2 cups all-purpose flour
1 package (1/4 ounce) quick-rise yeast
2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
2 teaspoons salt
1 teaspoon sugar
3/4 cup warm water (120° to 130°)
1 tablespoon olive oil
1 to 2 tablespoons grated Parmesan cheese
Salt and pepper to taste

Steps:

  • In a large bowl, combine the first five ingredients; stir in water. Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Cover and let rest for 10-15 minutes. , Press dough into a greased 13-in. x 9-in. baking pan. Cover and let rise in a warm place until doubled, about 40 minutes., Using the end of a wooden spoon handle, make several indentions 1/4 in. deep over surface of dough. Brush with oil; sprinkle with cheese, salt and pepper. , Bake at 400° for 15-20 minutes or until golden brown. Cool for 5 minutes. Cut into strips or squares; serve warm.

This recipe is from the site italianfoodforever.com. I found it about a year ago and have made it countless times, for countless occasions. I have messed up many things in this recipe and still it always turns out great. It is very simple--I LOVE it! *NOTE: Based on some reviews, you may need to add a bit more water. Remember that there are lots of variables in baking, and that making any kind of yeast bread may require adjustment depending on climate, altitude, and your ingredients. Your success comes from sensing the dough and what it needs, not from following a recipe to the letter. So if it feels dry, add a bit more water a tablespoon at a time until it feels more elastic. For the record, I have never had to add more water.

1 (1/4 ounce) package active dry yeast
3/4 cup warm water
3 cups unbleached all-purpose flour
1 teaspoon salt
6 tablespoons olive oil
2 tablespoons chopped fresh rosemary
coarse salt

Steps:

  • Dissolve the yeast in 1/2 cup of the warm water, and let sit 10 minutes until bubbly.
  • In a large bowl, combine the flour, Ts. of salt, yeast mixture and remaining water.
  • Mix thoroughly with a wooden spoon and then your hands.
  • Transfer to a floured work surface and knead by hand for a few minutes or until smooth.
  • Place in a well oiled bowl, cover with plastic wrap, and let rise until doubled, about 1 1/2 hours.
  • Punch down and place on an oiled baking sheet, forming into an oval or circle.
  • Dimple the top surface with your finger tips, and then drizzle with the oil and sprinkle with coarse salt and rosemary.
  • Preheat the oven to 425 degrees F. Bake about 20 minutes or until golden.
  • Serve warm or at room temperature.
  • Variations: Instead of the rosemary, you might add 2-3 tablespoons of fresh chopped sage to the dough with some Fresh Parmesan on top.
  • Other alternatives are sliced olives, thinly sliced zucchini or thinly sliced onions.
  • Such cheeses as grated Parmesan, Mozzarella, or Fontina are also good.

This recipe comes from the test kitchen of Cook's Illustrated and the best I've ever tasted. So moist and light! The rapid rise yeast reduces the preparation time by more than an hour. If you use equal amounts of regular active dry yeast instead, let the sponge, in step 5 develop for 30 minutes rather than 20 minutes, and increase the first and second rises to one and one-half hours each.

1 medium baking potato, peeled and quartered (about 9 ozs.)
1 1/2 teaspoons instant yeast
3 1/2 cups unbleached all-purpose flour
1 cup water (warm 105 to 115 degrees)
2 tablespoons extra virgin olive oil, plus more
extra virgin olive oil, for oiling bowl and pan
1 1/4 teaspoons table salt
2 tablespoons extra virgin olive oil
2/3 cup grated parmesan cheese (not shredded)

Steps:

  • For the dough: Add potato to boiling water and simmer until done, about 25 minutes. Drain potato well and cool.
  • Once cooled put through fine disk on ricer or grate through large holes on grater box.
  • Reserve 1 1/3 cup lightly packed potato.
  • Meanwhile, in large bowl of electric mixer or work bowl of food processor fitted with steel blade, mix or pulse yeast, 1/2 cup flour, and 1/2 cup warm water until combined.
  • Cover tightly and set aside until bubbly, about 20 minutes.
  • Add remaining dough ingredients, including reserved potato. If using Kitchen Aid mixer, fit with paddle attachment and mix on low speed (number 2) until dough comes together.
  • Switch to dough hook attachment and increase speed to medium (number 4); continue kneading until dough is smooth and elastic, about 5 minutes.
  • If using food processor, process until dough is smooth and elastic, about 40 seconds. The dough will be wet. Transfer dough to lightly oiled bowl, turn to coat with oil, and cover tightly with plastic wrap. Let rise in warm, draft-free area until dough is puffy and doubled in volume, about 1 hour.
  • With wet hands (to prevent sticking), press dough flat into generously oiled 15 1/2 by 10 1/2 inch jelly roll pan, stretching it so that the dough reaches all sides of the pan and fills all four corners (If the dough resists going into the corners, cover it with a damp cloth and let it relax for 15 minutes.) Once the dough has been stretched into the pan cover with a lightly oil-sprayed plastic wrap; let rise in warm, draft-free area until dough is puffy and double in volume, 45 minutes to 1 hour.
  • Meanwhile, adjust oven rack to lower-middle position and heat to 425°F.
  • Once doubled in size, with two wet fingers, dimple risen dough.
  • Drizzle the dough with the topping oil and sprinkle evenly with Parmesan cheese.
  • Bake until focaccia bottom is golden brown and crisp, 23 to 25 minutes. Transfer to wire rack to cool slightly. Cut into squares and serve with olive oil and balsamic vinegar.

1 cup milk (scalded)
3 tablespoons sugar
1 tablespoon salt
1 tablespoon butter
1 cup warm water
2 (1/4 ounce) packages dry yeast
1 cup grated parmesan cheese
4 1/2 cups flour

Steps:

  • Mix the milk, sugar, salt, and margarine together.
  • In a small bowl mix the warm water (115 degrees) and the yeast; mix well; proof for a few minutes.
  • Add the yeast mixture to the above milk mixture.
  • Add the cheese.
  • Add the flour to the right consistency.
  • Knead 100 times.
  • Put in a greased bowl and rise in a warm place till double in bulk--about 1 hour.
  • Knead again for about 1/2 minute.
  • Put into 2 small greased bread pans.
  • Bake at 375 degrees for 1 hour being careful not to burn it; if it starts to look too brown, cover it with foil and continue baking.
  • NOTE: If you four-times this recipe, it will make 5 good size loaves and will use 2 large Parmesan cheese.

1 teaspoon salt

Steps:

  • Mix together and then slowly add water.
  • Knead dough; if too sticky, use extra flour. Cover with plastic wrap and leave at room temperature at least 2 hours or until dough rises.
  • Knead the dough and mix in another 1/3 cup of flour + 1/2 cup of grated parmasen cheese. Place dough on square baking sheet and roll flat across the pan. Cover with kitchen towel and chill in fridge at least 30 minutes, or longer.
  • Heat oven to 425F.
  • Take focaccia out of fridge. Push fingertip lightly into top of dough to make indentations; brush top with olive oil and egg yolk and sprinkle with fresh rosemary.
  • Bake in oven about 22 minutes.
