From Lyn-Genet Recitas' book, The Plan. She says, "Making your own flax granola is very easy. You can double the amounts of ingredients if you wish, to have more granola on hand." You may use any amounts or combination of dried fruits and nuts as the ones listed below are suggestions. Prep time doesn't include the overnight refrigeration. Where no amount is indicated it is "to taste".

1 cup whole flax seed
1/2 cup water
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon clove
1/8 cup raisins
1/4 cup almonds
1/4 cup walnuts
1/8 cup dried cranberries
1/8 teaspoon vanilla extract (optional)

Steps:

  • 1. Combine the flaxseeds with water seasoned with cinnamon and the other spices as desired. Refrigerate overnight. Spread in a thin layer on a baking sheet and bake at 275° F for 50 minutes to an hour, turning several times to dry out.
  • 2. Optional: during the last 10 minutes you may add raisins, nuts, and other dried fruits of your choosing.

Number Of Ingredients 10

2 cups old-fashioned rolled oats
1 cup sweetened shredded coconut
3/4 cup (about 2 1/2 ounces) sliced blanched almonds
1/4 cup vegetable oil
1/4 cup honey
1 tablespoon flaxseed oil
1/2 cup dried cranberries
1/2 cup golden raisins
1/4 cup unsalted sunflower seeds
1 tablespoon ground golden flaxseed (from about 1 1/2 teaspoons whole)

Steps:

  • Preheat oven to 350 degrees. Toss together oats, coconut, and almonds in a medium bowl; set aside. Whisk together vegetable oil and honey in a small bowl; stir into oats mixture. Spread out oats mixture on a rimmed baking sheet.
  • Bake, stirring occasionally, until golden brown, 17 to 20 minutes. Let cool 10 minutes; toss with flaxseed oil. Let cool completely. Transfer to a large bowl; stir in dried cranberries, raisins, sunflower seeds, and ground flaxseed.

This recipe is adapted from one I found here on the 'zaar. I lightened it up to be gluten free, sugar free and it's lighter.

6 cups apples, sliced
1 teaspoon stevia
2 tablespoons lemon juice
1/2 cup gluten-free granola cereal
1 teaspoon stevia
1/4 cup brown rice flour
1/4 cup tapioca flour
1/4 cup flax seed, golden
1 teaspoon ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 350F degrees.
  • Place apples in a buttered 2-quart casserole dish.
  • Sprinkle with stevia and lemon juice.
  • In a small bowl, combine granola , stevia, flour, cinnamon and flax.
  • Cut butter into mixture until the mixture is crumbly.
  • Sprinkle over the apples.
  • Bake for 40 minutes or until apples are tender.
  • If you are gluten intolerant, look on the label of the granola you are using to make sure wheat hasn't been added.
  • The flax seed gives a nice, nutty crunch.

I tried Costco's granola the other day, and is it EVER good! Now, I'm not saying this recipe is an exact clone of Costco's, but it's the best I found. Add or subtract ingredients according to your taste - you can use less sugar if you like, increase the amount of wheat germ, add flax seeds, sesame seeds, pumpkin seeds, other dried fruit or nuts - it's perfect for experimenting. 4 cups old fashioned oats
1/2 cup brown sugar
1/2 cup wheat germ
1/2 cup flaked coconut
1 cup nuts (i.e. sunflower seeds, walnuts, almonds, pecans)
1 cup dried fruit, chopped (dried cranberries, blueberries, raisins, apricots, etc.)
1/2 cup vegetable oil
1/2 cup honey, plus
1/4 cup maple syrup or 1/4 cup honey
2 teaspoons vanilla

Steps:

  • Preheat oven to 325°F.
  • Mix granola ingredients in a large bowl.
  • For coating, heat oil, honey, and maple syrup to a rolling boil. Turn off heat and add vanilla. Pour over granola mixture and blend well. Spread on a baking sheet.
  • Bake for about 15-20 minutes, stirring the granola every 5 minutes while baking to ensure even browning. Watch it closely as it can burn fast. For softer granola do not bake as long.

Really yummy, and way less expensive than buying it in the store. I was looking for a recipe with less oil, and the fruit juices add awesome flavour. Try adding whatever nuts & dried fruit you like, I almost never make this recipe the same way twice. I got the basic recipe from myrecipes.com but made a few tweaks to my liking.

4 cups oats
2 cups puffed wheat cereal
1/4 cup unsweetened coconut
1/2 cup bran flakes
1/4 cup sliced almonds, toasted
3 tablespoons brown sugar
3/4 cup flax seed
2 tablespoons cinnamon
1 1/2 cups tropical fruit juice
1/8 cup honey
2 tablespoons canola oil
cooking spray
1/4 cup craisins
1/4 cup dried apricot (chopped)

Steps:

  • Preheat oven to 325°.
  • Combine first 8 ingredients in a large bowl.
  • Combine the juice in a small saucepan. Bring to a boil; cook until reduced to 2/3 cup.
  • Remove from heat; stir in honey. Slowly pour juice mixture and oil over oat mixture, tossing to coat.
  • Spread oat mixture evenly onto two baking pans coated with cooking spray. Bake at 325° for 40 minutes or until golden, stirring frequently (keep an eye on it while cooking, the sugars in the juice cause it to brown really quickly).
  • Cool slightly; add apricots and craisins. Cool completely, and store in an airtight container.

2 cups coconut
2 cups peanuts (optional)
1 cup chocolate chips
1 cup raisins
1 cup maple syrup
1 cup brown sugar
1/2 cup canola oil
1 cup flax seed (optional finely ground)

Steps:

  • Preheat oven to 350°F.
  • Combine syrup, brown sugar and oil in large microwaveable bowl.
  • Cook at high power for 3 minutes.
  • In another large bowl, combine oats, coconut, peanuts, chocolate chips, raisins and flax seed.
  • Pour hot syrup mixture over oat mixture and stir well to combine.
  • Spread granola mix out into two jellyroll pans.
  • Bake 10 minutes then remove from oven and stir mixture.
  • Return to oven and bake another 10 to 15 minutes or until golden brown.
  • Cool to room temperature.
  • Break apart into chunks and stoe in sealed container.

  • Preheat the oven to 300ºF. In a large bowl, stir together the the oats, walnuts, puffed rice, pumpkin seeds, flax seeds, brown sugar, cinnamon, and salt.
  • In a small bowl, mix together the honey, oil, and almond. Pour over the dry mixture, and mix well until the oats and seeds are fully coated with the honey mixture.
  • Spread a thin layer of the combined mixture on a rimmed baking sheet, and bake, uncovered, for 15 minutes. Remove the sheet, stir the ingredients, and continue baking until the granola starts to turn golden brown, about 5 to 15 more minutes. When the granola is golden brown, remove the baking sheet and set it on a wire rack to cool. Occasionally stir the granola as it cools, for about 20 to 30 minutes, or until it is hardened.
