  • Combine all ingredients in a small bowl and mix well.
  • Season with salt and pepper to taste.

1 (9 3/4 ounce) can of white chunk chicken breasts, in water
3 tablespoons mayonnaise
2 stalks celery, chopped
1/2 medium vidalia onion, chopped finely
nice crusty bread
4 leaves romaine lettuce, for each sandwich
celery salt
kosher salt
fresh ground black pepper

Steps:

  • Drain chicken very well and empty into mixing bowl.
  • Add remaining ingredients and mix well with a fork shredding chicken as you do so.
  • Place in fridge to chill and let flavors disperse, think 30-60 minutes. Spread on your favorite bread with some romaine lettuce and enjoy!

4 boneless skinless chicken breasts (about 1 1/4 pounds)
salt
pepper
2 tablespoons vegetable oil
1/2 cup mayonnaise
2 ounces crumbled blue cheese (about 1/2 cup)
2 tablespoons sour cream
2 tablespoons lemon juice
2 hard-cooked eggs, finely chopped
1 avocado, pitted, skinned and diced
4 slices bacon, fried crisp and crumbled
leafy lettuce (optional)
8 sandwich buns, your favorite

Steps:

  • Pat chicken dry and season with salt and pepper. Heat the oil in a large nonstick skillet over medium heat until the oil is shimmering. Add the chicken and cook for 6 minutes per side or until golden brown and cooked through.
  • Remove chicken to a plate and refrigerate until chilled, about 30 minutes then cut into 1/2-inch pieces.
  • Mix the mayonnaise, cheese, sour cream and lemon juice in a large bowl. Add the eggs, avocado and chicken; toss gently to combine.
  • Split bakery rolls in half and scoop out some of the center bread. Fill hollow with chicken salad. Top with crumbled bacon and a lettuce leaf. Enjoy!
  • Make ahead: The salad minus the avocado may be made and refrigerated up to 2 days in advance. Add the avocado just before serving.

4 croissants, halved horizontally
3 cups Leftover Billie's Houdini Chicken Salad, recipe follows
2 cups arugula
2 avocados, sliced
2 tomatoes, sliced
4 slices Cheddar
Salt and freshly ground black pepper

4 boneless, skinless chicken breasts
1 1/2 cups low-fat plain Greek yogurt
1/2 cup seedless red grapes, preferably Concord, halved
1/2 cup slivered almonds
1/2 cup finely chopped pecans
1/4 cup dried cranberries
2 small Granny Smith apples, finely diced
1/2 small red onion, finely chopped
Salt and freshly ground pepper
Salt and freshly ground pepper
Toasted bread or crackers, for serving

Steps:

  • Lay out the croissant halves. On the bottom halves, place 3/4 cup of the leftover chicken salad. Top with a handful of arugula and layer with slices of avocado, tomato and Cheddar. Season with salt and pepper, and top with the croissant tops.
  • Heat a grill pan and a heavy skillet over medium heat. Transfer the sandwiches to the grill pan and set the skillet directly on top, to weight. Grill until the sandwiches are golden and the cheese is melted, 4 to 5 minutes.
  • In a large stockpot over high heat, cover the chicken with water and bring to a boil. Cook for 20 to 30 minutes, or until tender. Drain and set aside to cool completely, about 20 minutes, then dice.
  • In a large bowl, mix together the chicken, yogurt, grapes, almonds, pecans, cranberries, apples and onions. Season with salt and pepper to taste. Serve on toasted bread or with crackers.

This recipe is my version of a local restaurants sandwich. I've made this for myself using the frozen cooked chicken breasts and it has turned out very well. I also made a huge batch for a bridal shower. I mixed it in my Kitchen Aid Stand Mixer; it ended up as more of a paste consistency and I had to add more mayo and buttermilk but it was still raved about. For the shower I served it on Hawiian sweet dinner rolls.

After enjoying an Arby's sandwich I could not help but try to make one similar because it was that good. I think this is pretty close, but better because all the fruits are fresh. I don't really measure so, the measurements are guesses, and it's more of getting a desired consistency. Also use your own favorite type of bread. I preferably use whole grain wheat.

1 (12 ounce) can white chicken meat packed in water
2 tablespoons mayonnaise
2 cups apples, cut into small pieces
2 cups grapes, sliced in half
2 cups celery, chopped

5 slices honey-wheat bread
1 head lettuce (optional)
1 tomatoes (optional)

Steps:
