1 cup tahini paste
1 cup instant dry milk
1 cup confectioners' sugar
1 teaspoon vanilla extract (or use 1/8 teaspoon vanilla powder)
1/2 cup walnuts (roughly chopped.)
Vegetable oil for brushing

Steps:

  • In a deep bowl combine tahini, milk, and sugar until well mixed. Note4
  • Add 1/4 to 1/3 cup of walnuts and fold them in the mixture.
  • Brush a container lightly with vegetable oil, divide the remaining walnuts into two halves. Sprinkle one half of the walnut at the bottom of the container, add the tahini mixture and press down until firmly packed into your container.
  • Sprinkle the other half of chopped walnuts on top and press into the Halawa.
  • Cover and refrigerate overnight.
  • Scoop into sandwiches directly from the container or turn it into a parchment paper and slice to serve the whole amount.

6 green cardamom pods
175g golden caster sugar
125g ghee
125g semolina, chapati flour or wholewheat flour
25g raisins, soaked in hot water
25g almonds, sliced with their skin on

Steps:

  • Split the cardamom pods with a sharp knife and remove the seeds. Grind the seeds to a powder with 1 tsp of the sugar using a pestle and mortar. Keep the empty pods for the syrup.
  • Heat the remaining sugar in a pan over a medium heat with 600ml water until dissolved. Add the empty cardamom pods and simmer, uncovered, for 5 mins. Turn off the heat, cover the pan and set aside.
  • Heat the ghee in a wok or karahi over a medium heat, then add the semolina or flour. Reduce the heat to low and cook, stirring all the time, until it releases a toasted aroma and turns a biscuity golden colour, about 10 mins.
  • Take the pan off the heat. Discard the empty cardamom pods from the warm syrup and pour it over the semolina in a thin, steady stream, stirring all the time. Take care - it will sputter. Return the pan to a medium heat and cook, stirring constantly, until the semolina thickens. It should have the consistency of creamy mashed potato. Stir in the ground cardamom, drained raisins and most of the sliced almonds. Serve piping hot with the remaining almonds scattered over.

1 cup white sugar
¼ cup rose water
⅓ teaspoon ground cardamom
1 pinch saffron
½ cup butter
1 ½ cups all-purpose flour

Steps:

  • Bring water and sugar to a boil in a small pot, stirring until sugar dissolves into a syrup. Stir rose water, cardamom, and saffron into the syrup. Reduce heat to low; cover to keep syrup hot.
  • Melt butter in a large saucepan over low heat. Stir in flour until mixture is a smooth paste, about 1 minute. Cook, stirring constantly, until paste turns brown, 10 to 15 minutes.
  • Remove flour mixture from heat. Whisk in hot syrup gradually until syrup is completely absorbed and mixture is the consistency of a smooth, soft paste, at least 4 minutes.
  • Spread mixture in a shallow bowl. Cool to room temperature, about 20 minutes.

1 1/4 cups sugar
6 cardamom seeds

Steps:

  • Braise flour in ghee till pink.
  • Break eggs in a bowl.
  • Add milk, sugar and cardamom seeds.
  • Beat well and add to the braised flour.
  • Stir briskly on low heat to avoid any lumps till the mixture is thick like pudding.

3 tablespoons of oil (organic safflower or canola or coconut)
3/4 cup chickpea flour or besan
seeds of 1 green cardamom pod (, whole seeds or crushed to a coarse meal, or use 1/4 tsp ground cardamom)
1/3 cup or more raw sugar or coconut sugar (or a mix of sugar and powdered jaggery)
3/4 cup hot water
2 tablespoons chopped nuts
2 tablespoons currants
a pinch of salt

Steps:

  • Heat oil in a skillet over medium heat. Add chickpea flour to the oil. Mix and roast for about 10 minutes. Stir occasionally. The flour will be dry, then become like fat breadcrumbs and eventually change color slightly and start to stick to make larger lumps.
  • Meanwhile bring 1 cup of water to a boil.
  • Add the nuts, currants and salt to the chickpea flour and cook for another 2 minutes. Add the sugar and cardamom seeds and mix in.
  • Add 1/2 cup hot boiling water to the skillet and mix in. Add the rest 1/4 cup of the water and continue to mix vigorously. The chickpea flour mixture will become lumpy and eventually become smooth and custard like. Continue to mix to break the lumps. (use a whisk if the lumps do not break within the first 1-2 mins). Cook for about 3 minutes, then take off heat. Garnish with sliced nuts. Serve warn or cold. Store in a closed container for a few hours on the counter. Refrigerate for upto 5 days.

This popular seasonal dessert is made with Gajar or carrots in North India in the wintertime, when red carrots are abundantly available. While most desserts in India are too sweet for my taste, this gem is delicate and heavenly. Traditionally made with milk and ghee, it's also good with almond milk and lots of crunchy fried pistachios as a garnish. Here I buy fresh carrots at the farmer's market, put on some nice music and just enjoy the process of making this gorgeous dessert.

3 tablespoons vegan butter or virgin or extra-virgin coconut oil (see Cook's Note)
1/3 cup nuts such as pistachios, almonds or cashews, coarsely chopped
1 1/2 pounds carrot, peeled and coarsely grated
3 cups almond milk
1/2 teaspoon cardamom seeds, crushed
1/4 cup almond flour
3/4 cup vegan light brown sugar

Steps:

  • Heat 1 tablespoon vegan butter or coconut oil in a large heavy skillet over medium-high heat. Add the nuts cook, stirring, until golden and crunchy, about 2 minutes; remove to a paper towel and set aside.
  • In the same skillet add the carrots and cook over medium heat, stirring, until the carrots soften and dry up a little, about 10 minutes. Add the almond milk and cardamom and cook, stirring regularly, until most of it is absorbed, 20 to 25 minutes. Add the almond flour and cook, stirring regularly, until dry, about another 10 minutes. Add the sugar and cook, stirring regularly, thickened, 10 to 15 minutes. Add the remaining 3 tablespoons vegan butter or coconut oil and cook, stirring, until the halwa pulls away from the side of the pan, 10 to 15 minutes.
  • Garnish with the nuts and serve.

1 cup shortening or 1 cup vegetable oil
2 cups flour
1 teaspoon ground cardamom
1 -2 cup white sugar
1/2-1 cup water

Steps:

  • make a syrup by boiling sugar and water together, let the sugar dissolve completely and let it boil for 30 seconds and set aside.add the ground cardamom.
  • place oil in a pot on medium heat, when it's hot add flour. keep on moving the flour until it becomes light brown in color.
  • remove from heat, immediately add sugar syrup carefully, mix it with a whisk until the mixture is consistent and lump-free.
  • pour in flat plates, garnish as desired, let it cool and serve.
  • tips: you can use any type of flour you like, you can mix in a little whole wheat flour for more thick and grainy texture ( for the dessert in the picture i mixed 3/4 cup of whole wheat flour with 1 1/4 cups all-purpose flour).
  • tips: you can adjust sugar measure to your desired sweetness level , 1 cup will give you a light taste, 1 1/2 cup will give you a moderate taste, 2 sups will give you very sweet dessert.
  • tips: the water level can be adjusted to achieve the consistancy level you desire, for the recipe in the picture i used 1 cup of water which will give you a light and soft dessert, you can use half the amount of water for a thicker dessert.
  • tips: the dessert plates can be left plain or decorated by coconut flakes or chopped walnuts, this is the iraqi way of decorating this halawa, but you may use pistachios, cashews or pecans for this dessert.
  • tips: if the halawa didn't have a pouring consistancy, place it in a plate and press it with a plastic spatula and leave it to cool before serving.
