This baked potato has a crisp, golden skin, and is light and fluffy on the inside. Great comfort food!

Steps:
- Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt.
- Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. Slice the potato down the center, and serve with butter and black pepper. Sprinkle shredded Cheddar cheese over the top, if desired.

BEST FLUFFY TWICE-BAKED POTATOES!
These potatos really live up to there name, they ARE fluffy and what I think to be, one of the best recipes for twice baked potatoes. I'm certain you will agree once you try them! Prep time does not include baking the potatoes (which is about 1 hour baking time).

Steps:
- Cut a thin slice from the top of the potato and discard.
- Scoop out the potato pulp carefully with a spoon, and place the pulp in a medium bowl (be careful not to break the potato skin).
- With an electric mixer mix the pulp with soft butter, hot milk, salt, pepper, baking powder, nutmeg and ONE egg yolk and onion (if using); whip/beat until smooth and fluffy.
- Add in the shredded cheese; mix well to combine.
- In another bowl, whip the egg whites until stiff; fold into potato mixture.
- Pile the potato mixture back into the skins.
- In a small bowl or cup beat the remaining egg yolk with water.
- Set oven to 400 degrees.
- Brush the egg yolk/water mixture over the top of each potato.
- Set the stuffed potatoes into a greased baking pan.
- Bake for 15 minutes.

- Preheat oven to 425°.
- Scrub and dry potatoes, remove any blemishes.
- Beat egg white until foamy.
- Prick potatoes several times.
- Coat potato in egg white.
- Roll in salt.
- Bake for approx 60 minutes.
- Top with your favorite toppings (butter, sour cream, cheese, all of the above!).

- Place the potatoes in a large pot and cover with cold water. Add the salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 20 minutes longer.
- Drain the potatoes and press through a potato ricer into a large bowl. Set aside.
- Heat the butter, cream, and milk in a small pot over low heat until simmering.
- Pour the cream mixture over the potatoes and stir to combine. Season to taste with salt and pepper.
- Garnish with chives, if desired.
- Note: A potato ricer gives these potatoes a super fluffy texture, but you can use a hand masher if you don't own one.

- Heat pot of water 'till boiling.
- Peel and cube potatoes - add to boiling water.
- Boil gently until a fork can be inserted very easily into a potato - drain.
- Add milk to the pot to heat it up.
- Transer potatoes to a mixing bowl.
- Add margarine/butter and turn on mixer to low.
- Gradually add warm milk until it is your desired consistency.
- Add baking powder - mix on high for 30-45 seconds.
- Salt & pepper to taste mixing thoroughly.
