SKILLET FRANKS AND POTATOES

Steps:
- Make shallow cuts in franks (no more than halfway through) about every inch. Heat 1 tablespoon of the oil in large nonstick skillet over medium heat. Add franks; heat 5 minutes, or until browned, turning occasionally. Remove franks from skillet; set aside.
- Add the remaining 2 tablespoons oil, potatoes, onion and bell pepper to same skillet. Cook and stir 12 minutes or until potatoes are golden brown. Stir in sage, salt and pepper; mix well.
- Return franks to skillet. Cook 5 minutes, or until heated through, turning franks once halfway through cooking time. Sprinkle with parsley, if desired.

- 1. In a large skillet, melt butter and add the olive oil.
- 2. Add the diced potatoes, sliced hot dogs, and diced onions. Sauté on low to medium heat and stir often and until potatoes and onions are cooked and browned to your liking.
- 3. Salt and pepper to taste. The key to this is the butter and olive oil combination, in which, it browns up nicely. Great with ketchup for those ketchup lovers.

- Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

EASY HOT DOGS AND POTATOES
My girlfriends mom made this for me once and I've since mastered the recipe. I use Tony Chachere's Creole Seasoning for these and any hot dogs work fine. Yukon Gold or Red Skin Potatoes taste great with this recipe.

- Rinse potatoes and microwave for 4 minutes.
- Cube potatoes and place into skillet with olive oil.
- Sprinkle desired amount of Creole seasoning over potatoes.
- Cook potatoes until light brown.
- Add diced hotdogs and onions to skillet.
- Remove from stove when potatoes are at desired crispiness (10-15 minutes total cook time usually).

HOT DOGS, SAUERKRAUT, AND POTATOES
This isn't an actual recipe, but it's a description of a meal my mother used to fix many years ago. She made it to use up leftover hot dogs. Recently I saw a similar one on "Zaar but it didn't have the potatoes. The amounts listed are only approximate because I was required to list something.

- Boil peeled potatoes (cut in quarters) until tender but not mushy. Drain, and add to the pan the amount of sauerkraut for the number of people you've planned to feed. Also add hot dogs cut into 1 inch pieces. Heat everything, but watch carefully to avoid burning. Add butter if desired. We always ate this with mustard for the sauerkraut and hot dogs.
- The next day my mother would heat leftovers in a frying pan, letting the sauerkraut get brown.
