FRIED LOBSTER TAILS

Fried Lobster Tails image

These crispy fried lobster tails are fresh lobster seasoned and cooked to perfection, then topped off with a delicious garlic butter sauce. A delicious meal that can be enjoyed as an appetizer or main course.

Provided by Julie Maestre

Categories     Entree

Time 15m

Number Of Ingredients 9

3 lobster tails
1 cup buttermilk
1 cup all-purpose flour
1 tsp old bay seasoning
1 tsp paprika
1 tsp salt-free lemon pepper seasoning
1 tsp baking powder
2 tbsp butter
2 garlic cloves (finely minced)

Steps:

  • Begin by butterflying the lobster tails. To butterfly, simply cut a lengthwise slit through the center, top of the shell, stopping just before the tail fins using kitchen shears. Spread the shell open and pull out the meat in one piece. Close the shell and place the meat over the shell.
  • In a small bowl, combine paprika, salt-free lemon pepper seasoning, and old bay seasoning. Season the lobster tail meat with the spice blend on both sides. Add the remaining spices to the all-purpose flour along with the baking powder.
  • Place the lobster tails in buttermilk and let it sit for a couple of minutes while you heat the oil.
  • Heat the oil to 350 degrees F. Coat the lobster tails in the seasoned flour, shaking off any excess flour.
  • Fry the lobster tails for 4-5 minutes. While the lobster tails fry, prepare the garlic butter sauce.
  • Add the butter to a small skillet and cook over medium-high heat. Once the butter melts, stir in the fresh garlic and cook until the garlic is fragrant and toasty. Serve the lobster tails with the garlic butter sauce, lemon wedges, and enjoy.

Times are estimated but have included marinating time preparation time. Serving for 2 is estimated as main with sides or as is an entree could extend to 4.

Provided by ImPat

Categories     Lobster

Time 25m

Yield 2 serving(s)

Number Of Ingredients 15

1 lobster (raw, crayfish)
peanut oil (3 cups for frying- obviously all won't be used and will upset nutritional panel scores)
20 g ginger (cut into thick slices)
15 g spring onions (scallions cut into 5cm slices, white portion only)
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sugar
2 teaspoons rice wine
1/2 teaspoon light soy sauce
1 cup chicken stock
1 tablespoon egg white (lightly beaten)
1 pinch salt
1 pinch pepper
1 teaspoon cornflour (cornstarch mixed in a little cold water or stock)
1 tablespoon cornflour (cornstarch mixed with a little water for thickening at the end)

Steps:

  • Mix the marinade ingreditents together.
  • Remove the meat from the tail and cut into bite size pieces and mix with the marinade for 5 to 10 minutes.
  • Heat the peanut oil in a hot wok until the oil is smoking and then reduce to a medium heat.
  • Add the lobster pieces to the oil and cook for 1 minute and then remove with a slotted spoon, drain and put to one side.
  • Drain and reserve the oil from the wok, and wipe the wok clean.
  • Put 2 tablespoons of the oil back in the wok and heat and then fry the ginger and spring onions for 30 seconds.
  • Return the lobster to the wok and stir fry over a high heat for a few seconds and then add the salt, pepper, sugar, soy and wine and continue to stir fry quickly.
  • Add the chicken stock, cover the wok with a lid and simmer for 1 minute.
  • Stir in the cornflour slurry a little at a time until and thicken and the lobster is glazed to you liking.
  • Serve immediately (would suggest over rice).

THE BEST FOOD TO TRY IN THE FLORIDA KEYS - TRIPSAVVY

From tripsavvy.com
  • Stone Crab. Primarily found along the Gulf of Mexico, stone crab ranks among the Florida Keys’ most popular delicacies — in fact, 40 percent of Florida’s stone crab harvest takes place in the Keys.
  • Puerco Asado. Florida is home to a large Cuban population, so it’s no surprise that Cuban food is plentiful throughout the state, and particularly in the Keys.
  • Conch Fritters. Conch, a large sea snail found in Caribbean waters, hold legendary status in the Florida Keys, so much so that natives of Key West are playfully referred to as “conchs,” and the Keys themselves are nicknamed the “Conch Republic.”
  • Red Grouper. Red grouper is the most common species of grouper fish in the United States, most abundantly found along Florida’s east and west coasts. Like a cross between bass and halibut, this fish is flaky and firm, with a mild taste.
  • Yellowtail Snapper. Similar to grouper, snapper is plentiful along Florida’s Gulf Coast, and yellowtail snapper in particular is local to the Florida Keys.
  • Hogfish. These quirky-looking fish get their name because their large snouts quite literally make them look like sea pigs. Found in the Atlantic and Gulf waters surrounding the Keys, hogfish flesh is juicy, tender, and will literally melt in your mouth.
  • Florida Lobster. Fan of Maine lobster? The lobster you’ll find on a menu in Maine is vastly different from the lobster you can find in Florida. Florida lobster is a lot less sweet and a bit tougher that its Maine counterpart, with more of a crab-like consistency.
  • Mangrove Honey. Florida’s east coast is populated with forests of tropical mangrove trees, which root themselves directly over the water and stabilize the coastline.
  • Lionfish. Part of the scorpion fish family, this invasive species preys on over 70 species of native fish in the Keys and also competes with them for food.
  • Key West Pink Shrimp. Named for the color of their shell, pink shrimp are plentiful in Florida — nearly 85 percent of all pink shrimp in the United States are sourced from fisheries around Dry Tortugas National Park.
