2 packages (8 ounces each) cream cheese, cubed
2 cups shredded Gouda cheese
1 can (12 ounces) evaporated milk
1 cup shredded cheddar cheese
2 tablespoons chopped chipotle pepper in adobo sauce
1 teaspoon ground cumin
2 cups diced fully cooked ham
Fresh vegetables or tortilla chips

Steps:

  • In a 3-qt. slow cooker, combine the first six ingredients. Cook, covered, on low 40 minutes. , Stir in ham; cook 20 minutes longer or until heated through. Serve warm with vegetables or chips.

1/2 cup panko bread crumbs
1/2 tsp. chipotle chile pepper powder
1/4 tsp. garlic powder
1 cup shredded KRAFT Chipotle Cheese
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup KRAFT Real Mayo Mayonnaise
1-1/2 cups shredded cooked chicken
1 stalk celery, finely chopped
1 Tbsp. plus 1 tsp. chopped canned chipotle peppers in adobo sauce, divided
2 green onions, chopped

Steps:

  • Heat oven to 375ºF.
  • Combine bread crumbs and seasonings; stir in chipotle cheese. Reserve 3/4 cup chipotle cheese mixture.
  • Mix cream cheese and mayo in medium bowl until blended. Add chicken, celery, 1 Tbsp. peppers and remaining chipotle cheese mixture; mix well.
  • Spread cream cheese mixture onto bottom of 9-inch pie plate sprayed with cooking spray; top with reserved chipotle cheese mixture and remaining peppers.
  • Bake 25 min. or until heated through. Sprinkle with onions.

  • Wearing protective gloves, mince enough chipotles to a paste to measure 1 1/2 tablespoons.
  • In a bowl whisk together all ingredients with salt to taste.
