Steps:

  • Hull and quarter 1 quart strawberries. Toss with 1 teaspoon sugar in a large bowl. Sprinkle a layer of gingersnap crumbs or graham cracker crumbs in the bottom of parfait glasses. Top with the berries. Mix 1 cup nonfat Greek yogurt with 2 tablespoons honey and 1/2 teaspoon cinnamon, then spoon over the berries.

A light and luscious ending to a meal. Adopted from the Recipezaar account Feb 2005. This pie works well using all light products, such as sugar free strawberry Jello, fat free, sugar free vanilla Jello pudding, ultra low fat cool whip and skim milk. I used a graham crust when I tried it, but a standard pastry crust or shortbread crust would be good too. The packet size in the recipe is the standard 4 serving size package.

1 packet strawberry gelatin
3/4 cup milk, cold
3/4 cup boiling water
3 1/2 cups Cool Whip Topping
1/2 cup ice cube
1 pint strawberry, hulled & sliced
1 packet instant vanilla pudding
1 9-inch baked pie crust, cooled

Steps:

  • Completely dissolve gelatin in boiling water.
  • Add ice cubes and stir until melted.
  • Prepare pie filling mix with 3/4 cup milk as directed on package for about 2 minutes.
  • Blend in gelatin.
  • Chill, if necessary, until thickened.
  • Fold in 2 cups of the whipped topping and strawberries.
  • Pour into crust.
  • Chill in refrigerator 3 hours before serving.
  • Garnish with remaining whipped topping and additional strawberries, if desired.

This is such a pretty recipe. I just love parfaits and I adore this light and fluffy mousse one. Butter cookies are among my fave and I love the fact that they are used in this recipe. Easy recipe with little prep needed.

1 1/3 cups quartered strawberries
1 tablespoon sugar
1 teaspoon fresh lemon juice
3/4 teaspoon unflavored gelatin
1 1/2 tablespoons water
1/2 cup chilled heavy cream
3 butter cookies, crushed

Steps:

  • Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
  • Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
  • Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
  • Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
  • In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.

1 1/2 ounces Cool Whip (thawed)
4 ounces ricotta cheese
1 tablespoon brandy
1 tablespoon key lime juice
1 tablespoon honey
1 blood orange, juice of
8 ounces frozen strawberries
4 sheets graham crackers (coarsely crushed)
1 ounce pecans (chopped)

Steps:

  • Strawberry layer - Heat the orange juice with strawberries on medium heat for about 5 minutes until they are soft. Taste the.
  • Strawberry-Orange mixture when chilled, depending on the ripeness of the fruit you may need to increase the sweetness to taste with honey or confectioners sugar.
  • Mash with potato masher or for a smooth puree blend in a food processor. Allow to cool.
  • Cream layer - Combine thawed Cool Whip, ricotta, brandy, lime and honey.
  • Cracker layer - Crush the graham crackers coarsely and mix with pecans.
  • Parfait - Layer the mixture into a wine glass. Start with the strawberry layer then next sprinkle the graham cracker layer on top.
  • Pour the cream layer on top. Repeat with graham crackers, strawberry and top with the cream.
  • Chill for 30 minutes.
  • Garnish with a pecan, strawberry or orange slice.

  • Sprinkle gelatin over 1/4 cup water in a small bowl. Stir once or twice and then let stand about 5 minutes.
  • Process the strawberries and sugar in a blender or food processor until smooth, stopping to scrape down the sides as needed. (Note: When I used frozen strawberries I could have stopped my no-bake dessert at this step - I had a perfect sorbet - see below!)
  • Transfer strawberry mixture to a small saucepan and bring to a boil over medium-high heat. Remove from heat. Add gelatin to strawberry mixture, stirring constantly until the gelatin is dissolved. Cover and chill, stirring occasionally, until consistency of unbeaten egg whites, about 30 minutes.
  • Beat heavy cream at low speed until foamy; increase speed to medium-high and beat until soft peaks form. Fold whipped cream into strawberry mixture until well blended. Cover and chill at least 30 minutes.
