 3 Tbs of reserved peach juice until smooth. Spoon over top of peaches. Bake in pre- heated oven at 350 degrees for 45 to 50 minutes.

Steps:

  • Preheat oven to 350.
  • Grease pie plate.
  • Combine first 7 ingredients in medium bowl.
  • Mix with electric mixer on medium speed, 2 minutes.
  • Pour into prepared pie plate.
  • Place peaches over batter.
  • In separate bowl, combine cream cheese, 1/2 cup sugar, and 3 T reserved peach juice.
  • Mix on medium speed, 2 minutes.
  • Pour over peaches.
  • Combine remaining sugar and cinnamon and sprinkle over top of pie.
  • Bake 30-35 minutes.

Steps:

  • Beat flour, baking powder, salt, dry pudding, butter, milk and egg with an electric mixer for 2 minutes and pour into an 8-inch square or pie pan.
  • Drain and save juice from sliced peaches.
  • Arrange peaches over batter.
  • Mix cream cheese, sugar and peach juice.
  • Beat until smooth.
  • Spoon over the top, keeping 1 inch from edges.

¾ cup all-purpose flour
⅔ cup chopped pecans
½ teaspoon vanilla extract
1 (8 ounce) package cream cheese
1 egg
¼ teaspoon almond extract
¼ cup white sugar
½ teaspoon vanilla extract
1 (28 ounce) can peach slices, drained
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • To make the crust, mix butter, 1/3 cup sugar, flour, pecans and 1/2 teaspoon vanilla extract in a bowl. Press into the bottom of a 10-inch pie plate.
  • Bake the crust in preheated oven for 5 minutes. Remove and allow to cool.
