APPLE BALSAMIC GRILLED CHICKEN BREAST RECIPE

Apple Balsamic Grilled Chicken Breast Recipe image

Apple Balsamic Grilled Boneless Skinless Chicken Breast is a dish that you'll love and make again and again. Choose an apple variety to your liking - sweet apples such as honey crisp are amazing! The sweetness of the apples mixed with the balsamic vinegar, onion and rosemary will make the chicken breast a delicious, sweet and savory meal.

Provided by Jason

Time 15m

Yield 2

Number Of Ingredients 8

2 boneless skinless chicken breasts
3/4 cup chopped apple
3/4 cup chopped onion
1 cup chicken stock
1 tbs balsamic vinegar
1 tsp fresh chopped rosemary
1 tbs olive oil
salt/pepper to taste

Steps:

  • Saute apple and onion in pan with the olive oil for 5 minutes or until softened. Pour in chicken stock, add rosemary and balsamic vinegar and bring to boil. Reduce heat and simmer (8 minutes) until liquid reduces down to a sauce like texture.
  • Layout chicken breasts on a plastic wrap covered solid surface and pound to even thickness with a meat mallet (aprox 1/2 - 3/4 inch). Preheat your Foreman Grill for about 5 minutes. Brush chicken lightly with olive oil and add salt/pepper to taste. Grill meat for 3-6 minutes until juices run clear and internal temp of 165 degrees. Remove from grill and let sit for 5 minutes. Pour sauce over chicken and serve immediately.

BALSAMIC CHICKEN

The flavor of balsamic vinegar and sage compliment eachother so well with the chicken. I prefer this dish served over basmati rice. My friend Michele (who gave me this recipe) prefers it over noodles. Either way, hope you enjoy.

FOREVERMAMA'S CHICKEN OR TURKEY CUTLETS WITH BALSAMIC VINEGAR

Forevermama's Chicken or Turkey Cutlets With Balsamic Vinegar image

This is a quick and wonderful meal great for weeknights and to serve for company. It is a very flavorful dish that imparts an almost fruity taste due to the combination of the wines and balsamic vinegar. When I make it, it reminds me of my father-in-law because out of all the dishes I made, this was one of his favorites. Enjoy!

Provided by ForeverMama

Categories     Chicken Breast

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 10

4 chicken breast halves, pounded to 1/4-inch thick (or the equivalent of turkey breasts)
1/2 cup balsamic vinegar
4 teaspoons honey
1 1/4 cups Italian seasoned breadcrumbs
salt and pepper
3 -4 tablespoons olive oil
6 garlic cloves, minced (if you're a garlic lover, add more to your taste)
1/2 cup white wine
1 -1 1/2 cup vermouth
minced parsley, for garnish

Steps:

  • Rinse chicken or turkey breasts in a colander, let drain.
  • Mix vinegar and honey until honey dissolves. Set aside.
  • Season bread crumbs with salt and pepper. Dredge chicken or turkey breasts in the Italian seasoned bread crumbs, pressing well to make them adhere.
  • Heat a skillet over medium heat. Add 1 - 2 tablespoons olive oil until it is hot.
  • Saute the chicken cutlets for 1 minute per side (note that the cutlets won't be cooked all the way through, because they will cook later in recipe). Transfer them to a platter.
  • Add the remaining oil and garlic to the pan and cook just until garlic is golden (garlic burns easily, so be careful or it will impart a bitter taste).
  • Add the white wine and vermouth. Boil the mixture until sauce is reduced by half (more or less).
  • Add reserved honey and vinegar mixture and cook until syrupy. Taste for seasoning.
  • Place the cutlets back in the pan and simmer for 3 - 4 minutes more or until completely cooked. Garnish with parsley.
  • A Little Bit of a Tip: If you prefer extra sauce, just increase the sauce ingredients. This sauce is scrumptious over rice.

CHICKEN BREASTS AND BALSAMIC VINEGAR

Chicken Breasts and Balsamic Vinegar image

I needed a fast recipe for some boneless chicken, and this was it. Adapted a bit from a recipe I had, it was delicious. Suitable for just family, or company, too.

Provided by ciao4293

Categories     Chicken

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

4 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts, either pound it out thinly, or fillet the chicken
2 tablespoons olive oil
6 cloves garlic, minced
3/4 cup chicken broth
1/4 cup balsamic vinegar
2 bay leaves
1/4 teaspoon herbes de provence (recipes for this spice mix are available on Recipezaar)
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Mix the flour, salt and pepper in a shallow dish, and dredge the chicken in it.
  • Heat oil in large skillet and cook the chicken until brown on one side (about 3-4 min).
  • Turn the chicken and add the garlic.
  • Cook 3 minutes more, while stirring the garlic around.
  • Add the broth, vinegar, bay leaves, and herbs.
  • Cover tightly, reduce heat to med-low, cook for about 10 minutes, turning chicken a couple of times. (When you get to the end of this step, you have a choice...you can proceed and reduce the sauce, or you can stop now after ADDING THE TBSP OF BUTTER. This way, you have more sauce, which is the way my husband likes it.)
  • When chicken is done, remove from pan.
  • Bring heat back up to med.
  • ,and cook the pan juices for 7 minutes, uncovered.
  • Stir in butter and remove bay leaves.
  • Spoon sauce over the chicken.
  • I served white rice on the side, and spooned a bit of sauce over that, too.
  • Yum.

TURKEY CUTLETS WITH SAUTéED BRUSSELS SPROUTS WITH PANCETTA AND BALSAMIC VINEGAR

Turkey Cutlets with Sautéed Brussels Sprouts with Pancetta and Balsamic Vinegar image

Yield 4 servings

Number Of Ingredients 14

10 fresh sage leaves, thinly sliced
1 cup fresh flat-leaf parsley leaves (a few large handfuls), chopped
Juice of 1 lemon
6 tablespoons extra-virgin olive oil (EVOO)
Salt and freshly ground black pepper
2 pounds turkey breast cutlets
6 slices pancetta, chopped
1 large onion, chopped
3 garlic cloves, chopped
2 pints Brussels sprouts, thinly sliced
3 1/2 cups chicken stock or broth
2 tablespoons balsamic vinegar (eyeball it)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 375 F.
  • In a shallow dish, combine the sage, half of the parsley, the lemon juice, 2 tablespoons of the EVOO, salt, and pepper. Add the turkey cutlets, coat thoroughly, and marinate for 5 minutes.
  • Heat a large skillet over medium-high heat with 2 tablespoons of the EVOO (twice around the pan). Add the pancetta and cook until crisp, about 4 minutes.
  • Add the onions and garlic, season with salt and pepper, and cook, stirring occasionally, for 2 to 3 minutes. Add the sliced Brussels sprouts, 1/2 cup of the chicken stock, and the balsamic vinegar, stir to combine, and continue to cook for 4 to 5 minutes, or until the Brussels sprouts are tender.
  • While the Brussels sprouts are cooking, heat a large skillet over medium-high heat with the remaining 2 tablespoons of EVOO. Add the turkey cutlets and brown on each side. Transfer the cutlets to a shallow baking dish and add 1 cup of the chicken stock to keep the meat moist. Transfer the cutlets to the oven, loosely tented with foil, for 6 to 7 minutes, or until cooked through. To the skillet that you browned the cutlets in, add the butter and melt it over medium heat. Add the flour and cook for 1 minute. Whisk in the remaining 2 cups of chicken stock and allow it to thicken up, 3 to 4 minutes. Season the gravy with salt and pepper and finish with the remaining parsley.
  • Serve the turkey cutlets with the gravy and the sautéed Brussels sprouts.
