CRUNCHY ORANGE FRENCH TOAST

- Preheat the oven to 200 degrees F. Fit a baking sheet with a wire rack. Heat a griddle pan or nonstick skillet over medium heat.
- Zest the orange and set aside. Working over a medium bowl, segment the orange; squeeze the juice from the remaining orange membranes.
- Whisk the eggs, orange zest, milk, cinnamon and orange juice in a baking dish or shallow bowl. Add the cornflakes and bacon to another baking dish and toss together. Dip the bread slices in the egg mixture and let them soak for 1 minute.
- While the bread is soaking, melt 2 tablespoons of the butter on the griddle pan or skillet.
- Working with one slice of bread at a time, let the excess egg mixture drip off and then dredge the bread in the cornflake mixture. Add the bread to the griddle, carefully placing as many slices of bread as can comfortably fit without touching too much (it's OK if the edges need to touch a little). You can dredge the bread, transfer it to an unlined baking sheet and hold for 5 minutes while one batch is cooking.
- Cook on one side, rotating occasionally, until the bottom is golden brown and crisp, about 3 minutes. Flip and cook the other side until it is equally browned, another 2 minutes. Transfer the slices to the prepared baking sheet and keep warm in the oven while you complete the next batches. Repeat the cooking process, melting 2 tablespoons of butter for each batch.
- When all of the French toast is cooked and you are ready to serve, gently stir together the maple syrup and orange segments, making sure not to break up the segments. Spoon the syrup over the French toast and sprinkle with cinnamon. Serve immediately.

This French toast recipe is different because it uses flour. I have given it to some friends and they've all liked it better than the French toast they usually make!

- Preheat oven to 450°F Grease large cookie sheet.
- In medium bowl, beat egg whites until foamy. Gradually add sugar, beating until stiff peaks form; set aside.
- In a seperate bowl, beat egg yolks; stir in orange juice, orange peel, salt and milk.
- Fold egg yolk mix into beaten egg whites.
- Dip each bread slice into egg mix until evenly coated. Place on prepared cookie sheet. Bake for 5-8 minutes or until golden brown ( do NOT turn the toast).
- Meanwhile, in a small saucepan, combine sour cream and marmalade; heat over low heat just until warmed.
- Serve french toast immediately with sauce. Sprinkle with powdered sugar, if desired.

This is the best french toast recipe! Instead of using a dozen eggs and who knows how much cinnamon, I came up with this and it almost taste like it was baked, but you still cook on a griddle. Family favorite.

MARMALADE-STUFFED FRENCH TOAST WITH ORANGE SYRUP

- Preheat oven to 300°F. Place baking sheet in oven. Cutting through top crust of each bread slice, make 4-inch-long by 2-inch-deep pocket. Stir cream cheese and marmalade in small bowl. Spoon 1 generous tablespoonful cream cheese mixture into each bread pocket.
- Whisk eggs, milk, vanilla extract, cinnamon and nutmeg in pie plate.
- Dip 4 stuffed bread slices into egg mixture, coating completely. Melt 1 tablespoon butter in large nonstick skillet over medium heat. Add dipped bread to skillet. Cook until golden brown, about 2 minutes per side. Transfer French toast to baking sheet in oven. Repeat dipping and cooking with remaining 4 bread slices, egg mixture and 1 tablespoon butter. Serve with Orange Syrup.

- Generously butter large roasting pan. Arrange bread in single layer in prepared pan, fitting closely together. Beat half and half, eggs, cinnamon and nutmeg to blend in medium bowl. Pour egg mixture over bread. Cover pan and refrigerate until bread absorbs mixture, turning once, about 3 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
- Preheat oven to 400°F. Uncover pan and bake French toast until tester inserted into center of bread comes out clean, about 30 minutes.
- Meanwhile, stir orange juice and cornstarch in small saucepan until smooth. Add sugar and stir over medium heat until thick, about 8 minutes. Add butter, lemon juice and orange peel and stir until butter melts.
- Recut French toast into 8 separate slices. Serve with warm orange syrup.

- Cut your bread into 3/4-inch thick slices, to yield about 8 large or 12 medium slices of bread. If your bread is stale, move onto the next step. If your bread is fresh and soft, preheat the oven to 300 degrees Fahrenheit. Place the sliced bread onto a large, rimmed baking sheet lined with an oven-safe cooling rack (if you have one) and bake for 8 minutes. If the bread still feels soft and squishy on the bottom sides, flip them and bake for an additional 4 to 8 minutes. We’re aiming for “stale bread” texture, not crispy toast. Set aside to cool.
- Gently warm the milk in the microwave or in a saucepan on the stovetop, just until it’s warmer than room temperature (otherwise, the melted butter will clump on impact). Set aside.
