MEXICAN-STYLE BEEF AND BEAN CHILI
Channel the flavors of mole into this meaty chili with cinnamon and cocoa powder.

Steps:
- Preheat the oven broiler.
- Spread the tomatoes, garlic, poblanos, onion, and Serrano chile out on a rimmed baking sheet. Broil, flipping until charred on all sides, about 3 minutes for the garlic and 10 minutes for the rest of the vegetables. Cool slightly and then core the tomatoes, stem the chiles and peel the garlic. Transfer all of the charred vegetables to a blender and pulse into coarse sauce.
- Heat the oil in a large Dutch oven or pot over high heat. Sprinkle the meat with salt and pepper and working in batches, add the beef the oil and cook until browned on all sides, about 3 minutes per batch. Transfer the meat to a large plate as it is browned.
- Add the chili powder, cumin, flour, oregano, chipotle powder and cinnamon to the pan drippings and whisk to make a paste. Stir in the beer and 2 cups water. Return the meat to the Dutch oven along with the collected juices, the tomato-pepper mixture and 2 teaspoons salt. Bring to a boil, reduce the heat to low, cover, and simmer for 30 minutes. Add the beans bring back to a simmer and cook, uncovered, stirring occasionally, until the meat is tender and the sauce is thick, about 1 1/2 hours more. Stir in the cocoa powder and adjust the seasoning with additional salt and pepper. Serve with diced avocado, shredded red cabbage, cilantro leaves, Cotija cheese and lime wedges.
CHIPOTLE SHREDDED BEEF FOR TACOS OR BURRITOS
A crockpot can really be so useful for the busy cook and I've always said that all you need is a handful of reliable slow cooker recipes to get you past your most busy times. Besides, think of the money that would be spent on take-out. This particular dish produces a good homemade meal and perhaps better than a restaurant. Here are a variety of accompaniments: flour tortillas or taco shells, lettuce, tomato, onion, avocado, cheese, lime, cilantro or pico de gallo. - Heat the olive oil in a large, heavy skillet over medium-high heat. Meanwhile, combine the chili powder, cumin. smoked paprika and salt in a small bowl.
- Rub the spice mix into the beef, covering each side evenly. Once the oil is hot, place the beef in the skillet and sear on each side. Do NOT MOVE the meat while it cooks for 2-3 minutes on each side.
- Remove the beef from the skillet and place in the bottom of a slow cooker. Leave the pan on the heat and add in the beef stock to deglaze, scraping up any browned bits from the bottom of the pan. Add the tomato paste and minced chipotle and whisk into the pan sauce. Bring the sauce to a boil, reduce the heat, and simmer for a few minutes until the sauce has reduced and thickened slightly.
- Add the diced onion and minced garlic on top of the seared beef in the slow cooker. Pour the pan sauce over the onions, garlic and beef. Cover and cook on low for 6-8 hours or high for 3-4 hours until fork tender.
- Remove the beef from the slow cooker and shred with two forks. Use a slotted spoon to remove the onions from the slow cooker and mix into the shredded beef.
FOOD NETWORK NUEVO LATINO CHIPOTLE BEEF
I do the beef stew part in a crockpot instead of stockpot in the oven. I also steam the butternut squash in the microwave, but you can follow the recipe the way Food Network's Challenge winner described below. I used chipotle peppers in adobo sauce instead of ground chipotle,too.

Steps:
- Preheat oven to 325 degrees F.
- Place the beef, water, tomato paste, sugar, vinegar, chipotle pepper, cumin, salt and black pepper in stockpot. Cover and bake in 325 degrees F oven 1 3/4 to 2 1/4 hours or until beef is fork-tender.
- Meanwhile, cut squash lengthwise into quarters and remove seeds. Place squash cut side down in a 13 by 9-inch glass baking dish, overlapping if necessary. Add water. Bake in the preheated oven for 1 to 1 1/4 hours or until fork-tender.
- Place each baked squash quarter onto serving plate. Fill with equal amounts of beef mixture. Top with tomato and avocado, if desired. Sprinkle with cilantro.
- Cook's Tip: 1 tablespoon minced, seeded chipotle pepper in adobo sauce may be substituted for ground chipotle chile pepper.
- Cook's Tip: The chipotle beef mixture may also be cooked on the stovetop. Bring beef mixture to a boil. Reduce heat; simmer, covered, 1 3/4 to 2 1/4 hours or until beef is fork-tender.

SPICY CHIPOTLE BEEF
Got this recipe from a magazine and did not want to loose it. Have not made it yet but it do sound good.

Steps:
- 1. Heat oil Dutch oven over high heat. When hot, add beef in uncrowded single layer. Cook, stirring frequently to brown all sides, until almost at desired doneness. Remove to plate, leaving oil behind.
- 2. Return pan to medium-high heat. Add, onion. Cook, stirring occasionally, until brown, about 7 minutes. Add garlic and stir 1 minute. Add beer and Worcestershire. Add tomatoes, mushrooms, peppers, and salt and cook, stirring occasionally and scraping up bits stuck to bottom of pan, until mushrooms are done and liquid is reduced to sauce, about 10 minutes.
- 3. Season with salt, if desired. Return meat to pan and heat. Serve sprinkled with cilantro.

CHIPOTLE CROCK POT BEEF
This recipe is so simple I am almost embarrassed to post it but it was so tasty that I felt I wanted to share it with you. I used boneless strips of Maui ribs but you may use any thin sliced beef. I love hot (spicy) food so I caution you that if you use the whole tin of chipotles it will scream 5 alarm fire. If you don't use the whole tin freeze the remaining. Start off with two chipotles if you like medium hot.

Steps:
- Place half the peppers and tomatoes on the bottom of your crock pot; add meat.
- Top with remaining peppers & tomatoes.
- Turn to low for 6 hours.
- If you with to thicken the sauce, mix cornstarch with a bit of water and add to crock pot. Stir; turn to high for the last 15 minutes.
- Serve over your favorite pasta.
