Transform purchased peanut butter cookies into adorable summertime treats...you'll flip over how simple they are to make!

4 rectangles (1 1/2 x 1 inch each) vanilla-flavored candy coating (almond bark) (from 20-oz package)
1 roll Fruit by the Foot™ chewy fruit snack (from 6-roll box)
12 peanut butter sandwich cookies (from 1-lb package)
12 miniature candy-coated chocolate baking bits
Brown sugar, if desired

Steps:

  • In 1-quart saucepan, melt candy coating over low heat, stirring occasionally.
  • Meanwhile, unroll fruit snack roll. Using kitchen scissors, cut 12 (4 1/2 x 1/4-inch) strips from fruit snack roll. Remove paper. Fold each strip in half, forming a V shape.
  • Dip tops and sides of cookies into melted candy coating; lift out with fork or tongs, letting excess drip off. Place cookies, coated side up, on cookie sheets. Before coating sets, carefully attach fruit snack pieces to make tops of flip-flop sandals, placing point of V shape near one end of cookie, and ends at other end of cookie. Place baking bit at tip of V shape. Let stand until set, about 10 minutes.
  • Spoon brown sugar onto tray to look like sand; arrange cookies on brown sugar.

Get ready for summer! These are perfect for a pool party or anytime if you want a good and easy dessert for kids or adults.

1 package(s) nutter butter peanut butter cookies
1 cup(s) powdered sugar
1 tablespoon(s) butter, softened
1 tablespoon(s) milk, or more as needed
1/4 teaspoon(s) vanilla extract
dash(es) food coloring-any color, as desired to match theme of get-together

Steps:

  • Place cookies on a flat surface. Prepare frosting by mixing powdered sugar, butter, milk and vanilla with electric mixer until light and fluffy. Add more milk, one drop at a time, until desired consistency for piping. Add food coloring, one drop at a time and mix until desired color is reached.
  • Place frosting in a sandwich size ziplock bag and cut small tip out of corner. Seal bag and squeeze on top of cookies to resemble flip flops. Let air dry 30 minutes to 1 hour. Serve.

1 package white cake mix (regular size)
3-3/4 cups confectioners' sugar
1 tablespoon meringue powder
1/2 cup shortening
1/2 cup butter, softened
1/4 cup milk
1 teaspoon clear vanilla extract
Pink, blue, yellow and green paste food coloring
4 pieces red rope licorice
Candy buttons
Graham cracker crumbs

Steps:

  • Line a 13-in. x 9-in. baking pan with waxed paper and grease the paper; set aside. Prepare cake mix according to package directions. Pour batter into prepared pan. Bake according to package directions. Cool for 10 minutes before removing from pan to a wire rack to cool completely., Trace flip-flop pattern onto waxed paper; cut out. Arrange pattern over cake; with a sharp knife, cut out. Flip pattern and cut out a second flip-flop. Discard scraps. Transfer cakes to a covered cake board., For frosting, in a large bowl, combine confectioners' sugar and meringue powder. In the bowl of a heavy-duty stand mixer, combine the shortening, butter, milk and vanilla. Beat in sugar mixture., Tint 1 cup frosting pink; frost tops of cakes. Tint 1 cup frosting blue; frost sides of cakes. Insert licorice ends into cakes to form straps of flip-flops., Tint 1/4 cup frosting yellow. Using a #4 round tip, pipe decorative lines on top of shoes. Using a #17 star tip, pipe rosettes where straps meet. Tint remaining frosting green. Using a #352 leaf tip, pipe leaves around rosettes., To finish, press candy buttons into sides of cakes; sprinkle cracker crumbs on board to form sand. Store in the refrigerator.

Totally versatile! I've made it with blueberries, apples, orange zest, plain. It's just good stuff. Normally I halve it and make it in a nine-inch cake pan. I actually found the recipe in an ancient southern cookbook called "Charleston Receipts" while I was down in SC. The only real change I make is to sub yogurt for milk as I find it gives it a moister, more coffeecake-like consistency.

1 cup white sugar (the original recipe says "heaping" but that's not necessary-unless you're Paula Deen.)
4 tablespoons butter, room temperature
1 1/4 cups low-fat vanilla yogurt (or if you use milk, only one cup)
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 teaspoons baking powder
1 pinch salt
1 1/2 cups all-purpose flour
2 apples, peeled, cored, and sliced thinly
2 teaspoons cinnamon
1/2 cup brown sugar
1 tablespoon cinnamon (or more)
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°F.
  • Cream sugar and butter in medium bowl with spoon (no mixer required) and add yogurt, eggs, milk, and extracts, mixing well. In smaller bowl, mix flour, salt, and baking powder till totally combined, and fold into wet ingredients, until well mixed. [At this point you should sample the batter because it's AMAZING.] Toss the thinly sliced apples with the cinnamon, set aside.
  • Spray a 9 by 13 baking pan (or two 9 inch round cakes pans) with cooking spray. Spoon about half of the batter into the pan, spreading evenly with a spatula. It may seem like a thin layer but it will rise. Top with the apple slices (make sure they're evenly placed) and then pour the remaining batter on top, spreading again with spatula. Sprinkle with brown sugar and cinnamon, drizzle with melted butter, and bake for about 30 minutes.
