VEGAN BANANA OAT WAFFLES



Vegan Banana Oat Waffles image

Crunchy around the edges, gooey inside, these vegan banana oat waffles make a perfect nutritious breakfast.

Number Of Ingredients 7

1 1/3 cup oat milk
1 cup whole wheat flour
1/2 cup jumbo oats
2 bananas (Ripe)
2 tbsp coconut oil
1 tbsp vanilla extract
2 tsp baking powder

Steps:

  • Add all ingredients to a stand mixer
  • Blend until smooth (the batter might still be a bit grainy from the oats but the bananas should be pureed)
  • Pour batter in waffle iron
  • Bake until golden (a minute or two longer than regular waffles so the bananas are cooked through)
  • Serve warm with maple syrup or your favorite waffle topping

These easy vegan banana waffles require just five ingredients, and are whole-foods, plant-based compliant, refined sugar free and dairy free.

2 Cups Whole Wheat Flour (Or Oat Flour)
2 Ripe Bananas
1 3/4 Cup Almond Milk
2 Tsp Baking Powder
1.5 Tsp Baking Soda

Steps:

  • Preheat your waffle maker. If needed, add some spray oil to prevent the batter from sticking.
  • Combine all ingredients in a blender until smooth.
  • Pour 1/4 a cup of the batter into the waffle maker and close for approximately five minutes, until steam starts coming out. Repeat until batter is used up. This will make approximately five waffles.

1 ¾ cups old fashion rolled oats (gluten-free certified if necessary)
2 medium spotty bananas
2 eggs
⅔ cup unsweetened almond milk (or 2% milk, whole milk, cashew or oat milk)
1 tsp vanilla extract
1 ½ tsp cinnamon
1 ½ tsp baking powder

Steps:

  • Add all ingredients to a high-speed blender and blend 30 - 45 seconds until it's a smooth batter. Let the batter sit for 4 - 6 minutes to thicken while you heat the waffle iron.
  • Heat waffle iron and lightly grease with non-stick spray or butter. Once hot, spoon batter into the iron and cook until golden brown and center are cooked through. Tip: The amount of batter and cook time depends on the size and strength of your waffle iron. For best results, follow the time recommended by your waffle maker.
  • Repeat until you've used all your batter.
  • Let waffles sit for 1 - 2 minutes before serving warm with toppings of your choice - I love fresh fruit!

2 bananas, sliced
1/4 cup butter, melted

Steps:

  • Combine flour, oats, sugar, baking powder, baking soda, cinnamon and nutmeg.
  • Whisk buttermilk and eggs together in a separate bowl.
  • Stir buttermilk into flour mixture. Stir in bananas and melted butter.
  • Bake waffles in a waffle iron.
