Ingredients

3 bone-in beef short ribs (about 1 1/2 pounds)
2 tablespoons 321 Spice Blend, recipe follows
3 cups granulated garlic
2 cups ground black pepper
1 cup salt

Steps:

Preheat the smoker to 225 degrees F.
Trim the excess fat off the meat. Coat the ribs with the 321 Spice Blend on all sides.
Place the ribs in the smoker over indirect heat until brown on all sides, 1 hour 30 minutes to 2 hours.
Place the meat on a wire rack set over a deep pan filled with 2 inches of water. Tightly wrap the pan with foil. Return the pan to the smoker over indirect heat and cook until the ribs are very tender, about 4 hours.
Remove from the smoker and plate to serve.
In a large mixing bowl, add the garlic powder, black pepper and salt and mix until combined.

1 tsp beaumont seasoning (spice island)

Steps:

For Flintstone bread unsliced double the recipe. Cut top off and cut the inside out leaving a 1/2 inch wall and a good bottom. May use big sourdough bread and cut out the middle instead. Buy french bread and cut into pieces to supplement.

Put the brisket into a large pot of salted water. Peel the carrot, wash and trim the leek, and add both to the pot with the bouquet garni, peppercorns and peeled garlic clove. Bring to a boil, then reduce the heat and simmer for 2 ½ hours, until the brisket is tender.
Meanwhile, boil the egg for 10 minutes and rinse under cold water. Leave to cool for a few minutes.
Then, prepare the salad dressing. Mix all the ingredients in a little bowl until they’re well mixed through; season with salt and pepper.
