1/4 cup self-rising flour, plus more for dusting
3 heaped tablespoons natural Greek yogurt
1 tablespoon extra-virgin olive oil, plus more for the pan
1/4 teaspoon dried rosemary
Pinch of kosher salt
2 to 3 tablespoons tomato pasta sauce (Napolitano sauce)
3 to 4 slices ham off the bone
1 small handful grated cheese
1 teaspoon dried oregano
2 to 3 tablespoons tomato pasta sauce (Napolitano sauce)
1 small handful grated cheese
1 teaspoon dried oregano
2 to 3 fresh basil leaves
2 to 3 tablespoons tomato pasta sauce (Napolitano sauce)
1 button mushroom, sliced
1 small red bell pepper, sliced
1/2 small red onion, sliced
3 to 5 kalamata olives, pitted
1 small handful grated cheese
1 teaspoon dried oregano
2 to 3 fresh basil leaves

Steps:

  • For the flatbread: In a small mixing bowl, add the self-rising flour, yogurt, olive oil, rosemary and salt and mix. It might seem like the consistency is sticky, but this is okay!
  • Dust a bench top with more of the flour and knead the dough until it forms a ball. If it's still sticky, add more flour to the bench. Roll out the dough with a rolling pin until 1/2 centimeter (1/4 inch) in thickness.
  • Heat a small splash of olive oil in a small pan over medium heat. Once hot, transfer the flatbread over and cook until light brown, about 2 minutes. Then flip and cook on the other side for another minute. Serve topped with one of the pizza topping combinations.

The fastest and most delicious vegetarian pizza you have ever tasted. This is a great favourite with Sure Slim members. We have a flat bread called Mountain Bread in NZ and Australia but any flat bread or even flour tortilla will do.

1 flat bread
2 teaspoons pesto sauce
50 g eggplants
50 g zucchini
20 g mushrooms
1 pinch black pepper
60 g mozzarella cheese

Steps:

  • Preheat the oven to 200°C/400°F.
  • Spread the pesto over the flat bread.
  • Thinly slice the courgette/zucchini. I use a mandoline to get thin even slices.
  • Thinly slice the eggplant. It doesn't need to be peeled or salted.
  • Thinly slice the mushroom.
  • Slice the mozzarella.
  • Spread the courgette slices evenly over the top of the bread. Add the eggplant and mushroom. Dots the slices of Mozzarella over the top of the vegetables. Add a grind of black pepper.
  • Bake until the cheese is golden and bubbled (about 10 mins). The vegetables will cook in this time and the edges of the bread will become very crispy.
  • Serve with a green salad for a very filling meal.
  • Variations:
  • My favourite spread is a coriander and chilli pesto. You can also use black olive paste (tapenade), sun dried tomato pesto or hummus. Pizza or tomato sauce is too wet.
  • Other toppings: red pepper, green pepper, onion (put that on top of the cheese to that it roasts), olives, capers, anchovies, salami, pepperoni, ham -- You get the picture.

I once had a craving for a pizza, but I didn't have the things to make pizza dough, so I got this idea! A good recipe for kids, too. I use pocket-less pitas we buy from Indian grocery, but I'm sure regular will work. Note: I edited this recipe by making more exact ingredient amounts, sorry about the previous vagueness, I posted this recipe back when I was just 10 or 11. :)

1 pita bread
2 tablespoons spaghetti or 2 tablespoons pizza sauce
1/4 cup mozzarella cheese, shredded
spices (oregano, basil, garlic powder) or dried herbs (oregano, basil, garlic powder)
olive oil (optional)

Steps:

  • Brush on a little olive oil on the pita.
  • Spread sauce on top of the pita.
  • Sprinkle on the shredded cheese.
  • Sprinkle on pinches of desired herbs and spices, and add any toppings you'd like.
  • Place on baking sheet, bake for 5-7 minutes at 400°, or until cheese is melted (times may vary).
  • Slice with pizza cutter and enjoy!

I came up with this one day when I was scrounging around in my refrigerator for something to serve for lunch. Very tasty if I don't say so myself! I bake these on baker's parchment paper.

1 tablespoon olive oil
4 -5 ounces mozzarella cheese (shredded)
1/2 bell pepper (diced small)
1/2 sweet onion (diced small)
1 garlic clove (minced)
4 ounces ranch salad dressing (I use Marie's)
1 naan flat bread (I use Target's garlic)

Steps:

  • Pre-heat oven to 400 degrees F.
  • In skillet, add olive oil, onion and bell pepper and saute for about 10 minutes on medium low heat stirring frequently.
  • Add garlic and saute for an additional 2 minutes. Remove from heat.
  • Place naan flat bread on a cookie sheet lined with baker's parchment paper.
  • Slather on the ranch salad dressing to top side of naan.
  • Then sprinkle cheese over top, then sprinkle bell pepper mixture from skillet on top of the cheese.
  • Bake in oven for 15 minutes or until cheese is gooey melted.
  • Remove and enjoy!

1 (16 ounce) can pizza sauce
1 (16 ounce) can mushrooms
1 (23 ounce) package pepperoni

  • then the cheese
  • then two more tortillas on top of that.
  • then repeat as desired
  • then the final topping is the cheese on the top.

Whizz up your own homemade hummus and spread onto flatbreads then add toppings for a healthy pizza

400g can chickpeas in water, drained and rinsed
juice 1 lemon
1 garlic clove , crushed
½ tsp ground cumin
5-pack Middle Eastern flatbreads
75g feta cheese , crumbled
handful dill sprigs
200g bag rocket leaves
100g pack pomegranate seeds
1 red onion , thinly sliced
1 tsp olive oil

Steps:

  • Blitz the chickpeas, half the lemon juice, garlic, cumin and some seasoning in a food processor or mini chopper, adding a few tbsp water to get a spreadable consistency.
  • Warm the flatbreads following pack instructions, then spread the chickpea hummus over them evenly. Scatter on the feta cheese, dill and half the rocket, pomegranate and onion.
  • Mix together the remaining rocket, pomegranate and onion. Toss through the remaining lemon juice, olive oil and any juice from the pomegranate seeds. Serve the pizzas with the salad.
