PINEAPPLE DREAM DESSERT
Pineapple dream is one of those perfect potluck desserts. Cream cheese, pineapple, whipped cream and graham crackers, yum!

Steps:
- Preheat oven to 300 F.
- Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
- Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
- Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

- Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
- In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.
- Pour into prepared baking pan and bake for 25-30 minutes, or until toothpick inserted in center of cake comes out clean. Allow to cool completely on a wire rack.
- In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice. Spread over the top of cooled cake. Enjoy!

I had made a plain yellow cake one day and found that I didn't have any powder sugar to make frosting. I had whipped topping but wanted something with a flair; so that is when I started mixing things together and came up with this yummy recipe.

- 1. Make cake mix according to directions and bake in a 9X13 Pan.
- 2. Once cake cools: combine in large bowl dry pudding, crushed pineapple with juice, buttermilk, cream cheese, and juice from oranges. Mix on high till well blended.
- 3. Stir in Whipped topping and oranges.
- 4. Pour onto cooled cake. Sprinkle coconut on top. This cake is better if prepared a few hours before serving. Enjoy!

- In one bowl, pour can of pineapple WITH the juice (do not drain).
- Add eggs, water, vanilla, set aside. In a separate bowl, mix sugar, baking soda,& flour.
- Combine wet and dry ingredients.
- Pour batter into a 9x13-inch inch greased and floured pan (or; use two round cake pans).
- Bake at 350°F for 25 minutes, then check with toothpick every 6 minutes or so. The toothpick should be dry when removed from the cake. This cake bakes to a dark brown color, so don't be alarmed!
- While it's baking, combine cream cheese, vanilla, and powdered sugar with an electric mixer,set in fridge. You can wait until your cake is completely cool to frost, or, let the frosting become a glaze for your warm cake.
