One Pan Crispy Flounder & Vegetables image

Quick, easy, and all made on a single pan. This One Pan Crispy Flounder & Vegetables is a perfect dish any night of the week.

4 flounder filets
salt and pepper
2 eggs
1/4 cup milk
2 cups Italian panko bread crumbs
2 cups shredded parmesan cheese
1 teaspoon garlic powder
1 pound red potatoes, quartered
1 bunch asparagus, ends trimmed
2 tablespoons olive oil

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper. Set aside.
  • In a shallow dish whisk together the eggs and milk. In another shallow dish, stir together the panko, parmesan cheese, garlic powder, salt and pepper to taste. Set aside.
  • Lay the potatoes onto the sheet pan, drizzle with 1 1/2 tablespoons olive oil, season with salt and pepper. Bake for 15 minutes. Remove from the oven.
  • Salt the fish, and dredge it into the egg mix, and then coat with panko. Lay on the baking sheet.
  • Drizzle the remaining olive oil onto the asparagus, and lay one the sheet pan. Season with salt and pepper. Place the pan back into the oven and bake for 15 to 20 minutes, until the fish flakes in the center with a fork. Serve hot.

1 cup chopped green onions
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon ground thyme

3 tablespoons dry bread crumbs
4 flounder or sole fillets (6 each)
2 teaspoons lemon juice
2 teaspoons chopped fresh parsley

Steps:

  • In a nonstick skillet, saute the mushrooms, onions, garlic, salt, thyme and pepper in 2 teaspoons oil until vegetables are tender. Stir in bread crumbs. 6 (5-ounce) frozen flounder fillets (or other white fish fillets)
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 (12 by 20-inch) pieces aluminum foil
1 medium zucchini (about 1/2 pound, sliced into thin rounds)
2 small carrots, sliced into thin rounds
1 medium red bell pepper, seeded and diced small (about 1 cup)
3 medium shallots, thinly sliced (about 1/2 cup)
3/4 cup dry white wine or water
3 tablespoons olive oil
1 lemon, thinly sliced
1/3 cup finely chopped fresh parsley leaves
3 cups brown rice, cooked (1 cup dry rice)
3 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 425 degrees F.
  • Season the fish fillets with the salt and pepper. Place 1 fish fillet at the center of each piece of foil. Evenly distribute the zucchini, carrot, bell pepper, and shallots among the 4 packets. 1 red bell pepper (ribs and seeds removed), finely diced
1 zucchini, finely diced
1/2 teaspoon dried oregano

1 tablespoon plus 1 teaspoon Dijon mustard
4 flounder fillets (6 to 8 ounces each)
1 tablespoon white-wine vinegar

Steps:

  • In a 2-quart shallow microwave-safe dish, combine couscous, bell pepper, zucchini, oregano, 1 tablespoon oil, and 1 1/4 cups water. Season with salt and pepper. Cover, and microwave on high until vegetables are crisp-tender, about 3 minutes. Stir mixture.
  • Dividing evenly, spread 1 tablespoon mustard over one side of fish; season with salt and pepper. Roll up each fillet, and place on top of couscous. Cover, and microwave on high until fish is almost cooked through, about 4 minutes. Let stand, covered, 5 minutes, to finish cooking.
  • Meanwhile, make vinaigrette: In a small bowl, whisk remaining teaspoon mustard with vinegar and remaining 2 tablespoons oil. Season with salt and pepper. Drizzle fish and couscous with vinaigrette, and season with ground pepper. Serve.

  • In a bowl whisk together the wine, the lemon juice, the parsley, the oil, the pepper, and salt to taste and add the onion. In another bowl toss together the carrots, the squash, and the zucchini, add about 1/4 cup of the liquid from the onion mixture, and toss the mixture well. Spread the onion mixture in the bottom of a greased glass baking dish, 15 by 10 by 2 inches.
